We love baked oatmeal for breakfast, it's warming, hearty and so delicious. This is a spin-off that concept with a fresh new outlook using ingredients to boost the protein intake for a filling breakfast. Quinoa is soaked overnight, rinsed and then baked. Soaking will allow your body to absorb the nutrients more readily, including the protein! The flavors of cinnamon, vanilla, peanut butter, berries and bananas swirl together to create a morning treat. I hope you love this recipe!

Slice into heaven with a raspberry jam bar! These have a shortbread crust, are topped with homemade raspberry jam and more shortbread. They're baked until golden, cooled completely (the hardest part) and then enjoyed immediately! These can be eaten as is or can be made fancy with raspberry mousse and extra jam. Oh yeah, baby! Let's do this.
Meatballs can be yours. They're great for your body and the planet. They taste amazing and are surely husband approved! Meaty consistency and they don't taste like oats due to our flavor bomb of ingredients. We seared them, baked them and then had them over pasta with homemade sauce, vegan parmesan and fresh basil. I can only imagine how great they'll be in a sub! Mamma Mia!
