Herbed Vegetable Medley

I love the smell of fresh herbs smothering potatoes. Add some of your favorite vegetables and beans and my oh my you have a delicious meal that is hearty and healthy! The scent wafting through the air made me smile as I greeted the freshly baked meal. The flavor from the fresh herbs, onions, garlic, bell peppers met with a kick from a chopped jalapeno and red pepper flakes and the tang of a lemon offer a delightful surprise to your taste buds. The meal is really easy to make with light prep work served fresh from the oven! Join me if you please in this simple and healthy meal!

 Ingredients:
  • 1/2 lb fingerling potatoes - sliced in half
  • 1/4 green bell pepper - sliced in strips
  • 1/4 sweet onion - sliced
  • 2-3 garlic cloves - diced
  • 1/2 cup broccoli
  • 1/2 jalapeno
  • Few sprigs fresh parsley
  • 1 can of kidney beans
  • Pinch of Fresh Dried Herbs: Basil, Oregano and Thyme.
  • Juice of 1 small lemon
  • Drizzle of olive oil
  • Salt, Pepper, and Red Pepper Flakes to taste
Directions:
  1. Preheat oven to 400 degrees
  2. Line a small pan with parchment paper and lightly grease
  3. Place vegetables in a bowl or bag and combine the oil, herbs and spices and mix or shake the mixture until well covered.
  4. Transfer to the pan and cover with aluminum foil.
  5. Bake in the oven for 30 minutes, serve hot!

Crunchy Tacos

Tacos, Tacos, Tacos! I swear tacos are good about any time of day! I just love them! We did it up this past Taco Tuesday and couldn't help but go for a late night snack!! In fact, I couldn't help but make them again tonight because the pictures looked so dang good. They were even better, I swear! I had a ripe avocado tonight so it made it that much better! Gerald quotes "This is becoming a new favorite!" Mmm!!!! The recipe was requested so with without further ado...here you go!! Join me and have a taco!!

Ingredients:
  • 2 tbsp oil
  • 1 package tempeh - crumbled / ground
  • 1 can black beans
  • 1/2 red onion - chopped
  • 1/4 green bell pepper - diced
  • 1 heirloom tomato - diced
  • 1 avocado - sliced
  • 1-2 leaves napa cabbage - or fav lettuce - diced
  • Spices: Cumin, Sea Salt, Black Pepper, Red Pepper Flakes, Cayenne and Garlic Powder - a dash of this, a pinch of that. (To taste)
  • Enchilada Sauce

Directions:
  1. Chop the veggies and prep the tempeh
  2. Preheat oil in a pan over medium heat
  3. Saute an onion for a 2 min and add the crumbled tempeh
  4. Saute until it begins to brown, add the seasonings. Saute for another minute and add the black beans and enchilada sauce. Heat throughout
  5. Serve in a taco shell

Serving Size - 2 Tacos  ~ 4 total servings
Prep Time - 10 min
Cook Time - 15 min

Total - 25 min

Meatless Monday

I hope you all had a fabulous weekend and are off to a fresh start for a bright new week! I have a divine recipe for you to try for your Meatless Monday! It was a recipe I made on a complete whim the other day. I love meals like this. A little bit of this, a little bit of that, and before you know it something new comes out of very basic ingredients. It comes in at under 300 calories per serving with 11 grams of protein!! That's what I'm talking about! It makes a heck of a lunch or a nice dinner for two. The presentation is a feast for the eyes! Just wrap it up and munch it down, nom!

Nutritional Analysis
  • Very low in saturated fat
  • No cholesterol
  • Low in sodium
  • High in dietary fiber
  • High in iron
  • Very high in potassium
  • High in vitamin A
  • Very high in vitamin B6
  • Very high in vitamin C

Ingredients:
  • 5 golden baby potatoes - sliced
  • 1/2 small sweet onion - diced
  • 3 garlic cloves - minced
  • 5-7 Brussels sprouts - sliced in half, then chopped lengthwise
  • 3 green onions - sliced
  • 1 cup broccoli
  • Sea Salt, Pepper, Red Pepper Flakes, Cayenne Pepper, Cumin, Gluten-Free Soy Sauce to taste
  • Italian Parsley - handful of fresh leaves
  • 2 leaves - Napa Cabbage

Directions:
  1. Heat 2 tbsp of water (or veg broth or oil) in pan over medium high heat, once hot add potatoes, sweet onions and garlic. Saute until the potatoes are golden and begin to crisp.
  2. Add seasoning, green onions and broccoli. Stir occasionally until broccoli is done.
  3. Add fresh parsley on top. Serve in Napa cabbage boat.

Chocolate PB Mousse

Hope you are surviving the weather wherever you are! It is unseasonably warm here in San Diego and we are loving it! We found ourselves sprawled out on our yoga mats in the warm sunshine these last couple of days soaking it up. I forget how much the warmth makes a difference when stretching, icaramba it feels nice. I have been trying to get more active with the start to the new year (are you?) and found myself taking a nice long walk. What are you doing for exercise? We've been trying to learn a few new yoga poses to bring it up a notch! We also like to incorporate hand weights with our walks adding Tai Chi movements, lunges, jump backs etc. It feels so good to get moving!

It also feels good to have a sweet treat! If you are still up and have a sweet hankering then I have just the right fix for you! It only takes 5 healthy ingredients some of which posses super food qualities! It is gluten-free, practically raw (less PB), and VEGAN! It only takes 5 minutes to create, 10 minutes in the freezer makes a delicious difference!

What do you need? 1 avocado, raw cacao powder, agave syrup, nut butter and a pinch of stevia. Bonus - top with your favorite treat! A frozen berry or... a chocolate covered something special! I opted for the latter...

That's it! ~ A not so guilty dessert made with an avocado base! Imagine.... this on top of vegan brownies, layered vegan cake, as a filling in a cupcake, in a layered parfait...! Plus Raw Cacao is known as a super food! It is a fantastic source of magnesium, one of the richest antioxidant source, an all natural anti-depressant, and helps diminish the appetite so can aid in weight loss! Say what? I'm SO loving cacao, I'm getting my chocolate fix and a health fix - heck yah!

Citrus Infused Rainbow Carrots & Brussels Sprouts

What was on your menu for Meatless Monday? We had brown rice spaghetti with a chopped side salad. The other night I made one of our new favorites!  I started with a bed of red quinoa for added protein, then covered it steaming hot Citrus Infused Rainbow Carrots & Brussels Sprouts. Each bight exhilarates your taste buds. My oh my a true sensation! I've already made it again and we are HUGE fans! My husband loves it and claims the flavor is absolutely incredible! Yes, success!!! :D

I hope you enjoy the recipe as much as we do. I like to fry 'er up in our cast iron skillet while jamming to some tunes. A slight yoga stretch while reaching for an orange and before you know it Jerry is behind me wondering what smells so good! My favorite meals are made this way! My secret ingredient? Love. Love is the secret and most important ingredient of all. When I'm happy loving and thankful along the way adding a dash of this and a splash of this, the finest creations are made. Do enjoy!

Servings: 4          Total Time: 20 Minutes

Ingredients:
  • 1 cup quinoa (or rice)
  • 4 carrots - sliced
  • 1 lb - Brussels Sprouts - sliced in half
  • 2 tbsp earth balance spread ("Butter")
  • 2 tbsp Stevia
  • 1 tbsp agave syrup
  • 1/2 Big Juicy Orange - Squeezed
  • 1/2 tsp Cayenne (+ for extra spice!)
  • 1/2 tsp Cinnamon
  • Dash Sea Salt

Directions:
  1. Cook the quinoa or rice and get started on the main dish!
  2. Melt the "butter" in a cast iron skillet over medium high heat, add the stevia, agave syrup and orange juice and stir until it begins to thicken.
  3. Add the vegetables, stirring occasionally, cooking until done.
  4. Add the spices and mix well.
  5. Serve hot over a bed of quinoa or rice! Total time about 15-20 minutes.

Chocolate Banana Vanilla Chai Protein Shake

Chocolate Banana Vanilla Chai Protein Shake! YUM! Does it get any better than this? This shake is a craving buster and a real treat! It is raw, vegan, gluten-free and full of whole-food ingredients. Loaded with frozen bananas, cacao, a handful of raw almonds, a splash of filtered water and a touch of vanilla chai protein powder to create a cacao sensation any time of the day! We enjoyed ours for breakfast the other morning. Chocolate lovers this shake is for you, it is so chocolatey....yum! Place it in the freezer for 20 minutes and it will be like ice cream.

Tip: Ensure the bananas are very ripe before freezing! Peal, freeze the night before and enjoy!

Ingredients:
  • 4 frozen bananas
  • 1 cup cashew milk
  • 1 handful almonds
  • 1/4 cup raw cacao
  • 1/2 scoop vanilla chai protein powder
Directions:
  1. Place ingredients in high-speed blender.
  2. Place on smoothie setting or high and blend until smooth. It will be thick 'n creamy!

Goddess Dip

Bring out your inner god or goddess with some healthy goddess dip made with whole-food ingredients that are completely vegan and gluten-free. It's so good for you your aura may even shine brighter after indulging. Cut up some fresh veggies, add some sweet potato chips and get to dipping! We love dip and can't seem to keep enough around. This is a great new recipe we both love! What a healthy snack or even a light meal! It's great to put out before dinner, for guests, for kids, for husbands...enjoy! :)​

Goddess Dip
  • 1 can chick peas
  • Fresh Basil
  • 1 lemon freshly squeezed & the grind
  • S&P to taste
  • Red Pepper Flakes to taste
  • 1/4 cup olive oil
  • 1 tbsp Goddess Dressing
  • 2 Cloves garlic
  • 1/4 cup sweet onion

Directions:
  1. Place all of the ingredients in a food processor except for the olive oil, pulse until combined
  2. Slowly add in the olive oil
  3. Pulse until creamy
  4. Place in bowl with a basil leaf on top, surround with fresh veggies and chips or pita bread!

Happy New Year!

2013 flew by for us, did it for you? I am having a hard time believing it is already 2014! Life doesn't seem to slow down, it just keeps flowing. I sent out my first holiday letter and was shocked at how much had happened in just one year. We were very blessed, we had our ups and downs like everyone else but overall I'd say it was quite a miraculous year!!!

2014 brings a new year and new opportunities. When I think of what I'd like for 2014, 14 words come to mind:

  • Compassion
  • Freedom
  • Simple
  • Light
  • Healthy
  • Vibrant
