An explosion of flavors are layered together and wrapped tightly in dough then baked until golden brown. The aroma is amazing and the taste that much better. Get a slice of Stromboli.

One Bowl GF Oil-Free Flax Meal Pizza Crust

On Monday we made a flax meal pizza crust infused with herbs. I had leftover carrot mash from carrot juice and was unsure how to use it when I had a brilliant idea, to use it in the pizza as an oil replacement. I tried it and had glorious success. The idea was inspired from the baking gods and goddesses and I am thankful!

The dough was light, airy and easy to work with. I kneaded it with love so it would turn out very good for my husband. He had worked hard spreading his homemade compost around our new plants! I wanted to show my appreciation so I tried very hard to make this pizza to his liking!

Once kneaded I rolled the dough into a big plump ball that made my heart smile. It looked just right! I placed it on a pre-greased cookie sheet and pressed it into the shape of a pizza pie with a hearty crust. I baked the pizza for about 30 + minutes as I prepared homemade pizza sauce and toppings. My personal preference is to get the pizza crust brown around the edges and almost completely done to where the center pops back up vs. sinks. Then I add the sauce and toppings and bake for another 15 minutes give or take until done, slice and serve! I used to only bake it for 15 minutes but then had to bake the pizza for sometimes 40 + minutes waiting for the center to be done and not be soggy! This works for me and I hope it works for you!

This crust was dare I say almost perfect. It even formed a big bubble in the center as if it were from a pizza shop! There is no yeast, oil, sugar or refined flours here only really healthy ingredients so you can enjoy more than one slice and still feel great! :)

To make this delicious pizza pie you will need:
  • 2 cups flax meal
  • 1/2 cup warm water
  • 3/4 cup carrot pulp (from carrot juice)
  • 3 cloves garlic - minced
  • 1/2 tsp salt
  • Dash: Red pepper flakes, oregano, rosemary, basil, sage and pepper.
  • Opt: I used a sprinkle of Trader Joe's Dukkah Blend which is a mixture of almonds, sesame seeds, fennel seeds, coriander, anise seeds and salt

Directions:
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Coat a pan with olive oil (or line with parchment paper)
  3. Combine the flax meal and warm water in a large bowl, mix well. Add the balance of the ingredients and stir to combine.
  4. Roll up your sleeves and begin working the dough, kneading for 1-2 minutes until completely worked together. I find getting my hands wet first and along the way helps.
  5. Roll the dough into a ball, place it in the center of your pan and begin to form your pizza. I like to leave a high edge for a thick crust!
  6. Bake for 30 minutes until it is almost completely done. While it is baking prepare your sauce and toppings.
  7. Pull it out of the oven, top with sauce and your favorite toppings and bake for another 10-15+ minutes until done. Serve hot and enjoy!!!

CC's Homemade Pizza Sauce:
  • 1/2 cup finely chopped red onion
  • 2 tbsp minced garlic
  • 1 tbsp finely chopped jalapeno (optional)
  • 1 cup tomato puree
  • 1/2 tsp salt and pepper
  • Pinch of red pepper flakes
  • 2 tbsp oregano and 2 tbsp basil

Directions:
  1. Saute the onions, garlic and jalapenos in 1-2 tbsp of water until soft.
  2. Add the balance of the ingredients and simmer on low, heating throughout, while the pizza is cooking.

Tuscan Summer Dream - Homemade Pizza

I absolutely love pizza. It ranks very high on my list of comfort foods. We enjoyed a delicious homemade pizza with homemade sauce at our friends house the other night. I ate as much as I could but it was so good I couldn’t help but crave more a few days later. I found myself in the kitchen whipping up some dough.

Double the recipe for a bigger pizza pie!

Gluten-Free Oat Pizza Dough:
  • 2 cups gluten free flour
  • Pinch of xanthum gum
  • 1 tsp italian seasoning (second round I used oregano, parley & sage)
  • 1/2 tsp garlic salt
  • 1 tsp fennel seed
  • 1/2 - 1 1/2 tsp red pepper flakes (depending on how spicy you like it)
  • 3 garlic cloves - minced
  • 1/3 cup grapeseed oil (or olive)
  • 1/3 - 1/2 cup or less ice cold water
  • Olive oil spray or a drizzle to grease pan
Prep:
  1. Pre-heat the oven to 400 degrees F
  2. Mix dry ingredients together either by hand or in blender
  3. Add oil and work into the flour, until combined
  4. Slowly add 1 tbsp of water at a time, working the dough with your hands (with love), add flour if the dough is too sticky or water if too dry. Knead the dough and give it some love punches.
  5. Ball up the dough, place it on a pre-greased pizza stone or on a baking sheet lined with parchment paper. Bake for 20 minutes.
  6. Prep your favorite toppings. Top and bake for 7 minutes (5-10) until cheese melts. Serve hot and enjoy the comforting and flavorful meal!

Toppings I used?
  • 1/4 red onion - sliced and diced
  • 3 cloves garlic - peeled and chopped finely
  • 1 large Heirloom Purple Cherokee tomato (Thanks to our friend who shared!!)
  • Handful of fresh herbs (Oregano, Sage, Basil & Thyme)
  • Garlic salt, fresh ground black pepper and red pepper flakes to taste
  • Drizzle of olive oil and balsamic vinegar
  • 1 Tofurkey Italian sausage link - sliced lengthwise into 6 pieces and then sliced fine into chunks
  • 1/2 cup vegan mozzarella cheese (I used Trader Joe's brand)

Super-grain Quinoa Pizza Crust

I've always loved pizza but don't always like the way I feel after eating it. I decided to create a gluten free crust with out yeast or oil. The secret? The magical zucchini! The zucchini is the secret as it locks in the moisture. This pizza crust is a great starter for many fun creations. It's super quick and easy! Plus it will leave you filling full, satisfied and recharged!

Fun insight: Quinoa dates back thousands of years ago. It "was the gold of the Incas" and is a complete protein rich in all 9 essential amino acids with twice as much fiber as other grains. Not only that but it's high in iron, magnesium, manganese, lysine and B2! Every time I eat quinoa my body feels incredibly satisfied. I can instantly feel the benefits and it always leaves me coming back for more!

Prep time: 10 minutes  Cook Time: 25 minutes  Total Time: 35 minutes

Ingredients:
  • 1 shredded zucchini
  • 2 cups quinoa flour (ground quinoa)
  • 1/2 cup water
  • 1/2 tsp garlic salt
  • 3 cloves garlic
  • Dash of: Oregano, thyme, rosemary, basil, fennel, cumin, pepper and red pepper flakes. 
Directions: 
  1. Preheat oven to 375 degrees. Coat baking sheet or pizza stone with olive oil.
  2. Mix everything together in a large bowl until evenly combined. Kneed the dough.
  3. Place onto prepared pan or stone.
  4. Bake for 10 minutes or until edges start to brown.
  5. Prepare toppings while in oven 
  6. Remove and place favorite toppings on pizza (have fun!)
  7. Bake 10-15 minutes
Toppings I used?
  • 2 tomatoes sliced
  • 3 slices red onion
  • whole basil leaves
  • dash of garlic salt, pepper, oregano, rosemary and red pepper flakes. 
  • Opt for oil free or add a tiny drizzle of olive oil and balsamic vinaigrette.

See the heart? I picked fresh basil leaves from the garden and noticed the beautiful surprise upon cleaning the leaves. It looks like a critter ate it's heart out - literally! :)

Vegan Pizza - My Way!

Last night I made the most amazing homemade pizza. The house smelled like a pizza parlor, I opened the bedroom door so Jerry could smell the scent wafting in. The crust was to die for, I said "mmmm" so many times he looked at me funny. ;) The recipe made 2 pizzas, I was able to freeze the smaller one as this one looked too good!

Pizza Dough: 
  • 1 cup + 1 tsp water
  • 2 tsbp olive oil
  • 1 tsp sea salt
  • 3 cup flour (1 1/2 white and 1 1/2 wheat)
  • 2 tsp agave
  • 2 tsp yeast
  • 2 tsp cornmeal
  • 2 tsp basil, oregano, Italian seasoning, garlic salt
  • Hefty dash of garlic powder and onion powder
  • 1 tsp rosemary
Preparation:
  1. Add ingredients in the order listed above into your bread machine, select dough setting.
  2. Wait 1 hour 20 minutes
  3. Place in warm place (oven at lowest temp) in oiled pan for 30 minutes
  4. Lightly oil pizza pan or whatever pan you have available. (I used a cookie sheet. haha)
  5. Lightly coat dough with flour.
  6. Shape to desired size & place onto oiled pan. (Flip in air like a pizza man - have some fun!)
Pizza Toppings:
  • Olive Oil
  • 2 Tofurkey links - Diced
  • Garlic Salt, Garlic Powder and onion powder and red pepper flakes.
  • BBQ sauce mixed with sriracha chili garlic sauce
  • Soy Cheese - Shredded
  • 4-6 basil leaves - chopped
  • 1/2 onion - diced
  • 4 garlic cloves - diced
  • 1 1/2 green organic bell pepper - diced
  • 1 can black olives - sliced
  • artichoke hearts - handful
  • Jalepeno slices - pickled (if you have them)
  • Sun dried tomatoes - handful
Preparation: 
  1. Preheat olive oil in skillet over med-high heat
  2. Pan fry Tofurkey links until crispy brown. Set aside.
Once dough is ready:
  1. Preheat oven to 425 degrees
  2. Spread some olive oil on the dough and sprinkle with seasonings above.
  3. Add cheese, Tofurkey and the balance of the ingredients.
  4. Cook 25 + minutes until crust is golden brown and cheese is melted.
