Green Juice is in the house! Nothing beets green juice, other than making it yourself at home. The best part is this recipe doesn't require a juicer, you can do it in your blender. Ginger, parsley, cilantro, spinach and oranges are my go-to for a quick and easy green juice. You can get creative and add a lot of other ingredients such as other herbs, other greens, celery, cucumber, lime, apples and the list goes on!

For the last month or more my parents and I have been getting together on Saturday for grill day! We gather food at the market, come back and then prepare it on the grill. I rented a home with a beautiful grill and my neighbor has been kind at ensuring we have wood.
The first time I had a roasted beet was at a high-end restaurant in Monterrey, MX. It was so soft and easy to slice into, the flavor was better than any beet I'd tasted. Next level. Since then my parents and I have started grilling on the weekends and roasted beets are a favorite of ours. If you've not tried it, I highly recommend it. So lush, soft, flavorful, beautiful and not to mention healthy. With very little effort, a grill and some time, you can enjoy these wonderful gems.
Grilled Plantains - Heavenly!

Grilled Plantains are a new favorite of mine! Soft, sweet and delicious. Grilling them couldn't be easier. Simply put it over the grill at medium-high heat and flip halfway, no exact science, the skin will begin to bust and soon the inside will be cooked. When you open the peel a golden banana with caramelized edges await you to dig into it.
My parents turned me onto this simple and delicious recipe. Fresh parsley, minced garlic and olive oil create a simple sauce and tastes wonderful when preparing grilled vegetables or other food. You can add vinegar, chilis, a touch of oregano and salt and pepper to spice it up or leave it as is. It tastes amazing to use when cooking, yet also tastes fabulous served on top of food or to dip your bread into.
How to Make Grilled Cabbage

Nothing says summer quite like the outdoor grill. Something about cooking your food on a grill on a hot summer day with a refreshing cold drink in your hand and cool watermelon is a sure recipe for a good time. Lately my mom and Dad have been coming over, we go to the market and then we grill! It is a great day and a good way to spend time with your friends and family. Plus, the food tastes so amazing! You can grill nearly any vegetables you desire. On this day we craved grilled cabbage so that's what we did. You can cook it as a cabbage steak or you can get the edges all crispy. However you desire! The flavor is so good, it's one of my favorite ways to eat cabbage. Enjoy!
I recently went to Monterrey, Mexico and while I was there, I thought it would be fun to see what kind of vegan food they had. It turns out they have a lot! I decided to try the Hare Krishna Vegan Restaurant as it had a vibe from India and felt more spiritual than commercial.
