Mixed Berry Pie with Almond Crust - Vegan & Gluten Free!

There is nothing like a Mixed Berry Pie, it's a favorite in our home. I made this pie a few weeks back and thought I'd pull out the recipe with Thanksgiving in mind. The crust turned out incredible, thick, flaky n' tasty! Jerry and I couldn't keep our paws off it. I'll be making it again and again. Winter, spring, summer or fall all you'll have to do is call and I'll be there....... making a pie. :)​

Vegan Gluten-Free Pie CrustMakes 1 – 9-inch Pie Shell

Ingredients
  • ½ cup almonds (or favorite nut)
  • 3/4 cup gluten-free all-purpose flour
  • ¼ teaspoon sea salt
  • ½ cup coconut oil
  • ¼ cup gluten-free oats
  • Dash of All Spice and cinnamon
  • 3 to 5 tablespoons cold water

Instructions
1. Preheat oven to 400F
2. Add in almonds and gluten-free all-purpose flour in a food processor. Processing until a fine flour is formed.
3. Add sea salt and coconut oil. Process until combined.
4. Transfer mixture into a large bowl; add in gluten-free oats and three tablespoons of water. Combine mixture until it forms a dough, adding in more water if necessary.
5. Press dough evenly into a 9 inch pie pan.
6. Refrigerate dough for 15 + minutes.
7. Bake empty pie crust for 12 to 15 minutes, or until edges are golden brown.

Mixed Berry Pie Filling

Ingredients
  • 1 9 inch pie shell, baked
  • ½ cup sweetener (agave, coconut nectar, brown rice syrup)
  • 2 tablespoon arrowroot flour
  • 1 cup water
  • Pinch sea salt
  • 4 cups mixed berries, fresh or frozen (or your favorite, blueberries, cherries, blackberries etc)

Instructions
1. Combine the sweetener, arrowroot flour, water and sea salt. Stir until arrowroot flour dissolves, or shake in a small jar with a lid. I shook in a small jar and loved the results!
2. In a saucepan, add blueberries and arrowroot flour mixture. Heat over low-medium heat until the mixture has thickened and coats the back of a spoon.
3. Pour blueberries into prepared pie shell and refrigerate until completely filling sets, or freeze!

Tropical Blossom Cherry Banana Cream Pie - Raw & Vegan!

This dessert was inspired by Blossoming Lotus Vegan World-Fusion Cuisine cookbook. I have to share the story of how I stumbled upon this beautiful beloved cookbook.My husband spent time in Kauai, HI learning the art of Structural Integration, also known as Rolfing. I'll do another post or book possibly about that subject, for now we'll focus on the food. :) While in Kauai he would eat at the Blossoming Lotus Cafe, enjoying tantalizing meals. Years later when we met, I was creating vegan and vegetarian meals. He told me about the Blossoming Lotus Cafe and would even call me his Blossoming Lotus. I was working in corporate america at the time and the gal who sat in the cubicle behind me used to be a vegan. She knew I experimenting with the new lifestyle change and mentioned she had a book she no longer used. She brought it in and gave it to me as a beautiful gift. It was shocking to see it was none other than the Blossoming Lotus cookbook from Kauai! I told my soon to-be husband and cooked him a meal to remember! I made Ms. Austin's Acorn Squash with Wild Rice Pilaf covered in Avalon's Magic Mushroom Gravy! It was incredible. Saturday I was looking for a different, healthy yet tasty pie for dessert with some new friends. I decided to pull out this book and see what I could find. I saw the picture for the Dream Weaver's Live Fruit Pie with the Tropical Bliss Out Pie filling! I adapted it adding a big twist of "Christa" to it! To start, a healthy and wholesome live pie crust made from cashews, dates, spices and brown rice syrup!

Gluten-Free, Paleo, Raw & Vegan Pie Crust!
  • 4 cups cashews (or your favorite nut)
  • 1 1/2 cups dates (figs, raisins, apricots etc...be creative)
  • 1/2-1 tsp cinnamon powder
  • 1/8 tsp ginger powder
  • Pinch of cardamom, nutmeg, allspice and sea salt
  • 1-2 tbsp brown rice syrup (or your favorite: agave, maple syrup etc)

Loving Preparation:
  1. Place nuts in a food processor or high-speed blender (the Blendtec rocks!)
  2. Chop fine and add spices, chop to distribute
  3. Add dates and syrup. Combine until mixture balls up and sticks together.
  4. Press the mixture into a greased 9" pie pan or spring-form pan. Keep a bowl of water handy to keep fingers moist while pressing into pan. Place prepared pie into freezer.

Cherry Banana Cream Filling:
  • 3 cups mashed bananas
  • 1 cup cashews (soaked for 2+ hrs)
  • 3/4 cup pitted dates
  • 3/4 cup fruit (papaya, mango, mixed berries. I used fresh pitted WA cherries!)
  • 1 tbsp potato starch (or thickening agent such as corn  or arrowroot starch)
  • 2 tsp lemon juice, fresh squeezed
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • Dash of ginger powder

Loving Preparation:
  1. Place ingredients in a high-speed blender or food processor and process until smooth.
  2. Pour into prepared crust. Place in fridge for a cream pie and allow to set to become more firm.
  3. Cover with fresh and or dried fruits, nuts, carob chips, coconut flakes etc. Have fun and enjoy!

Opt: Freeze to enjoy a sensational frozen treat! Jerry says it's even better frozen!

Perfect Bar
  • 1/4 cup raw cashews
  • 1/4 cup raw almonds
  • 2 tbsp flax seeds
  • 1/2 cup dried pitted dates
  • 1/2 cup jumbo raisins
  • 2 tbsp homemade almond butter
  • 1 tbsp rice syrup
  • 1-2 tbsp filtered water 

Jerry Berry lce Cream ~ modified for Strawberry Surprise!

  • Handful raw almonds
  • 4 oz water
  • 3 c strawberries
  • 7 figs or so (or dates)
  • handful of jumbo raisins
  • 3/4 scoop SPIRU-TEAN protein powder (or your fav!)
Topping
  • Strawberries - 1 cup or so - sliced
  • 1 mango - sliced
  • 3 kiwi - sliced
  • 2 tbsp brown rice syrup or agave
Directions:
  1. Make the Perfect Bar and press into a greased pie or tart pan and place in freezer.
  2. Place prepared fruit in small bowl. Add brown rice syrup or agave, coat and set in fridge.
  3. Make the Strawberry Almond Ice Cream by placing ingredients into high speed blender in order above. Pulse and mash the sides down repeating as needed until a cold sludgy ice cream is formed.
  4. Pull out the prepared crust, decorate sides with strawberry slices.
  5. Pour Strawberry Almond Ice Cream over crust.
  6. Decorate with toppings.
  7. Place in freezer for at least 2 hours, let thaw just enough to cut into slices and enjoy!
