5 Ingredients until you are stuffing, roasting and soon eating. This is a staple in our home, a true household favorite that we enjoy often. Out of all the peppers, the poblano pepper is my absolute favorite pepper to stuff. The natural flavor is so good, I could practically just eat the pepper. It makes the most wonderful base and compliments the other 4 ingrdients in the most magical way.
This weekend the time slipped away and before I knew it, the afternoon was upon us. I pulled out some fresh veggies from the fridge and thought, I better get my camera out and record this because it is going to be good! A beautiful array of colors filled my cutting board and a few ideas crept in after my meditaiton. Those are the best!
Have the taste and aroma of apple pie compacted into a muffin with warm apple chunks inside, a crisp steusel on top and a sweet glaze on top. If I had a little bakery, you could find these in the fall as a house classic. These are truly unbelievable, even if you don't like apple pie, you may be surprised how well you like these.
Grab a spoon and drizzle this frosting glaze on top of your favorite treats. This is featured on the Vegan Apple Pie Spiced Muffins with Streusel & Glaze. Add it to nearly any dessert, use it as a fruit dip at a party, maybe even just grab a spoonful if you are inclined. Generally, a glaze consists of 1 1/2 cup+ confectioners sugar whereas this only uses 1/4 cup of sweetener. You could add more or less to your taste preference but I found this to be a delicious sweet spot. You'll love how smooth, silky and creamy it is. It's truly magnificent. Enjoy!

 You guys! This happened one late night when Gerald brought me a big batch of fresh nopales. At first they were nopales rellanos and then the morphed into these enchiladas or as Gerald loves to call them Nopalitos.
Grab some chips because I got the dip! Vegan Queso! It'll have you sayin' "it's nacho cheese, it's my cheese". Slather it on your favorite dishes and watch as it melts fantastically and makes a beautiful addition to your meal. It's also packed with flavor. I have a girlfriend who is allergic to nuts so nut-free options like these are great to have on hand.
Back to school is in full swing! I can't help but notice all my friend's kids going back to school, with their cool new backpacks, new clothes and big smiles. One question that may come up is do I pack a lunch or participate in the school lunch program? Maybe you do a mixture of both like my mom did growing up. Either way, I have a fun new lunch your little one may love.
