Banana Split - 100% Vegan & Homemade - MUST HAVE RECIPE!

Summer is here and with it I bring a classic dessert that is worthy of your time. The Vegan Banana Split. Chocolate, strawberry and vanilla ice cream are covered in hot fudge, strawberry sauce, whipped "cream", peanuts and strawberries. It's a treat worth sharing and sure to make you and your loved ones extremely happy!!!

Here are the deets: I used my homemade vegan vanilla ice cream recipe that is made using only 5 ingredients and a blender. I heated it up in a saucepan until it thickened and just reached a simmer. I removed it from the heat and divided it into 3 mason jars with a little less in one for strawberry. For strawberry I added about a cup of strawberries,  blended it then poured it back in the jar. In the chocolate version, I added 1/4 cup of chocolate chunks/chips, let it melt for a minute or two and then stirred it. Once cool, I put plastic wrap on top and pressed it into the ice cream to avoid ice crystals. I then placed those in the fridge to cool completely, then froze them overnight. The next day I made the stawberry sauce, hot fudge and whipped "cream", chopped the nuts. Before making the whipped "cream" I put the ice cream in the fridge for about 10 minutes, then the counter to defrost for 20 minutes. Then I made my big station and assembled. You could have a party with a big banana split station, how fun!!

Whipped Cream? I made aquawhip! ;) Aquafaba is the juice from a can of chickpeas or making chickpeas at home. Use that with 1/8 tsp of cream of tartar, a splash of vanilla extract and sweetener to taste. The popular sugar in this is powdered but I used stevia and it was a-okay for a sugar-free version. Whip with a handheld mixer for 10-15 minutes until soft to semi-stiff peaks form. You could also use coconut cream, love that stuff. Enjoy!

Ingredients:
1 Banana - Sliced Lengthwise
1 Scoop Each: Vegan Chocolate, Strawberry, Vanilla Ice Cream
2 Tbsp Hot Fudge
2 Tbsp Strawberry Sauce
2 Tbsp Pineapple Sauce (traditional) Chocolate (featured)
3 Tbsp Whipped "Cream"
1 Tbsp Chopped Peanuts 
3 Cherries (traditional) or 3 Strawberries (featured)

​Peaceful Preparation:
Slice the banana lengthwise. Place it in a oval shape bowl.
Add one scoop of vegan chocolate ice cream, strawberry ice cream and vanilla ice cream.
Drizzle 2 tbsp of hot fudge on the chocolate ice cream, 2 tbsp of strawberry sauce on the strawberry ice cream, 2 tbsp of pineapple or more hot fudge on the vanilla ice cream. Add whipped "cream" and chopped peanuts, top with cherries or strawberries. DIG IN!!!

HOT FUDGE:
​
1/3 Cup Dairy Free Milk or Cream (Soy Milk, Coconut Milk or Almond Milk)
1/4 Cup Syrup (Maple, Agave, Brown Rice, Coconut Nectar...)
2 Tbsp Cacao Powder
1/4 Cup Vegan Chocolate Chunks or Chips 
1 Tbsp Coconut Oil (Oil-Free: Coconut Butter, Seed or Nut Butter)
1/8 tsp Sea Salt
1/2 tsp Pure Vanilla Extract 

Peaceful Preparation:
  1. Combine everything but the vanilla extract in a small saucepan, the dairy free milk, syrup, cacao powder, chocolate chunks/chips, coconut oil or oil-free replacement and salt. 
  2. Cook for 5 minutes, stirring frequently. Add the vanilla extract and cool. 
  3. Thickens as it cools. Much thicker after being refrigerated. Store in the fridge, reheat as desired. 

Strawberry Sauce
1 1/2 Strawberries (Sliced without the stem, fresh or frozen)

2 Tbsp Sweetener of Choice (Maple Syrup, Agave Syrup, Coconut Sugar...)
OPT: 1 Tbsp Coconut Oil or Coconut Butter

Peaceful Preparation:
Heat in a small saucepan for 5-7 minutes, stirring frequently. Once thickens, remove from heat. Will thicken as it cools. You can blend all of it, 1/2 of it or leave it chunky. Replace strawberries with pineapple to make the pineapple sauce. 

Aquawhip
Liquid from 1 can ChickPeas 
1/8 tsp Cream of Tartar
Splash of Pure Vanilla Extract 
Sweeten to taste as desired (I used stevia)

Peaceful Preparation:
Whip with a handheld mixer for 15 minutes or until soft to semi stiff peaks form. Use within 20 to 30 minutes.
