That's a Wrap!

My husband Gerald Clark had a phenomenal show on Coast to Coast AM Radio Saturday discussing topics within his best-selling book "The Anunnaki of Nibiru: Mankind's Forgotten Creators, Enslavers, Destroyers, Saviors and Hidden Architects of the New World Order" and we've been buzzing around ever since! The feedback is sensational, if you haven't listened yet tune in!

In the midst of the flurry of fun activities that followed his successful show I made a trip to one my favorite stores Trader Joe's and picked up some delicious vegetables, fruit, nuts and few other items and was on my way. I opted to make something raw, quick, easy, delicious and nutritious for lunch.

I took a brown rice tortilla, spread spicy hummus on the bottom, added organic mixed greens, red onion, green bell pepper, a jalapeño, a pearl tomato, avocado, handful of chopped red cabbage and topped with Sriracha sauce and crushed sweet potato chips for an added crunch! We added a little dressing and dug in, it was finger licking good and left our bodies feeling incredible!!! We love the way raw veggies make us feel! Don't you?

Ingredients:
  • 2 Brown Rice Tortillas
  • 1/2 cup spicy hummus
  • 2 Handfuls Mixed Greens
  • 1 Pearl Tomato
  • 1 Avocado
  • 1/4 cup red onion - chopped
  • 1/4 cup red cabbage - chopped
  • 1/4 cup green bell pepper - chopped
  • 1 jalapeño - diced
  • Opt: Sriracha sauce and a few sweet potato chips crunched on top (not pictured)

Directions - it's as easy as 1, 2, 3...!
  1. Place the tortilla on a plate.
  2. Spread hummus
  3. Top with veggies, dressing, wrap and enjoy!!!

Berry Beet Worthy Smoothie

Maybe you will tune in over a Berry Beet Worthy Smoothie? :) Beets have had my # lately and I'm loving the benefits. I've been placing 1/2 a beet in our shake in the morning and can seriously feel the difference. Add some dark leafy greens and your body will be thanking you.

Why include a beet? They are high in vitamins and minerals, Potassium, magnesium, fiber, phosphorus, iron; vitamins A, B & C; beta-carotene, beta-cyanine; folic acid are a few...! Beets cleanse the body by purifying the blood. Beets can help your mental health with depression as well as well-being. Not only that but it can help lower your blood pressure. Beets are a high source of energy and can be used as a stomach acid tester. How can it test the stomach acid? If you are eating a lot of beets and your pee turns pink, you have low stomach acid.   • 1/4 cup almonds
  • 2 cups h2o
  • 1 1/2 c frozen berries (strawberries or mixed are both fab!)
  • 6 amaranth leaves (or dark leafy green)
  • 2 bananas
  • 6 Turkish apricots
  • 2 scoops chocolate hemp protein powder
  • 1/2 small beet
Directions:
  1. Put ingredients in high-speed blender
  2. Blend until smooth
  3. Pour in a glass and feel the health benefits!

Vegan Omelet

The other night we shared a Vegan Omelet! Say what? Yes that's right, a vegan omelet! Transitioning to vegan lifestyle can be difficult, especially giving up eggs and cheese but the truth is there are plenty of alternatives! From flax meal, chia meal, bananas, potato starch and so much more!

Rocky Shepheard recently shared a sample of the Vegg Vegan Egg Yolk with me and it is amazing! I can now make my husband a vegan omelet and more!! I modified the Vegg Omelet recipe by: Mimi Clark from "the  VEGG cookbook: Egg-Free Cooking Uncaged" and it was delicious and left our bodies feeling recharged and pumped up!

The Vegg has an egg like flavor, its plant-based, gluten-free, soy free, fat-free, cholesterol free, High in Vitamin B12 and A, all natural, and GMO free! Check out there website: the Vegg or there Facebook site for amazing recipes and updates!

Ingredients:
  • 1 tbsp Vegg Powder
  • 1/2 cup non-dairy milk
  • 1 pckg firm tofu, drained
  • 1 tsp. vegetable oil
  • 2 tsp vegan "butter" spread or oil

Filling: Onion, garlic, bell pepper, zucchini, vegan "mozzarella cheese" and spinach or your favorites such as salsa, mushrooms, asparagus etc!

Directions:
  • Combine Vegg powder and non-dairy milk in blender and process for 1 min until smooth.
  • Add drained tofu and oil and process for 1 minute until smooth.
  • Heat a skillet on medium heat, add the vegan "butter" spread or oil and heat until melted.
  • Pour batter into skillet and work quickly to spread the batter over the entire pan using a spatula to help. Cook on med heat for 10-15 minutes until the edges set and brown.
  • Scatter your favorite fillings over one half of the omelet. Carefully slide the spatula under perimeter and fold the unfilled side over the filled side.
  • Cover the skillet with a large dinner plate turned upside down. With one hand on the top of the plate and the other on the skillet handle, quickly flip the omelet onto the plate.
  • If too soft, bake in the oven at 350 for 10 + minutes. (Recommended!)

Homemade Heart Healthy Soup

Crisp mornings and evenings are here and sometimes all you want is a warm bowl of soup to heat you up.  I recently whipped up some homemade hearty healthy vegetable soup that made you come back for more.

The soup is spicy, hearty, and healthy! It warms your body from the inside and instantly makes you feel satisfied from the array of vegetables, herbs and potatoes. It makes a large enough batch to share or you can have leftovers and heat it up for a healthy and easy meal throughout the week.

Ingredients:
  • 6 cups vegetable broth
  • 4 russet potatoes - quartered
  • 2 carrots - sliced
  • 1 onion - chopped
  • 2-3 jalapenos - chopped
  • 5 + cloves garlic - chopped
  • 2 celery sticks - chopped
  • 1 beet - diced
  • 3 leafs purple cabbage - chopped
  • 2 cups beet greens or favorite dark leafy green
  • 2 tsp cumin
  • Sea salt, pepper, red pepper flakes to taste
  • 1 tbsp (+) Italian Seasoning
  • 2 tsp cilantro
  • 1 tbsp Red Wine Vinegar
  • 3/4 tbsp Lemon Juice

Directions:
  1. In a large pot combine the broth, onion, garlic, carrots and potatoes.
  2. Cook over med-high heat until it comes to a boil.
  3. Reduce heat, cover and cook until potatoes are tender.
  4. Add the celery, beet, cabbage and seasoning and cook for another 10 minutes.
  5. Add the beet greens and heat throughout. Serve hot!

Gluten Free Banana Waffles

This Sunday morning homemade waffles sounded so satisfying and boy were they! "Absolutely delicious" Jerry raved. Warm, hearty, and so tasty! Plus they are super easy to make and are gluten-free. This is one of my favorite recipes that traveled with us from Arkansas across the states and back to CA in the cookbook Jerry made for me, a place to hold all my treasured recipes entitled "Christa's Good Eats: A Culinary Artist at Work!" Now it can travel into your kitchen, enjoy!

Gluten Free Banana Waffles
  • 1 cup gluten-free flour
  • 2 tbsp baking powder
  • 1/4 tsp sea salt
  • 1 cup almond milk (or soy, cashew, rice etc)
  • 2 bananas - ripe/mashed (or 1/2 cup applesauce works as well)

Preparation:
  1. Preheat waffle iron, spray with nonstick spray (I used coconut oil spray)
  2. Mix dry ingredients together
  3. Add the almond milk and mashed bananas and mix well
  4. Pour onto preheated griddle and cook until golden brown
  5. Serve with your favorite syrup and opt to add berries! Enjoy!

Fall Salad for Two

There is nothing like fresh raw vegetables to make your body feel alive, happy and well. Last night we share a delectable fall salad for two with all the right fixins'. Fresh organic romaine lettuce, a few leafs of chard and amaranth from the garden, some raw onion and garlic for a healthy immune system, royal purple cabbage, a small tomato, jalapeño and cucumber topped with a sprinkle of raisins and cashews.

Raw onions, really? Yes please! I love the flavor and not to mention the health benefits.

Not only do they help regulate blood sugar, but they've also been known to reduce inflammations and infections, help with immunity, are heart healthy and much more! Sprinkle a few on your salad, enjoy on a veggie sandwich..'n more. Learn more here.

Simple Fall Salad
  • 3 leaves Romaine + few dark green leafs of your fav (kale/chard/spinach..)
  • 1/8-1/4 cup sweet onion - chopped
  • 2-3 cloves garlic - peeled and chopped
  • 1 small tomato - diced
  • 2 leaves cabbage - chopped
  • 1/2-1 jalapeño - chopped
  • 1/4" slice of cucumber - chopped
  • handful of raisins, cashews and jalapeño crisps (opt)

Directions:
  1. Prepare a bed of lettuce
  2. Top with ingredients opt to decorate with love or toss!
  3. Enjoy with favorite salad dressing and soak in the good health!

The Love Shack Shake

Each morning I wake to my soul mate blessed with love. We both love to start our day with a shake to fill our bodies with healthy, nutritious fuel. Add fruit, protein, dates n' water with a big dash of love and you get a Love Shack Shake fer 2.

Wholesome Ingredients:
  • 1/2 lb strawberries
  • 2 bananas
  • 1 peach
  • 2 scoops chocolate hemp protein powder
  • 6-7 dates
  • handful of almonds
  • 2 cups filtered water
Loving Prep:
  1. Add ingredients into blender
  2. Blend on med-high until smoothie consistency
  3. Pour into glasses, serves 2!
