Imagine a fresh gluten-free flatbread that won't weigh you down yet is still fluffy and delicious, topped with dijon mustard, tahini lime dressing, grilled zucchini, meaty mushrooms, grilled bell peppers, caramelized onions, creamy avocado, crunchy cucumber, a touch of salt, more dressing, lettuce, tomato, sprouts, a tiny more dressing and lid on top. Take a big bite and you get the flavor of the smoky charred grilled vegetables, juicy tomato, creamy avocado, fresh and crisp vegetables with the tangy tahini lime dressing. It is a party in your mouth!

PB&J - 100% Homemade, Gluten-free & Vegan

Sometimes there is nothing more comforting than a PB&J! It brings me right back to being a kid and fond memories. Those memories extend through out my life. Is it true for you? My husband is a huge fan and I knew he'd be tickled if I made him one. With homemade oat bread, pecan butter and strawberry jam, satisfaction was found!!

Oats and water plus a few other ingredients are all that will be needed to whip up a loaf of bread. It's not the fanciest loaf but it's warm, hot, gluten-free bread that works great as sandwich bread. Spread some nut butter and jam and you are eating few ingredients, all of which are healthy for you! No preservatives here, no additives, sugar, dairy, oil or gluten just 100% healthy ingredients to create a yummy sandwich!

For the bread:
  • 3 tbsp flax meal
  • 1/2 cup + 1 tbsp warm water
  • 3 cups oat flour *Certified gluten free
  • 2 tbsp baking powder
  • 1 tsp sea salt
  • 1 & 1/2 cups water
  • Opt: 1/3 Cup Agave 

Top with:
  • Handful of gluten free oats

Directions:
  1. Pre-heat oven to 375 degrees F.
  2. Mix flax meal with 1/2 cup + 1 tbsp warm water and let sit while prepping the balance.
  3. Combine dry ingredients in a large bowl and mix together.
  4. Combine the congealed flax mixture to 1 1/2 cups of water and agave if using. Whisk until mixed together.
  5. Add the wet ingredients to the dry and mix until thoroughly combined.
  6. Place in greased and floured 9″ x 5″ loaf pan
  7. Bake for approximately 50+ minutes, until a knife comes out clean. Turn off oven and leave bread in oven to cool for about 30 minutes.  Slice and serve!

Add Your Favorite Nut Butter and Jam. We chose a pecan butter with Homemade Strawberry Chia Jam!

"This was absolutely delicious. This was only my 2nd try at using the bread machine first try did not come out so good. I used agave nectar, 1/3 cup. The bread was sweet and the texture was perfect. I am making it again, this time using molasses, because agave is so expensive. I highly recommend this recipe."

Homemade Oat Bread - Free of: Gluten, Yeast, Oil, Sugar, Nuts and Dairy!

This recipe is created with minimal effort and creates a wholesome loaf that is gluten-free, yeast-free, oil-free, sugar-free, nut-free and dairy-free! With minimalistic  ingredients used, almost anyone can bring their bread god or goddess out in them and enjoy the benefits! It has a mild flavor that could be enhanced with a little sweetener or spices for a different blend.

How does one make it? Simply mix the ingredients, pour into a loaf pan and bake. No kneading is required. No hours of labor. It takes about 15 minutes of preparation while the oven does the rest. Give it an hour or more to bake and you'll be salivating waiting for that warm fresh bread to come out of the oven so you can smother it in your favorite spread. At least, that was my experience! :)

How will you enjoy it? We made a PB&J! Technically it was an AB&J as we used almond butter but PB&J has such a better ring  to it and brings back childhood memories! My husband LOVES and I mean LOVES a PB&J smothered in jam. I made homemade almond butter and jam for a healthy and satisfying sandwich!

Ingredients:
  • 3 cups oat flour *Certified gluten free (or preferred gluten free flour)
  • 1 & 1/2 cups water

  • 3 tbsp ground chia seeds (or flax meal)
  • 9 tbsp warm water = 1/2 cup + 1 tbsp water
  • + Handful of gluten free oats to top

Loving Preparation:
  1. Pre-heat oven to 375 degrees F.
  2. Mix ground chia with the 9 tbsp warm water and set aside to create a vegan egg substitute.
  3. Combine dry ingredients in a large bowl and mix together.
  4. Combine the congealed chia mixture to the balance of the wet ingredients and mix until well combined.
  5. Add the wet ingredients to the dry and mix well until combined.
  6. Place in greased and floured 9″ x 5″ loaf pan
  7. Bake for approximately 50+ minutes, until a knife comes out clean. Turn off oven and leave bread in oven to cool for about 30 minutes. Slice and serve!

Colossal Veggie Sandwich Supreme

The name says it all. This sandwich is GIGANTIC! I dare you to make it and try to put your mouth around it! Somehow, I managed and ate it down quite readily. I typically try to keep things in our home gluten-free, yeast free etc. but sometimes you have to splurge! I picked up a small sourdough baguette, sliced that bad boy open and couldn't help but load it with fresh vegetables.

I started with Miso Mayo - SO good! I picked it up at Whole Foods a while back, I just ran out and will be getting some more for sure!

Then I loaded it with baby spinach, red onions, cucumber, avocado, yellow bell pepper, tomatoes, basil, jalapenos and homegrown sprouts! I didn't stop there, I drizzled some extra virgin olive oil, balsamic vinaigrette and sprinkled some salt and pepper on top! Served with some organic popcorn in olive oil and sea salt.

Ingredients:
  • 1/2 sourdough baguette (I recommend a softer loaf)
  • Miso Mayo
  • Handful Spinach
  • Slice of Red Onion
  • 1/4 cucumber - sliced thin
  • yellow bell pepper - sliced thin
  • avocado - sliced thin
  • tomatoes - sliced thin
  • small handful fresh basil
  • 1 jalapeno (opt)
  • handful mung bean sprouts
  • Drizzle of olive oil & balsamic vinaigrette
  • To taste: Salt & pepper
Prep:
    1. Slice the loaf at an angle, slice open to form a bed for the veggies.
    2. Add miso mayo to taste or your favorite dressing.
    3. Add veggies in order. (I sliced mine using a mandolin - thanks to my sweet sister for the gift! Watch your fingers!)
    4. Drizzle with olive oil & balsamic vinaigrette, sprinkle with salt and pepper.
Serve with a napkin and dig in!

Vegan BBQ - Pulled Pork

My dad LOVES and I mean LOVES BBQ. I remember one of his favorites being pulled pork, smoked for hours until it falls apart. He loves the roadside stands wgith a smoker and a scent that will make you stop. Well dad and all other fellow BBQ lovers I have you covered with a satisfying vegan alternative!
 
The best part is Babe, Wilbur and little Miss Piggy are all spared! This pulled "pork" is made not form a pig but from JACKFRUIT! Say what? That's right, Jackfruit! It doesn't look like much at first, but have faith; it cooks into the most mouth watering meal. It's almost too good to be true
 
Jackfruit is a very large fruit mainly grown in tropical climates. I updated the pictures with a jackfruit tree we saw in Southern Mexico. I was so excited to see it at our hotel! Jackfruit is loaded with potassium, vitamin C, fiber, dietary fiber and fats and so much more.

Unless you live in a tropical environment and have some growing, how will you get some? I got mine at a local Asian market in CA and bought a can. I recommend a can for less processing. In some parts of the world you may have to order it if you don't have an Asian market or local supply.

Open the can, drain and rinse very well. I even soaked in water for a little bit to ensure to get rid of as much vinegar taste as possible. Once done cut the center piece, kind of like you would a pineapple!

Take the jackfruit and cover in dry rub. I mixed the spices together in a small bowl and then sprinkled to cover the jackfruit. Cook for about 5 minutes or so until it becomes tender.

 Add your favorite BBQ sauce and let it simmer for 30-60 minutes.

Place the "pork" a baking sheet and bake at 400 degrees for 15 minutes to gain a more meat like texture.​

Serve on your favorite bun. In this case I served with a fresh red bell pepper and avocado. Delicious!!! No extra seasoning or sauce required. Heck yah it's Vegan!

Want to make some? Here is how!

Ingredients:
  • 2 cans jackfruit in brine, drained and rinsed well with solid center pieces removed.
  • 1 red onion, minced
  • 5 garlic cloves, minced
  • Hamburger buns - or fresh veggies! (I used: 1 bell / 1 avocado)
Dry Rub:
  • 1/2 tsp + spicy red pepper flakes (I like it spicy - I used about 1 tsp)
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • dash of salt
  • dash of garlic powder
Sauce:
  • Favorite BBQ Sauce
  • Dash of Maple Syrup
 Directions:
  1. Mix together dry rub ingredients and toss over pre-rinsed and drained jackfruit. Place in medium pot over medium heat and cook for about 5 minutes, until it starts to become tender.
  2. Pour sauce over jackfruit and simmer.
  3. Meanwhile, sauté the onion and garlic until caramelized. Add to jackfruit mixture and continue to simmer for 30-60 minutes.
  4. Preheat the oven to 400 degrees. Line a cooking sheet with parchment paper and spray with a nonstick spray.
  5. Place simmered "pork" onto prepared cooking sheet and bake for 10-15 minutes. It will help create a more firm and chewy texture.
  6. Load up your favorite bun or serve with fresh veggies and dig in!

Tip: Ensure Hamburger Buns and BBQ Sauce are Gluten-Free if allergic to gluten.

Vegan Grilled "Cheese" Sandwich

Fall is here and nothing beats having a bowl of warm tomato soup served with a grilled "cheese" sandwich. I added a simple spinach salad to top it off. It's one of our favorites and makes for a very quick and easy vegan dinner!

Soup -
  • 4 cups tomato soup (I used 1 carton from Trader Joe's)
Heat soup on medium in a saucepan stirring frequently.

Sandwich - 
  • 4 pieces bread - buttered with earth balance spread 
  • Pepper-jack soy cheese
  1. Lightly grease a pan
  2. Place sandwich on pan (Bread, "cheese", bread) 
  3. Cook over medium heat until cheese melts. Cover with lid to help cheese melt.

Salad - 
  • 1 small handful of spinach
  • Few slices chopped onion
  • 1 tomato - sliced
  • 1/4 yellow bell pepper - sliced
  • Salt and pepper to taste
Prep and place on side of plate, serve with your favorite dressing.

The Ultimate Veggie Sandwich

I don't know why I've never made a veggie sandwich for Jerry and I. I finally did and boy did I go all out. It was unbelievably delicious. Homemade bread with soy cheese, a heaping pile of raw and grilled veggies served with your favorite sauce makes for a delectable treat! We devoured them instantly. :)

Ingredients:
  • 4 slices homemade wheat bread
  • 1/2 onion - Sliced
  • 1 organic green bell pepper sliced
  • 2-3 pieces organic red leaf lettuce, torn
  • 4 basil leaves
  • 2 organic off the vine tomatoes sliced
  • 1/4 cucumber sliced
  • pickled jalapenos
  • Trader Joe's Goddess dressing
  • Sriracha Garlic Chili sauce
  • Soy Shredded Cheese
  • Earth Balance Vegan Butter Spread
Preparation:
  1. Preheat griddle 350 degrees
  2. Spread Earth balance on outside of bread
  3. Place Soy Cheese on inside of bread
  4. Place sliced onions and peppers in grill
  5. Close griddle and grill until bread is crispy brown / veggies are tender
  6. Meanwhile, prepare your vegetables
  7. Once ready place spread of choice, and veggies on sandwich.
Makes 2 servings - Dig in! :)
