Making your own V8 Vegetable Juice is so empowering! We call it V10 as we added a couple extra vegetables. Simply blend, heat and drink hot (our favorite) or cold. Delicious, incredibly healing, cleansing and nutritious. We cannot get enough and will even drink it for breakfast. My husband is such a humongous fan even preferring it to a can of V8. You literally drink an entire blender full of vegetables. Spinach, parsley, celery, onion, garlic, beet, carrot, tomatoes, lime and bell pepper are combined together harmoniously. We leave the pulp for added health but straining yields perfect juice-like results, both are wonderful.

Prep Time: 15-20 Minutes | Cook Time: 20 Minutes | Servings: 4 

Ingredients:
  • 6 Roma Tomatoes or 4 Cups
  • 1/4 Large Green Bell Pepper - Chopped
  • 2/3 Large Onion - Chopped
  • 1 Garlic Clove - Peeled & Sliced in Half
  • 1 Carrot - Peeled & Sliced 
  • 6 Large Spinach Leaves or 2 Cups
  • 4 Sprigs of Parsley
  • 1 Lime - Juiced
  • 1/2 Beet - Peeled & Sliced in Half
  • 1/2 Cup Chopped Celery
  • 1 tsp Black Pepper
  • Salt to Taste
  • OPT: 1-2 tsp Hot Sauce
  • 4 2/3 Cups Water

​Directions:
  1. Combine 1/2 of the ingredients in your blender. Blend on Soup Setting, 90 seconds on high. 
  2. Pour into a large pot. Blend the other 1/2 of the ingredients for 90 seconds on high, add to pot. Place the heat on high and bring to a boil.
  3. Reduce heat to low and simmer for 15-20 minutes.
  4. Scoop off any unwanted foam on the top. Pour into your favorite mug and serve hot! You can also cool, refrigerate and enjoy cold. 

​Notes:
  • Use a cheesecloth before heating to remove pulp, this will result in a more traditional V8 Vegetable Juice. Enjoy hot or cold. 
  • Use your favorite greens instead of spinach. Use your favorite bell pepper.

Sweet Potato Latte + Video

Enjoy your vegetables in the morning with a quick + easy sweet potato latte! With only 5 ingredients you can make a sweet foaming latte and feel like you went out to a Coffee Shop all in the comfort of your home. I love how easy this recipe is and how good it is for you! Watch the 2 minute video or see below for the simple recipe. My husband thought it was the perfect amount of sweet and very delicious, I hope you do too!

Ingredients:
  • 1/2 Batch Strong Hot Coffee or Desired Shot(s) of Espresso
  • 2 Cups Dairy Free Milk (I used Almond, imagine coconut! Opt to save foam for decoration)
  • 2 Tbsp. Agave
  • 1/4 Cup Mashed Sweet Potato (cooked)
  • 1 tsp Cinnamon

Peaceful Preparation:
  1. Make a fresh strong batch of coffee, half the amount is okay as little is used.
  2. Add the agave, mashed sweet potato and cinnamon in a blender.
  3. Heat the dairy free milk in a pot over low heat until steaming hot yet removing from heat before boiling or simmering.
  4. Pour the dairy free milk into the blender with the other ingredients. Blend on Juice setting or high for 50 seconds until very foamy and frothy.
  5. Pour the hot coffee or shots of espresso in your coffee cup. I fill each cup a little less than 1/2 full. Pour the foaming sweet potato mixture on top. Opt to add the foam from the fresh almond or cashew milk if desired for added color. Sometimes I draw fun shapes, today I just tossed it on top. Serve hot and enjoy this delicious and sweet coffee treat!

Berry Lime Infused Water

Watermelon, mixed berries, lime, a dash of stevia and water create a refreshing and healthy drink! We enjoyed this beauty before our walk and we both loved it! What a fun way to drink water. It reminded me of a berry limeade but super healthy!

Plus it's really easy to make!

Ingredients
  • 2 limes, quartered
  • 1 cup frozen berries
  • 1 cups frozen watermelon
  • 14 drops of stevia
  • 1 tsp stevia (opt) - we make a homemade extract
  • Ice cold water

Peaceful Preparation
  1. Squeeze the limes into the cups (1 lime each) and place the squeezed lime in the cup.
  2. Add the frozen berries, watermelon, stevia and water.
  3. Stir to mix well, gently pressing a few berries to release their color and flavor! Cheers!

Cinnamon Vanilla Latte

Ever since I discovered how to make a Pumpkin Spice Latte from the beautiful and talented Kathy Patalsky of Healthy.Happy.Life my husband and I have been hooked! With no pumpkin in our house and a serious hankering for a latte a new creation was born. A Cinnamon Vanilla Latte inspired by one of our favorite guilty pleasures we enjoy but this one is guilt-free, sugar-free and absolutely savory!

Ingredients:
  • 1/4 cup cashews
  • 2 cups filtered water
  • 2 cups coffee (hot)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 20 drops stevia extract

Directions:
  1. Blend the cashews and water in a blender for 60 seconds to create cashew milk. Scoop the foam off and set foam aside. (You could skip this step and use 2 cups of non-dairy milk, I like to make it fresh so I can have fresh foam to create designs on top!)
  2. Pour the milk through a strainer and into a pot. Heat the cashew milk on the stove over low to med-low heat and whisk. Heat throughout until hot.
  3. Place 1 tsp vanilla and 1 tsp cinnamon in your blender. Add the hot milk and hot coffee in your blender and blend for 60 seconds.
  4. You will have a frothy beautiful latte! Pour into two cups, use the foam from the cashew milk to draw a heart or anything else your heart desires!! ENJOY!

Note:  I have a Blendtec that can handle hot liquids. It could be blended cool and then heated. I do it in this order for foam optimization. A handheld blender could also be used!

Homemade Cashew Milk

This recipe is a must try and a for sure keeper! Jerry and I typically make homemade almond milk but I thought I'd try cashew milk! Take raw cashews, add water, blend and you are done! How easy is that? It takes less than 5 minutes, has 2 ingredients and 2 steps! How fabulous!
 
It's really good by itself. It can be used as a replacement to coffee creamer and milk. Feel free to add your favorite flavoring and sweetener! Some of my favorite sweeteners are stevia, dates and agave!

Cashews are sometimes referred to as "Natures Vitamin Pill" and are best in there raw state. Cashews hold 5 grams of protein per ounce, are high in fiber, and have very high levels of the essential minerals such as iron, magnesium, phosphorus, zinc, copper and manganese! I knew I liked these for a reason, pass me some cashews please! :)


Tip: If you soak the cashews overnight, it will be even creamier!

Homemade Almond Milk

Almonds are boosting with health benefits. Jerry and I have been experimenting with homemade alternative to expensive buys at the grocery store! Almond milk is a winner! It doesn't get much easier than this.

Ingredients:

  • 1 Cup Raw Almonds
  • 4 Cups Water
  • Opt: 1 tsp hazelnut (or flavoring of choice)
  • Opt: 1 tsp agave or honey (or sweetener or choice)

Directions:
  1. Place almonds in blender (Blendtec / Vitamix - pulverizer)
  2. Add Water and sweetener.
  3. Blend on high for about 30 seconds until it forms a milk.
  4. Strain out the pulp. Save it and use it in recipes, refrigerate both. ;)

Enjoy milk in shakes, coffee, tea or whatever your heart desires!

Homemade Ginger Tea

Homemade ginger tea is the best! If you're not feeling well or would like a boost it's an easy way to go. Ginger is packed with vitamins and minerals. It is known to help aid in digestion, reduce inflammation, fight respiratory problems, improve blood flow, strengthen the immune system and help to relieve stress. Then add in lemon to aid in digestion, receive a vitamin c boost, aid in nutrient absorption, alkalinity, weight loss and more! A super powerful and healthy drink.

Ingredients:
  • Small Piece of ​Ginger - chopped fine (food processor works great!)
  • Lemon - freshly squeezed
  • Maple Syrup - 1 tbsp
  • Fresh herbs - opt

Directions:
  1. Place ginger in a tea strainer
  2. Add boiling water. Allow to steep covered for 5-10 minutes.
  3. Add a spoonful of syrup and a squeeze of lemon to taste. Opt: Serve w/fresh fruit.

Alternatively, bring the ginger and water to a boil. Add any herbs you like if interested. Strain, add lemon and syrup to taste. 

Ginger is spicy - add anywhere from a very small amount to a few large pieces if making a big pot.
