Fearless Friday!

It's funny. I started the series 'Fearless Friday' 2 weeks ago thinking I would face a new fear each Friday. By Saturday I realized it wasn't about facing a fear once a week, but everyday. Now, just two weeks later, I see it all much differently. Each day we have a choice. Will it be fear or will it be love. Which force will guide us. I hope we may all vibrate with the frequency of love through and through dispelling all fear. I've decided to hitch my horse to love full-time!

My sweet husband Gerald Clark walked the walk this last Wednesday and took his stand with no fear. He took the truths that burned in his heart and shared them with humanity for all to hear on Coast to Coast AM radio with George Noory. Interview with Carrie from Carrie on Vegan + App Give-A-Way!

Carrie Forrest is a graduate student in public health nutrition, author of the popular blog, Carrie on Vegan, and creator of the best-selling app for iPhones and iPads, Vegan Delish, featuring over 125 healthy recipes made using whole food ingredients. Christa: Hi Carrie! I’ve been reading your blog, Carrie on Vegan, for awhile now. I love the ingredients you use and not to mention your fresh and easy recipes! What inspired you to create a recipe app?

Carrie: Thanks Christa! I’m so happy that you wanted to interview me. I’ve been blogging since 2010 and it got to the point where I had so many recipes that I wanted to either do a cookbook or a recipe app. Vegan Delish is in many ways a digital cookbook, with the added bonus of the special features like a shopping list and social media sharing and the ability for me to continually add new recipes or tweak the older ones to make them better.

Christa: A recipe app is so innovative. How did you embark on creating the app? What has been the biggest challenge?

Carrie: Creating the app was a huge project and it was a lot more work than I originally anticipated. The biggest challenge has definitely been the technical side and managing all of the moving parts that come with a web-based project. Also, I have to say, there are a lot of expenses that come with any big project, and I took a leap of faith to use my personal savings to get the app off the ground.

Christa: What has been the response of the vegan community to Vegan Delish?

Carrie: My app has been embraced whole-heartedly by both the vegans and non-vegans and I can’t tell you how much it means to me. In the first few days of its release, Vegan Delish was in the top 15 Paid Food & Drink apps on iTunes and it continues to break sales goals as the word spreads. Because of its focus on healthy recipes using whole food ingredients, I love that Vegan Delish has a broad appeal to anyone who wants to add easy new recipes to his or her kitchen.

Christa: There are so many incredible recipes to choose from. Do you have a favorite?

Carrie: My favorites change, but right now I’m in love with the Dessert Hummus for a healthy treat and my No-Bake PB&J Pie for something more decadent. I even created a “Summer Recipes” category for recipes that are especially good for hot weather. Those include some other current favorites including a Marionberry Ice Cream Pie (dairy-free, of course), BBQ Baked Beans made in the crockpot, and a Cauliflower Pizza Crust.

Christa: Carrie, what’s the long-term goal for your app?

Carrie: I envision Vegan Delish as becoming the go-to mobile resource for healthy, plant-based recipes. Just in recent months, I’ve started adding recipes from contributors that I hand-select for taste, simple ingredients, and easy instructions. Some of those recipes include Buckwheat Pancakes with Maple Cashew Cream, Almond Rosemary Crackers, Zucchini Corn Fritters, and Quinoa Mango Salad. So, the app continues to just get bigger and better with new recipes and constant improvements.

  • 1 cup frozen berries
  • 1/2 cup walnuts
  • 1 clove garlic
  • 1/4 cup white onion
  • 1 cup apple cider vinegar
  • 1/2 cup unsweetened soy milk
  • 4 medjool dates, pitted

Directions:
Combine berries, walnuts, garlic, onion, vinegar, soy milk and dates in a high-speed blender and process until smooth.

Face Your Fear Friday!

Have you looked in and asked yourself what is holding you back lately? What are your true dreams, your hearts desires? I believe when we erase fear we are left with love.

Upon posting last weeks introduction to Fearless Friday I was immediately tested with fear after fear. It's funny how that works. I instantly realized it's about facing your fears every day. We went to an event out in the desert to help promote Jerry's new book and decided to camp nearby. I always seem to face fears in the desert. I think it has to do with it be so desolate, hot, dry and expansive. It could probably be seen as undesirable to some but once you get comfortable, create a sanctuary of your own, it can actually be quite harmonious and heavenly. You can go on a walk and be completely alone and at first the feeling is eerie and kind of frightening but then it expands into limitless space.

We picked a spot next to this beautiful hedge of trees. The tree was full of life. You could hear the buzzing of bees, see the huge bumble bees, beautiful flying beetles and hummingbirds floating about.  My husband and I brought up our solar generator (he created) and our mini fridge so we could camp in style. This is one way we turn a hot desert into a happy oasis. Nothing beats cold water and fruit on dry hot summer day.

The first fear I faced was the fear of flying buzzing stinging things. As I was nesting in our new "home" for the weekend a bee came in  our tent. I became nervous it would sting me. I oscillated back and forth. Unsure of how to go about it. I finally got out a jar, successfully captured the bee and then realized I forgot the most important part...the cover on top! I had to muster up some courage and try again. With a cover on top, I tried again. This time I was able to successfully release the bee. It flew off and I realized it was no big deal. The bee was alive and I was happy to have faced the fear (with or without much grace). Later that even we enjoyed a delicious dinner for two and star-gazed.

The rest of the trip I chilled and the bees floated in and out of our tent and I even saved a few more. I was at peace with mother nature and myself.

The next day we attended a lunch and gave George Noory a copy of Jerry's new book.

While at the luncheon we met a drummer who invited us to play the didgeridoo at the dinner hall later that evening. Jerry thought it would be a good opportunity to overcome my next fear and finally SING in public. This brought up the fear of judgement and learning to find my voice. I practiced in our tent and with our amp. We showed but never found our drummer. So instead we played our didges and drums and met some really awesome people! I even got a rad clip of Jerry and Rob, I bust in a little towards in the end. Check it out! Before Rob left I asked if I could sing a song as to not miss overcoming the fear. I did, not very confidently or great but I did it.

We left feeling elated. We later played our didge and drum at our tent. Soon we had some nearby campers invite us to join their circle with a guitar, we joined in with the didge and drum. Jerry drew a line in the sand as if to show I could move past that line if I chose to sing. The guitar player David didn't know the song I wanted to sing, so I tried to sing it solo and everyone got silent, my voice cracked and was hard to find. I tried again, and sang it again. David took the lead and started whaling on some songs. When I realized I knew the lyrics I joined in, grabbed the microphone and belted it out! In that moment I faced the fear and felt free. Jerry drew an arrow past the line and it was like walking through a door so to speak.

There were a considerable amount of fears to overcome, it was an adventure that's for sure. What fears are hiding in you? When you face your fears, you grow, you change. Those old fears are like your old self and it no longer has a foothold on you when you decide to face your fear, let go and move on. Let us remove our fears, fulfill our dreams and vibrate in the frequency of love.

Choco Strawberry Banana Pineapple Smoothie

Chocolate Hemp Protein Powder combined with fresh bananas, frozen strawberries, frozen pineapple and a few dates makes for a happy belly. Plus it tastes amazing.

I stocked up for the week at the grocery store, came home and realized I neglected to have my morning shake! Thankfully I had fresh bananas from the store and within 5 minutes I was gulping the shake down. I can honestly tell a difference when I drink my shake.

I feel stronger, rejuvenated and rebalanced. My energy is restored and I feel ready to take on the next task. Smoothies are a great way to join a mixture of ingredients, especially if you have anything that is going bad. I love to peel my ripe bananas, break them into pieces and freeze them. They work out magnificently in shakes.

Want to know what I learned today? If you have a fresh pineapple, set it on its side while it ripens so it allows for more evenly distribution of the sugary sweet juice. Who knew? Thank you Duane from Trader Joe's! :)

Making this smoothie is a piece of cake! Here is how:

Ingredients:
  • 2 bananas
  • 1/2 lb frozen strawberries
  • 2 frozen round slices pineapple (about 1/4" thick ea.)
  • 1/4 cup raw almonds
  • 1 1/2 cups filtered water
  • 5 dried and pitted Medjool dates
  • 2 scoops Chocolate Hemp Protein
Prep:
  1. Place ingredients in Blender. We use our Blendtec!
  2. Place on smoothie setting or medium to high-speed, until nice and creamy.
  3. Pour in glass and drink to good health!

Homemade Salsa

Lately I've been creating large batches of foods that we love. It just makes sense. Why not have quinoa and beans on hand and large batches of salsa. Why not have pre-made hummus ready for dipping or enjoy a loaf of homemade bread with almond butter & jam. I say yes please! Nothing tastes better than homemade or homegrown especially when it's created with the frequency of love.

Our friend has been graciously sharing his tomatoes! We've been in heaven making large batches of salsa. Is pouring it on meals wrong? It's soooo good! Who needs a chip, use a spoon!

I thought I'd share my favorite way of making salsa so you can enjoy it too!

I like to get out the food processor, some mason jars and set up shop near my cutting board.

First, peel the garlic and place into the food processor with the chunks of onion. Pulse until desired consistency. Distribute amongst the jars.

Pulverize the jalapeño(s) depending on how spicy you like it and place in jars.
Add fresh squeezed lemon juice.

Next place chunks of fresh tomatoes in the food processor and pulse until desired consistency. Pour into jars. Add spices such as cumin, salt, pepper, cilantro and red pepper flakes.

Roll the jar to mix the ingredients well, feel free to shake it a little and you have salsa!

I just add a little here, add a little there and taste it at the end. Enjoy!

  • Jalapeno(s)
  • Red Pepper Flakes
  • Cumin
  • Garlic Salt and pepper
  • Cilantro

Prep:
  1. Pulverize ingredients in the food processor

  3. My jars are typically filled with: 1/2 onion, 1 jalapeño, 2 tbsp lemon, spices with fresh tomatoes on top.
  4. Roll to distribute.
  5. Store in fridge.

Introducing Fearless Friday!

Good morning and Happy Friday!

I thought I'd start a new series called Fearless Friday, where each Friday a new fear is faced. A few years ago I made a decision to begin overcoming my fears. It started out in the desert on a camping trip. Jerry took me on a night walk by moonlight. You should have heard me. What was that? What's that? Eek? Jerry, what is that! Slowly, but surely I started to overcome fears. I never knew I had so many lurking in the dark.

One of my biggest fears has always been snakes. They scared the living daylights out of me. Then one camping trip we saw a rattle snake. It was huge! It was just resting in the shade, above from a water hole not bothering anyone. Jerry had taught me that we're not on their prey and reminded me that it didn't want anything to do with me. I could hardly hear him as my fear unglued me. He had me sit there and face me fear and I did, even with a million butterflies in my stomach. I even got this pic! Now I am not as scared and have enjoyed countless beautiful hikes from facing that fear.

A couple of years later we went swimming in a hole with a snapping turtle and a diamondback snake. Sometimes I wonder if he has life insurance on me. JK  We had just picked wild berries and were covered in ticks and chiggers and needed to get them off quick. He scared away the snake and turtle and said well come on in! One step at a time (and some hollers) I overcame my fear!

Just this week we had a brown recluse in our home. Instead of having him take it outside like I ALWAYS DO, he asked to try to overcome my fear. I’d prefer starting with a daddy long leg spider but I did it! He reminded me that I wasn’t its prey and that the spider was still in shock from my scream lol. I held the paper over the cup, watched it very carefully and took it outside. I put the glass down and high tailed it back inside. You don’t have to overcome the fear gracefully.  The next day, another spider. Only this time my daddy long leg. Another scream, yet another win. Plus, I feel way better having not killed either spiders.

There are so many fears. Some are creepy and crawly things, other fears are fear of death, fear of judgement and so on. Each time I turn around it seems I find a new one to face. But each time I face the fear, I grow stronger. I remember back and think well I did it then, so I know I can do it now.

I say face the fear, even if you are screaming and scared the entire time, but face it, feel the emotion and then feel the sweet sensation of overcoming the fear and watch a door open. I’ve been practicing it and it’s been really fun.
This blog wouldn’t exist if I didn’t start overcoming fears. So I ask you to begin thinking of what fears you’d like to overcome…there are only two things…fear and love….lets opt for the latter shall we?
​

The fear for this week was a video with voice. I’m still working on a yoga video with voice but thought I’d start with the garden. Red Quinoa Wraps

We went out to eat last night to celebrate Jerry's new book at our favorite restaurant in SD - Sipz Vegetarian Fusion Cafe! Every time I go I walk away extremely full and satisfied. I love that I can have "shrimp" and "beef"! The flavors and sauces they use rock. It's very inspiring. What is your favorite vegan restaurant?

For lunch we've been digging quinoa and cabbage wraps so I thought I'd combine them. Quinoa is one of my most favorite grains, primarily due to the way it makes me feel. My body instantly feels satisfied and gratified. I can feel my body thanking me for giving it the proper fuel. My youngest step-son JJ absolutely loves quinoa. When we first introduced him to quinoa he went crazy for it and will pick it over a unhealthier option any day, it's amazing.

Knowing this makes me want to eat quinoa even more! It's a staple in our home and organic red quinoa was a sure treat offering a rich beautiful color. I made 2 batches on Sunday and have enjoyed it in salads, wraps, dinners etc. It's fabulous!

For this wrap I took a red cabbage leaf, topped it with homegrown mung bean sprouts,with pre-cooked quinoa, added some homemade salsa, ripe grape tomatoes and an avocado. Feel free to add your favorite dressing and mix up the wrap. Best part? It only takes 6 ingredients and 5 minutes of time!

Serves 2 - 350 calories / serving
Ingredients:
  • 2 Red Cabbage Leafs
  • 1/2 cup fresh mung bean sprouts
  • 1/2 cup pre-cooked red quinoa
  • 4 tbsp salsa
  • 1 avocado - sliced
  • 1/2 cup grape tomatoes

Prep:
  1. Cut near base of cabbage, carefully peel back leaf for the wrap
  2. Top with 1/4 cup sprouts per wrap
  3. Top with 1/4 cup pre-cooked red quinoa per wrap
  4. Top with salsa, avocado and tomatoes. Opt: add your favorite dressing!!!

Cashew Butter & Berry Goody

Good day! I hope this message finds you in good health and happiness. I was craving a PB&J and created a Cashew Butter & Berry Goody! I placed fresh, ripe, sweet bananas on the bottom, with 3 frozen strawberries on the side, combined with little balls of cashew butter and a dollop of organic strawberry jam on top. It was a delectable treat. Within only 4 ingredients and 4 minutes to go, you too could be enjoying your very own Cashew Butter & Berry Goody!

Serves 2

Ingredients:
  • 1 ripe banana - broken in chunks
  • 6 frozen strawberries
  • 3 tbsp cashew butter - rolled in balls (or your favorite nut butter)
  • 1 tbsp organic jam

Prep:
  1. Place 3 bananas in each dish
  2. Place 3 strawberries in each dish
  3. Roll cashew butter into balls and place 4-5 on each dish
  4. Add 1/2 tbsp organic jam to each dish - smile, because it was so easy and it's good! :)

And it's not too bad for you either, with 229 calories per serving of healthy whole-food ingredients.

I just took raw cashews with a little coconut oil and joined in our food processor. So yummy! Great on toast, crackers, desserts, brownies....etc... :)

Grocery Shopping with a Vegan! Pt 2

I read the book and couldn't put it down, seriously. My brain was tingling as I read and at some times steaming. He pushed me to boundaries and had me face hard-hitting questions. After all that hardcore knowledge, my brain needed to air out. The ocean is my favorite place to do it, and Jerry loves it too. My feet sunk into the sand, touched the water and everything was all right in the world. I splashed in honor of my sweet step-son JJ and smiled sweetly. We stretched and did yoga and watched the many tourists pass by.

Through out the day we expressed ourselves, reached new heights and then shared a beautiful sunset.

After reading his book and spending time by the shore I'm reminded of the quote above. The following day our friend came over and shared an incredible amount of tomatoes and very large garden fresh zucchini!

I couldn't help but play with the food!

Then I went GROCERY SHOPPING! I just love grocery shopping. Do you? I used to despise it. Then I dated a foodie who told me it was his most favorite thing to do because he would imagine all the good meals he would eat as a result of shopping and loved the savings of dining in vs. eating out. Ever since then I've looked at grocery shopping different and have thoroughly enjoyed it. I love to touch, feel and smell the produce.

Here are some helpful guidelines to use when shopping!

Always read the label! More often then not there are hidden ingredients that aren't good for you.

Buy Organic when possible!

Buy plenty of fresh veggies and fruit to keep your cravings at bay!

Try not to skimp on the good stuff. Allow yourself a treat.

Try something new! This week I tried a lychee!

Summary:
  1. Always read the label! If you can't pronounce it or it has die # X consider a different item. The less ingredients the better.
  2. Buy organic as much as possible! Read about the dirty dozen and clean fifteen here!
  3. Try to decrease packaged goods and buy plenty of fresh fruits and vegetables! Instead of canned salsa, make some fresh!
  4. Don't skimp - allow yourself that tasty piece of fruit. Try to replace bad habits with good habits. I've been replacing wine with peaches and fresh berries. I eat them raw, make jam, smoothies etc!
  5. Try something new!

Fresh peaches? My husband was my gracious photographer! Thanks honey! That evening I made 2 batches of quinoa and 2 batches of homemade salsa for the week and soaked some dried black beans. We've already enjoyed the salsa and quinoa for 3 meals in different varieties. Today the black beans are on the stove and homemade bread will be on its way soon. Life is good. As if all that weren't enough, my best friend sent me a beautiful apron this afternoon!
