This week I have a request from my dad, Ernie Larson! It's his birthday Monday November 11, join me in wishing him a happy birthday! He requested his favorite pie, Pecan Pie, with my twist on it. So here it is. Fully of ooey, gooey sticky filling with pecans to boot. I went a little pecan crazy so have reduced the amount of pecans in the recipe so it'll be just right for you. :) This recipe reflects a standard 9" pie but if you want to make the cutsie mini cast iron skillet version I have the measurements in the notes of the recipe. My mom, Johanna Larson, makes the most amazing pies. Around the holidays we'd get to choose our favorite dessert and she would make the pies. I remember my mom and dad waking up early to make the homemade pie crust for the quiche and other desserts. This is her go-to recipe. I told her I used it today and she recited the recipe to me by heart, that's how much she uses it. This is a great crust that is versatile, can be made and baked right away so you don't even have to refrigerate for hours and it's still darn good. This week I bring a NEW recipe for Pea and Carrot Fritters that are 100% plant-based and gluten-free. Peas are complimented by carrots, radishes, mint, cilantro and dill for a complimentary flavor bomb in your mouth. They feature amaranth flour with is packed with protein and naturally gluten-free. You can bake them, pan-fry or deep-fry making them as healthy or indulgent as you desire.
