Homemade Gluten Free Crackers

Crisp, crunchy, flavorful crackers that are gluten-free. These Pecan Crackers Infused with Dill are incredible. Enjoy them in soup, with dip or as is. My husband is a huge fan! Made from whole food ingredients that provide a healthy boost of energy, enjoy!

Total Time: 30 Minutes | Prep Time: 15 Minutes | Cook Time: 12-15 Minutes | Yields: 28 Crackers

Ingredients:
  • 2 Cups    Pecans or Almonds for Almond Crackers
  • 2 Tbsp    Flax Meal
  • 1/4 Cup    Hot Filtered Water
  • 1 Tbsp Fresh    Dill (or 1 tsp dry)
  • 1/2 tsp (ea)    Salt, Pepper and Red Pepper Flakes
  • 1/4 tsp    Garlic Powder

Sprinkle with:
  • Sea Salt, Pepper and Red Pepper Flakes (Sometimes I add Garlic Powder).

Directions:
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Combine the flax meal with the water to form a thick paste, this acts as a egg replacement. You could also use chia meal.
  3. Place the pecans in a food processor, pulse until a flour forms.
  4. Pour the pecan flour in a bowl, mix the dill, salt, pepper, red pepper flakes and garlic powder until combined. Add the congealed flax mixture and mix together until well combined. Kneed together with love.
  5. Take 2 equal sized pieces of parchment paper or wax paper.
  6. Roll the dough into a ball. Place the ball in-between the cooking paper. Using a rolling pin, roll the dough out, until it is 1/8" thin.
  7. Use a ruler and pizza cutter to make 2" x 2" crackers. Sprinkle with seasoning. If using parchment paper, transfer to a baking sheet, carefully breaking apart once done. If using the wax paper, carefully place each cracker on a greased baking sheet using a spatula.
  8. Bake 12 minutes, until brown edges or desired consistency. As they cool they will crisp. Enjoy the fruits of your labor, impressive!

Garlic Hummus

It was a fun way to enjoy a delicious dip! We both LOVE hummus and it's been way too many moons since we last enjoyed some. We recently soaked and boiled chickpeas so it was the perfect occasion for a fresh batch of hummus. We couldn't help but enjoy every last bite.

The recipe hails from our Blendtec Cookbook with modifications for a garlic, herb and seed blend with red pepper flakes for a pinch of spice. I hope you enjoy it as much as we did!!

Vegola Granola Bars

Happy Friday! Today marks Vegan Mofo Day 5! It's not common for me to appear in your inbox daily but it's been kind of fun really. New recipes for us all to try, our freezer is full of go to treats, our bellies happy and our spirits high! They say sharing is caring after all.

Thousands of candles can be lighted from a single candle, and the life of the candle will not be shortened. Happiness never decreases by being shared.

For day 5 I wanted to create something sweet, healthy, wholesome, plant based yet kid and husband friendly. I opted for a vegan granola bar, or Vegola Granola Bar!

Thank you Jerry for the creative name! He has a way with words and is so much fun to live with. On our walks we like to identify what foods can be eaten. Fortunately we found mother earths sweetest gifts - DATES!

Like keeps getting sweeter, I have a quick snack for those "on the go" moments or even those lazy day recovery weekends.

I love to keep protein bars around for us. They are especially handy when working a 9-5. Convenient, a good source of nutrition and yummy!

With bananas, apples, oats, puffed amaranth, almonds, prunes and dates mixed within this wholesome bar you can feel good about eating and sharing them! Plus, they make the perfect Back To School Snack! :)

Loving Preparation:
  1. Preheat oven to 350 degrees Fahrenheit
  2. Mix together almond butter, mashed bananas and cinnamon.
  3. In a large bowl combine the dry ingredients.
  4. Chop the prunes and dates, or pulse in a food processor until chunky. Mix in with the dry ingredients, add the almond butter and use your hands to work together until mixed well.
  5. Cut the green apple into bite sized chunks and incorporate into the mixture.
  6. Place in a lightly oiled or parchment lined 8X8 or two loaf pans, pressing ingredients down tightly. Moisten hands with water to assist.
  7. Bake at 350 for 25-35 minutes, until the edges are golden brown.
  8. Let set for 15 minutes on a cooling rack and cut into 18 bars. Wet knife in-between to prevent sticking if needed.
  9. Wrap individually for on the go snacks, leave on the counter, place in fridge or even freeze for future snack-opportunities!

To keep the body in good health is a duty... otherwise we shall not be able to keep our mind strong and clear.

Homemade Oat Bread - Free of: Gluten, Yeast, Oil, Sugar, Nuts and Dairy!

This recipe is created with minimal effort and creates a wholesome loaf that is gluten-free, yeast-free, oil-free, sugar-free, nut-free and dairy-free! With minimalistic  ingredients used, almost anyone can bring their bread god or goddess out in them and enjoy the benefits! It has a mild flavor that could be enhanced with a little sweetener or spices for a different blend.

How does one make it? Simply mix the ingredients, pour into a loaf pan and bake. No kneading is required. No hours of labor. It takes about 15 minutes of preparation while the oven does the rest. Give it an hour or more to bake and you'll be salivating waiting for that warm fresh bread to come out of the oven so you can smother it in your favorite spread. At least, that was my experience! :)

How will you enjoy it? We made a PB&J! Technically it was an AB&J as we used almond butter but PB&J has such a better ring  to it and brings back childhood memories! My husband LOVES and I mean LOVES a PB&J smothered in jam. I made homemade almond butter and jam for a healthy and satisfying sandwich!

My husbands is featured on the left and mine is on the right, his had jam oozing out of it! :)

Ingredients:
  • 3 cups oat flour *Certified gluten free (or preferred gluten free flour)
  • 1 & 1/2 cups water
  • 2 tbsp baking powder
  • 1 tbsp agave
  • 1/2 tsp sea salt
  • 3 tbsp ground chia seeds (or flax meal)
  • 9 tbsp warm water = 1/2 cup + 1 tbsp water
  • + Handful of gluten free oats to top

Loving Preparation:
  1. Pre-heat oven to 375 degrees F.
  2. Mix ground chia with the 9 tbsp warm water and set aside to create a vegan egg substitute.
  3. Combine dry ingredients in a large bowl and mix together.
  4. Combine the congealed chia mixture to the balance of the wet ingredients and mix until well combined.
  5. Add the wet ingredients to the dry and mix well until combined.
  6. Place in greased and floured 9″ x 5″ loaf pan
  7. Bake for approximately 50+ minutes, until a knife comes out clean. Turn off oven and leave bread in oven to cool for about 30 minutes. Slice and serve!

2 Ingredient Banana Berry Blender Ice Cream and Popsicles!

Summer is here and with it brings sweet treats of ice cold ice cream and popsicles to cool off from the summer heat! On a hot  day you may find my eyes gazing towards the ice cream section with memories of refreshing sweet treats in the summer time. I'll check the ingredients and frown but remember I can make my own!

You won't need a lot of fancy equipment, not even an ice cream maker! Just a blender or a food processor and this dessert is a sweet possibility.

The secret? Frozen Bananas! My soul mate introduced me to these gems! I had never thought of freezing bananas and frankly didn't keep them around very much because they ripened so quickly.  When I started dating Jerry he said his favorite meal to start the day with was a frozen shake with frozen bananas, mixed berries and protein. It sounded healthy enough, I gave it a try and have been HOOKED every since! At first it was hard on the weekends....no pancakes? Waffles? You really don't want a homemade breakfast? "Nope, just a shake" and soon it became a very healthy habit we continue to follow to this day meaning 99% of the time you'll find frozen banana gems in our freezer.

Simply break the banana into pieces. Opt to add mixed berries using a 1:1 ratio and enjoy a superb treat!

Ingredients:
  • 2 Frozen Bananas - frozen in chunks
  • 1 cup Frozen Mixed Berries
Directions:
  1. Take 2 frozen bananas and place in a high speed blender or food processor. Process until it creates a smooth, creamy almost whipped ice cream.
  2. Then take 1 cup of mixed berries and pulse in a food processor until finely crumbled.
  3. Add the mixture to the bananas and pulse to combine, avoid over-processing otherwise you may end up with a smoothie! Serve immediately as ice cream with berries on top!
  4. Or pour mixture into a Popsicle mold, freeze and enjoy as a summer fun treat! To get the Popsicle out, I found a dash of warm water and a gentle squeeze did the trick.
It's as easier than pie!

Vegan Cream Cheese Filled Tomatoes with Spices and Green Onions!

Happy Friday and 1st day of August! Are you enjoying your summer? The other day Jerry and I were taking a walk with our hand weights by the ocean, we decided to go for a mid-day walk as opposed to our usual sunset. I desperately wanted to jump in, so we did just that! We set our weights on the sand and went in, clothes and all! We swam, laughed and floated. I especially loved the sensation of floating on my back with the gentle waves lapping beneath my body, I felt one with the waves. :0) It's moments like that, where we truly let our inhibitions go and have fun that I cherish the most. Have you enjoyed such moments?

We recently enjoyed a refreshing NEW moment in our home. I got to see my husband on TV for the first time and he got to BE on TV for the first time! Needless to say, we are having a VERY exciting day! My soul mate and husband Gerald Clark was featured on on a TV segment with TOPIC: UFO! He did sensational, I'm so proud of him!!! Watch this video and show your support for my husband! 
Once you're mind has explored new regions, your belly may want to as well! I've been trying to be more innovative in the kitchen and came up with a delicious treat. Tomatoes, Vegan Cream Cheese, Spices and Green Onions come together to create a tantalizing appetizer. Thick, rich, homemade cream cheese made from cashews, stuffed inside a ripe, juicy tomato with a fresh sprinkle of salt, pepper, and an herb and seed blend with green onions on top.

Cashew Cream Cheese
  • 2 cups cashews - Soaked for 4 + hours
  • 1 cup filtered water
  • Salt to taste (opt)
Directions:
  1. Blend Cashews with filtered water until very smooth, place in a open mouthed 1/2 gallon glass jar. Cover tightly with plastic wrap and secure with a rubber band. Cover with a towel and allow to sit in a warm place overnight.
  2. The next day dehydrate the "cheese" at 105 degrees for 6-8 hours until it begins to firm. Since it was so hot outside, we just placed the jar in the sunshine and it worked very nicely. You will have a nice thick, cream cheese like spread.

Tip: Feel free to add a little lime/lemon, apple cider vinegar to add more flavor plus any other seasoning you can dream up.

Now to create the masterpiece!

Vegan Cream Cheese Filled Tomatoes with Spices and Green Onions!
  • Small Ripe Tomatoes (Grape, Cherry, off the vine etc)
  • Cashew Cream Cheese
  • Green onions - diced
  • Salt and pepper to taste
  • Opt: Seed and herb mixture: I used my favorite nut and spice blend "DUKKAH" from Trader Joes. It contains a mixture of Almonds, Sesame Seeds, Fennel Seeds, Coriander, Anise Seeds and Kosher Salt and tastes sooooooo good!
Directions:
  1. Take small juicy ripe tomatoes, core the inside and prepare a shallow bed for the cream cheese.
  2. Take a spatula or spoon and fill the center of the tomato with the homemade cashew cream cheese.
  3. Top with salt, pepper and an optional nut and spice blend.
  4. Place Green onions on the side and/or on top.
  5. Wallah! Appetizers that are sure to please not only the eye, but the palette as well.

Avocado Crisp

Summer time brings forth big ripe delicious avocados. I go to a special store to pick out my avocados as I swear, they are extra creamy, extra large, and so flavorful you can eat them plain.

Here is a picture I took of one the other day, it fills my palm! I have a seed growing in jar right now as I dream of it becoming a tree.

These are so large you could probably opt just for the avocado for lunch but I decided to spice it up a bit and add a crisp!

I took a rice crisp, topped it with creamy avocado slices, a few slices of red onion, a slice or two of tomato, a drizzle of mustard, a dash of salt and sprinkle of red pepper flakes. Lunch was made and consumed within 10 minutes and we were back to work. :)

These make a quick and easy treat that is sure to please your taste buds!

What will you need?
  • 4 rice cakes
  • 1 avocado - sliced
  • 1/8 red onion - sliced
  • 1/4 tomato - sliced
  • Drizzle of brown spicy mustard
  • Dash of salt and red pepper flakes
  • Opt: Add a few drips of lemon or lime juice for a zing!

Assembly:
  • Place 2 rice cakes on each plate
  • Top with avocado slices, onion and tomato
  • Add a drizzle of mustard and season with salt and red pepper flakes! Grab a napkin and enjoy!

Dehydrated Fruit

One of our most favorite snacks would have to be dried fruit. It accompanies mixed nuts like no other and tastes so good! I've yearned to dehydrate my own fruit for a few years and now thanks to my wondrous husband I can use my Excaliber and dehydrate until my heart is content. A gift that keeps on giving!

This process is EMPOWERING, economical and healthy! One can preserve food, have ready to eat snacks on hand for those "on the go" moments or when you just want something easy and yummy to snack on. I love that I get to choose what is going into our bodies. We are eating less sulfates and added sugar. The next best thing will be picking it from the garden and then dehydrating it....ooh I can't wait!

Step One: Start with some fresh fruit!

Step 3: Turn it on to 135 degrees or 105 to opt for raw and go about your day as you normally would. If you are up for it take a moment to dance to Omar's Chocco for all the fine work you did!!!

After hours of dehydration the end results are SURE to please! The hardest part.....not eating it all!

Goddess Dip

Bring out your inner god or goddess with some healthy goddess dip made with whole-food ingredients that are completely vegan and gluten-free. It's so good for you your aura may even shine brighter after indulging. Cut up some fresh veggies, add some sweet potato chips and get to dipping! We love dip and can't seem to keep enough around. This is a great new recipe we both love! What a healthy snack or even a light meal! It's great to put out before dinner, for guests, for kids, for husbands...enjoy! :)​

Goddess Dip
  • 1 can chick peas
  • Fresh Basil
  • 1 lemon freshly squeezed & the grind
  • S&P to taste
  • Red Pepper Flakes to taste
  • 1/4 cup olive oil
  • 1 tbsp Goddess Dressing
  • 2 Cloves garlic
  • 1/4 cup sweet onion

Directions:
  1. Place all of the ingredients in a food processor except for the olive oil, pulse until combined
  2. Slowly add in the olive oil
  3. Pulse until creamy
  4. Place in bowl with a basil leaf on top, surround with fresh veggies and chips or pita bread!

That's a Wrap!

My husband Gerald Clark had a phenomenal show on Coast to Coast AM Radio Saturday discussing topics within his best-selling book "The Anunnaki of Nibiru: Mankind's Forgotten Creators, Enslavers, Destroyers, Saviors and Hidden Architects of the New World Order" and we've been buzzing around ever since! The feedback is sensational, if you haven't listened yet tune in!

In the midst of the flurry of fun activities that followed his successful show I made a trip to one my favorite stores Trader Joe's and picked up some delicious vegetables, fruit, nuts and few other items and was on my way. I opted to make something raw, quick, easy, delicious and nutritious for lunch.

I took a brown rice tortilla, spread spicy hummus on the bottom, added organic mixed greens, red onion, green bell pepper, a jalapeño, a pearl tomato, avocado, handful of chopped red cabbage and topped with Sriracha sauce and crushed sweet potato chips for an added crunch! We added a little dressing and dug in, it was finger licking good and left our bodies feeling incredible!!! We love the way raw veggies make us feel! Don't you?

Ingredients:
  • 2 Brown Rice Tortillas

  • 1 Pearl Tomato
  • 1 Avocado
  • 1/4 cup red onion - chopped
