BBQ Black Bean Potato Burgers

Homemade BBQ Sauce is slathered on a Black Bean Potato Burger. Make it with or without gluten, pan-fry, bake or grill. My favorite is baked. I love a veggie burger, don't you? Get the recipe below. Mmm mmm good! These freeze exceptionally well so feel free to make a big batch.

Lentil Zucchini Burgers

Yesterday for lunch I made homemade Lentil Zucchini Burgers. They were hearty, healthy and packed with flavor. This recipe is a new favorite! I can't wait to try them again, maybe even replace the zucchini with mushrooms or add both! Oh yum.

As a vegan, I'm always looking to find new "meat" replacements that are made from plant-based ingredients and fortunately I've had wild success! Lentils work very well. I made this meal with love for my hubby Jerry. He has been diligently working on a new book of his, a project that has burned in his mind for 10 years, and finally submitted it for publishing. When his draft arrived yesterday he ran down the stairs like a child would on Christmas day! It was so cute! :) I couldn't help but make him a lunch to remember after all his hard work.

Here is a sneak peek. I'm so proud of him, I can't help but share! I know it's not a vegan cookbook but he does include a chapter with insights on food.

Back to food! If you want a delicious burger than give this recipe a try, it's worth it, trust me! To begin take 1/2 chopped onion and sauté for 1-2 minutes. Add 1 cup zucchini and 3 diced garlic cloves. Sauté with salt, pepper and thyme to taste for 3-5 min. Remove from heat. Place 1 cup pre-cooked lentils in a food processor and pulse leaving some lentils intact. Place in a large bowl with the zucchini mixture, add 1 tablespoon of soy sauce, 1 tsp fresh lemon juice and 1 cup of breadcrumbs. Mix well and form into patties.

Tip: I use the top of a mason jar to help form a circular shape and then flatten from there. They will smooth out as you bake them.

Add BBQ Sauce on top for added flavor! Bake for 20 minutes, flip and coat with BBQ sauce. Bake 15-20 minutes. Top with your favorites! I used mustard, sweet onion, fresh tomatoes, 1/2 of a jalapeño and a healthy drizzle of BBQ sauce.​

Proceed to top with another patty if you are very hungry!  (Note nutritional information reflects 1 patty)

Tip: Add "Egg" replacement for binding agent. I found this to be helpful. I used potato starch + cool water mixed well. Flax meal, Chia meal or Ener-G Egg Replacer would work fine as well.

JJ's Patties - Veggie Burgers packed with nutrition!

Veggie burgers are a staple in our home. I used to buy them at the store and then started experimenting with making them at home. I love making them because they are very forgiving plus it's really easy to mix up the ingredients and come up with many variations!

"JJ's Patties" were inspired with my step-son in mind, focusing on good digestion and high nutrition. The smell and taste are irresistible and Jerry and I can't help but eat one or two.  JJ will look at our plate with a look indicating "what do you think you are doing?" haha! Therefore...they are JJ's Patties!

Ingredients:
  • 1/2 cup flax meal
  • 1 1/2 cup warm water
  • 2 pckgs Tempeh (ensure gluten-free if allergic)
  • 4 carrots - peeled
  • 2 leaves chard - de-stem
  • 1 cup broccoli
  • 1 cup red cabbage
  • 2 cups kidney beans (pre-cooked)
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh parsley
  • 3/4 cup oregano
  • 1 onion (feel free to use 1/2)
  • 6 cloves garlic
  • 1 tsp cumin
  • Salt & Pepper to taste
  • 1/4 lemon - squeezed
Directions:
  1. Mix flax meal and warm water with fork. Set aside to form egg substitute.
  2. In a food processor chop the tempeh, vegetables, beans and fresh herbs.
  3. Pour the chopped ingredients into a large bowl. Add the egg substitute and kneed the mixture to form a dough mixture.
  4. Refrigerate for an hour +.
  5. Form a patty. Tip: I use the top to a mason jar to form a circular patty shape.
  6. Preheat oil in a pan or try oil free and preheat water or vegetable broth in a pan over medium-high heat.
  7. Once the pan is hot, add patties and cook for 5-10 minutes.
  8. Reduce heat to medium and cook until the bottom is nice and brown.
  9. Flip and cook for another 10 minutes+, until desired consistency.

I typically pre-cook all of the patties and then freeze the extras so I have them on hand for any occasion. Use your favorite toppings and throw it on a bun, lettuce or enjoy as is!

Sliced Red Onion
Sliced Tomato
Sliced Avocado
Sliced Jalapeno
Salt, pepper, red pepper flakes to taste

BBQ Tempeh "Cheese" Burgers

Last night we feasted on BBQ Tempeh "Cheese" burgers with all the fixin's. Served on top of a bed of lettuce with raw onion, jalapenos, pickles and fresh tomatoes from the garden. We enjoy these so much that I typically double the recipe

Ingredients:
  • 1 8 oz package tempeh - shredded
  • 2-3 tsp fresh herbs (Oregano, Sage, Parsley, Rosemary, Thyme) - chopped
  • 1 tsp garlic powder
  • 1/2 cup quinoa flour
  • 1/3 cup oats
  • 3 garlic cloves - chopped
  • 1/2 onion - finely chopped
  • 1 tbsp soy sauce
  • 2 tbsp kansas style BBQ sauce
  • dash of hot sauce / siracha sauce
  • 3-4 tbsp water 
  • oil for frying (I used sunflower)

I used the following toppings but always love to mix it up!
  • Pickled Jalapeno Slices
  • Red onion - sliced
  • Dill Pickle - sliced
  • Tomato - sliced
  • Handful of Veggie cheese - shredded
  • Handful of lettuce

Instructions:
  1. Mix the ingredients together in a bowl and knead for a few minutes to mix everything well.
  2. Shape patties by pressing into a metal ring. 
  3. Preheat oil over med-high heat, cook for 5 min or so each side. Add bbq sauce and veggie cheese to patty, cover with a lid to melt.

Black Bean Tempeh burger with Jalapeño’s

The Blackened "BB" Burger recipe I made in the past made such a large quantity I was able to freeze extra patties. I heated the patties and served them on a bed of lettuce with fresh vegetables and jalapenos. Quick, easy and delicious!

Ingredients:
  • 2 tbsp oil of choice (olive / sunflower etc)
  • 2 - 3 fresh or frozen "BB" patties - recipe below (I used frozen)
  • 2-3 slices organic lettuce
  • 1 organic tomato - sliced
  • 1 avocado - sliced
  • Jalapeno slices
  • 2-3 slices jalapeno almond cheese
  • 2 slices lemon
Preparation:
  1. Heat oil in skillet over med to med-high heat, add patties.
  2. Heat for 5 min + ea. side until brown / warm throughout
  3. Place on bed of lettuce and decorate. :) Enjoy!

From scratch:
Blackened "BB" Burger - Ingredients:
  • 2 Tempeh Patties - shredded
  • 2 tbsp bbq sauce & 2 tsp soy sauce
  • Small amount of fresh herbs or dry (same mix as # 3 above)
  • 2 Carrots
  • 3 garlic cloves
  • 8-9 pieces of broccoli
  • 1/2 green bell pepper (organic)
  • 2 Cups Black Beans (or 1 can)
  • 1tsp cumin, 1 tbps onion and garlic powder, 1 tsp sea salt and pepper.
  • 3/4 cup panko breadcrumbs
  • Handful organic spinach
  • 1 tomato sliced
  • 1 jalapeno sliced (or few pickled slices)
Blackened "BB" Burger - Directions:
  1. Grade, shred or crumble the tempeh. (I use a cheese grater) Place in a med-large mixing bowl.
  2. In a food processor, pulverize the carrot, garlic, broccoli and bell pepper.
  3. Combine the vegetables, sauce, spices, herbs and breadcrumbs together.
  4. Kneed & mix together 2-3 minutes.
  5. Heat olive or oil of choice over med to med-high heat. Cook until browned or blackened (to your preference.)
  6. Place on a bed of fresh organic lettuce, topped with jalapeno slices, jalapeno almond cheese,  organic tomatoes, avocado slices and a slice of lemon.

Blackened "BB" Burger with Homemade Wedge Potatoes

​Blackened Black Bean burger made with Tempeh and vegetables. This is a burger that will have you coming back for more and more! Plus it makes a healthy serving so you can plenty of leftovers or can share! 

Blackened "BB" Burger on a bed of organic spinach, tomatoes and homemade wedge potatoes smothered in fresh herbs and green onions.

Homemade Wedge Potatoes:
  1. 2-3 Russet Potatoes - cut into wedge slices
  2. Small bunch fresh green onions - sliced
  3. Herbs - Rosemary, thyme, oregano, parsley, basil to taste (Fresh if you have them or dry)
  4. Dash paprika, Onion powder, hefty amount of chili powder, TJ's South African Smoke Seasoning Blend or red chili flakes, garlic salt and or sea salt to taste.
  5. 2 tbsp Olive oil
Blackened "BB" Burger:
  1. 2 Tempeh Patties - shredded
  2. 2 tbsp bbq sauce & 2 tsp soy sauce
  3. Small amount of fresh herbs or dry (same mix as # 3 above)
  4. 2 Carrots 
  5. 3 garlic cloves
  6. 8-9 pieces of broccoli
  7. 1/2 green bell pepper (organic)
  8. 2 Cups Black Beans (or 1 can)
  9. 1tsp cumin, 1 tbps onion and garlic powder, 1 tsp sea salt and pepper. 
  10. 3/4 cup panko breadcrumbs
  11. Handful organic spinach
  12. 1 tomato sliced
  13. 1 jalapeno sliced (or few pickled slices)
Homemade Wedge Potatoes:
  1. Preheat oven to 400 degrees
  2. Prep potatoes and herbs, combine all of the ingredients in a zip lock bag and shake. Or in a bowel and mix to coat.
  3. Bake 20 minutes and flip, bake an additional 15-20 minutes 'til desired crispiness.
Blackened "BB" Burger:
  1. Grade, shred or crumble the tempeh. (I use a cheese grater) Place in a med-large mixing bowl.
  2. In a food processor, pulverize the carrot, garlic, broccoli and bell pepper.
  3. Combine the vegetables, sauce, spices, herbs and breadcrumbs together. 
  4. Kneed & mix together 2-3 minutes. 
  5. Heat olive or oil of choice over med to med-high heat. Cook until browned or blackened (to your preference.)
  6. Place on a bed of fresh organic spinach, topped with a few jalapeno slices and served with fresh organic tomatoes.

Vegan Low Cal "Burger" Delight!

Ingredients:
  • 2 tbsp (+) Olive Oil
  • 2-3 small potatoes
  • 1/2 red onion
  • 3 garlic cloves
  • 1/2 - 1 small head broccoli
  • 3 Tofurkey links
  • Season to taste with: Sea Salt, onion powder, garlic salt, lemon pepper.
  • 1 tbsp Trader Joe's Soyaki Sauce (Or a GF option)
  • Handful of soy cheese
  • 1/2 cup Panko bread crumbs
  • 2 Handfuls of sprouts
  • avocado - sliced
  • Organic Cherry Tomatoes
Preparation:
  1. Take the vegetables and process them in a food processor until very fine.
  2. Dice the Tofurkey links until very thin.
  3. Heat the oil over medium high heat in a skillet
  4. Add the potatoes, onion and garlic. Sate until the potatoes are brown and the onions are translucent.
  5. Add the broccoli and tofurkey. Season to taste, add the sauce.
  6. Add the cheese and panko bread crumbs for a binder.
  7. Add the sprouts (Recommended to cut first (I didn't, but will next time.)
  8. Stir often, cook until desired consistency.
  9. Place in shape of a burger and decorate!
