Homemade Tomato Soup

Tomato soup is one my husbands absolute favorites. I often ask what he wants and he'll grin and say "tomato soup." I used to buy a can of tomato soup until I realized we were practically eating a can of GMO soup. Not so yummy. Then I started buying an organic tomato soup in a carton but realized there was milk in it. :( I found some without the milk and loved it but didn't love the price at the rate we were eating it.

It soon came to my attention that I had never tried to make tomato soup! So I gave it a try and not only is it quick and simple but it is lip smacking delicious. After eating a bowl I immediately feel better. I don't know what it is but it just makes my body feel alive! My body warms up instantly and my blood flow feels better. Now I ensure I have all the ingredients I need on hand so I can most always make a batch of tomato soup!

What do you need? 1 sweet onion, 2-5 cloves garlic (depending on your liking), 1 carrot, 1 stalk of celery, 1 can of diced organic tomatoes or a couple cups of chopped tomatoes will do as well. Add 1 cup of vegetable broth or water if you are out. Add salt and pepper and red pepper flakes to taste! My oh my what a taste sensation this is! Add parsley or basil for added flavor and health benefits. I've also made it without the celery and carrot and it was still sensational. Ideally I'd have organic heirloom tomatoes fresh picked from the garden but until then this will do just fine!

Ingredients:
  • 1 medium sized sweet onion - chopped
  • 2-5 garlic cloves - chopped
  • 1 carrot - chopped finely
  • 1 stalk of celery - chopped finely
  • 1 can of diced organic tomatoes + juice
  • 1 cup of vegetable stock (water if you're out)
  • OPT: 1/2 cup of nut milk for added creaminess
  • Salt and pepper to taste

Directions:
  1. Saute the onion and garlic in vegetable stock over medium high heat until translucent.
  2. Add the chopped carrot and celery and saute until soft.
  3. Add the tomatoes, vegetable stock and nut milk. Simmer on medium-low to low heat for 15-20 minutes. The longer it simmers the more flavorful it will be.
  4. Season with salt, pepper and red pepper flakes for an added kick and enjoy! Opt to add parsley or basil for garnish.

Or BLEND and have it SMOOTH!

OPT: Feel free to saute the onion in olive oil and add a little vegan butter when you add the milk. It's quite tasty although I typically make it without oil and butter for a healthier low-fat option.

CC's Veggie Miso Soup

The cold front this year has left it colder than normal, wouldn't you agree? Even for San Diego it's cold. However compared to other places it's hard to complain. We've been staying nice and toasty with homemade soup!

The other night I put on some music, started chopping and singing and before I knew it our place smelled incredible and Jerry was peaking over my shoulder to see if I was in need of a taste tester! I know it's coming along nicely when that happens. :)

In short order I was grilling up 2 grilled "Cheese" sandwiches and serving us seconds!  "OMG that was delicious" Jerry reports and the next day he claimed it was "even better today than a it was yesterday!" It's a really simple soup, a great use of ingredients, healthy, low cal, and incredibly good for you! Whip up a batch and dig in if you are inclined!!!

Ingredients:

  • 6 cups water (or veggie broth)
  • 1 carrot - sliced
  • 1 celery stalk - sliced
  • 1/2 small head of broccoli - torn into chunks
  • 3 cloves garlic - minced
  • 2 leafs cabbage - chopped
  • 1/2 can organic whole tomatoes
  • 3 stalks green onions - sliced
  • bunch of fresh cilantro - chopped
  • OPT: 1/3 lb organic tofu - cubed
  • 1 tsp garlic salt, pepper and red pepper flakes
  • 1/4 cup + Organic Miso

Directions:
  1. Simmer 6 cups of water (or stock) and sliced carrot, celery, broccoli and simmer 10 minutes.
  2. Add cabbage, tomatoes and garlic and simmer 5-10 minutes.
  3. Add green onions, cilantro and seasoning (Opt to add tofu as well) simmer 1-2 minutes.
  4. Remove from heat and dilute 1/4 cup organic miso into soup.

Serve with a grilled "cheese" gluten free sandwich and/or make a small salad!

Homemade Heart Healthy Soup

Crisp mornings and evenings are here and sometimes all you want is a warm bowl of soup to heat you up.  I recently whipped up some homemade hearty healthy vegetable soup that made you come back for more.

The soup is spicy, hearty, and healthy! It warms your body from the inside and instantly makes you feel satisfied from the array of vegetables, herbs and potatoes. It makes a large enough batch to share or you can have leftovers and heat it up for a healthy and easy meal throughout the week.

Ingredients:
  • 6 cups vegetable broth
  • 4 russet potatoes - quartered
  • 2 carrots - sliced
  • 1 onion - chopped
  • 2-3 jalapenos - chopped
  • 5 + cloves garlic - chopped
  • 2 celery sticks - chopped
  • 1 beet - diced
  • 3 leafs purple cabbage - chopped
  • 2 cups beet greens or favorite dark leafy green
  • 2 tsp cumin
  • Sea salt, pepper, red pepper flakes to taste
  • 1 tbsp (+) Italian Seasoning
  • 2 tsp cilantro
  • 1 tbsp Red Wine Vinegar
  • 3/4 tbsp Lemon Juice

Directions:
  1. In a large pot combine the broth, onion, garlic, carrots and potatoes.
  2. Cook over med-high heat until it comes to a boil.
  3. Reduce heat, cover and cook until potatoes are tender.
  4. Add the celery, beet, cabbage and seasoning and cook for another 10 minutes.
  5. Add the beet greens and heat throughout. Serve hot!

Healing Soup for Colds

Jerry wasn't feeling well yesterday so I made some soup to bring him to good health. Today he's already feeling much better!
 
Garlic, ginger, onions and jalapenos come together well to provide some serious healing action. Garlic acts as nature's antibiotic, ginger is a great digestion aid, onions help with congestion, jalapenos are high in vitamin C and help with congestion.
 
Take a hot bath with some essential oils and herbs afterwards with lots of rest and you'll be well on your way.

​Sore Throat? Pineapples contain anti-inflammatory properties that help reduce irritation and contain plenty of Vitamin C!

Soup:
  • 4 cups vegetable broth
  • 1 red onion diced
  • 6-8+ garlic cloves diced
  • 2-4" chunk of ginger diced
  • 4+ jalapenos sliced (or 1/4 cup pickled jalapenos, add juice for flavor and spice)
  • 1 carrot - diced
  • 1 red potato - diced
  • 1/2 cup fresh herbs sliced - (Bunch of Basil, Oregano, Thyme and Rosemary)
Smoothie:
  • 1 pineapple
  • 1 cup water (add extra dash if needed)
  • Stevia to sweeten (opt)
  • 6 ice cubes
Soup Directions:
  1. Combine ingredients together in large pot
  2. Cook on med to low heat for 20-30 minutes
  3. Serve hot
Smoothie Directions:
  1. Combine ingredients into Blender
  2. Blend until smoothie consistency (about 45 seconds)

Thai Tom Yum Soup

Lemon Grass has wonderful health benefits. If you want something to boost your immune system, make your mouth water, warm your body and leave you smiling, then try this soup! Thai food is always welcomed with a smile in our home. Bon Appetit!

Ingredients:
  • 4 cups Vegetable Broth
  • 3 stalks Lemon Grass (Health food / Asian market) - Lower portion, peeled, sliced and placed in food processor
  • 1 small piece ginger - food processor
  • 4 garlic cloves - minced
  • 1 red bell pepper - sliced
  • Opt: Jalapeno 
  • 1 large tomato
  • Opt: 1/2 can Coconut milk
  • handful of fresh herbs - sliced (Basil, Oregano, Rosemary & Parsley)
  • Garlic Salt and chili pepper - dash 
  • Sea Salt, Pepper - tsp
  • 2 tbsp Chili Garlic Sauce / Red Chili Flakes or Red Hot Chilis 
Preparation:
  • Place vegetable broth in large pot. 
  • Prepare Lemon Grass, place in pot with ginger. Boil 5 minutes over med-high heat. Place upper portion of stalks of lemon grass in pot for flavor / decoration only. Do not eat. ;)
  • Add minced garlic, chili sauce, red bell pepper, jalapenos, mushroom and simmer on low for 5 minutes.
  • Add tomato, spices and herbs. Serve or add Coconut milk heat throughout and serve.
  • Fresh herbs from the garden or herb box really make the flavor pop! This is our first jalapeno of the season! I picked it a little early...I couldn't wait! :0)

Potato Kale Soup with Broccoli

Cloudy weather makes me want soup. I'm a pansy - even if it's 60 degrees I want something to warm me up! This soup is healthy, nutritious, spicy and delicious! The leftovers are even better after it's had a chance to marinate.

Ingredients:
  • 1 container Hearty Vegetable Broth (or normal vegetable broth)
  • 1/2 container Low Sodium Vegetable broth
  • 1 lb small fingerlings potatoes - quartered
  • 4 stems celery - diced
  • 5 cloves garlic - diced
  • 1/2 onion - sliced
  • 3/4 - 1 head broccoli - torn into big chunks
  • 2 zucchini's - sliced
  • 1/2 soy longaniza spicy sausage - mashed between fingers
  • 1 - 2 cups organic chopped kale - stem removed
  • Season to taste with: Basil, Thyme, Garlic Salt, Oregano, Rosemary, Parsley, Pepper, Red pepper flakes.
Preparation:
  • Add ingredients in order into big pot over medium to medium high heat, stirring frequently for 20 plus minutes.
  • Lower heat, cover and simmer for 15 plus minutes, until potatoes are done. -Or-
  • If you have time, allow soup to cook over low heat for a longer period vs. using the higher heat.
Tip: If you don't have vegetable broth use water and allow the ingredients to simmer longer and use more spices. Be creative! :)
