Hi friends! This week I thought it would be fun to share something different. Gerald and I recently went to the local hot springs that surround Lake Chapala for a day trip. With many different pools to choose from we found a quiet haven overlooking the beautiful Lake Chapala with distant mountain views. We went to Termal Cosala where they have multiple hot springs. Some with lavender, another with wine, one with oats or mud for a skin treatment, the temazcal with herbs for a sauna-ish experience, the huge pool is also hot springs so everything is warm. It's sensational. If you are ever in the area check it out! If not try to find a local spa and see what their day rates are or make a spa at home. Yesterday I filled a bucket with hot water, added essential oils, salt and baking soda. Soaked my feet, scrubbed them and made one for my husband. You can bring the spa to you in easy ways! "Take time to take care" as Louise Hay would say. Blessings friends!
Step into the kitchen and create a heavenly puffy magical creation. These are called Gorditas de Nata, a Mexican street food found at carnivals, street fairs or other stands in Mexico. They look like huge puffy pancakes. They slice into them like you would a biscuit and slather on Nutella or other toppings. The direct translation for my variety today of Gorditas de Coco would be a Coconut Cream Biscuit. I liked Fat Pancake Biscuits but call them as you will. "Gordita" means fatty or chubby as is seen in the thickness of these magical cakes. â

I've been re-reading The Masters of the Far East, a great series of books. I ran into a few parts in the second book that I wanted to discuss with my husband, Gerald Clark. This is the savory version but of course it can be made sweet. The options are endless. Today we had a big veggie sandwich and avocado toast. I've also used them as sliders, they're great starters, appetizers or a meal in itself. These are naturally gluten-free, grain-free, vegan and alkalizing! To your vibrant health!
What do you get when you drink a full cup of vegetables? ENERGY! You get a big boost of energy. That's what you get. I love this vegetable juice primarily for how it makes me feel.
