Cauliflower is a low-carb superstar replacing rice. Bright colors peak through creating a tantalizing dish. The special touch that takes this meal up a level is the vegan egg replacement. Add garlic, ginger, bell pepper, the sweet from the onion and carrots with a little kick from the serrano pepper and it's a party.
This easy vegan recipe is a winner. When I first went vegan this was a staple in our home, I would make them for us all the time. It's also a great recipe to make for guests. For some reason I kept thinking about this recipe, we hadn't had it in years, I pulled out the original hand written version from my old notebook and had to share.
A chocolate crust is topped with cheesecake, strawberry cheesecake, a chocolate ganache frosting and macerated strawberries to create a sensational dessert. I took great care crafting each layer, which are all good enough to eat as is, yet when all combined create a perfect dessert. The cheesecake is lush, the ganache and crust tie it all together. It reminds of a Neapolitan cheesecake, add vanilla and you are there. :) No matter what you call it or how you slice it, I have full confidence in this recipe. Enjoy my friends!
