I was standing in line at the fruit store, la frutería, one of my favorite places, and I saw a TON of Jicama. It's native to Mexico so they have it all the time. I added one to my basket. I thought "this would make great vegan bacon" and boom the spark of inspiration was soon turned into Jicama Bacon. A new vegan invention. I'm not sure if it's been done before but it was 100% authentic in thought at that moment and I those are usually divine.
I just love tofu scramble! There are so many different ways to make it and this is one of many. You can whip this up in no time, add a variety of vegetables, herbs and spices, serve it with fresh veggies and a tortilla for a taco. It's so dang good. Enjoy!
This zucchini recipe may blow your mind. Zucchini is grated, the moisture is squeezed out, a dry rub absorbs any excess moisture and gives it some nice flavor along with a little garlic and a lot of BBQ Sauce. It bakes for 45 minutes and if thin enough, is perfect, if not, 10-15 more minutes without a cover will take you there. It has charred and sticky gooey bits, it has a great texture and flavor, it smells ammmazing and tastes even better.
Potato rolls. Fluffy, puffy, soft and amazing rolls, great anytime. These are wonderful for gatherings, served with dinner, maybe a little jam on top, anyway you desire. Great to dip in soup or use as little sliders. They are irresistible. Some of the best I've made! My only warning is they're so hard to stop eating, enjoy!
