Coconut Oatmeal Cookies from The China Study Cookbook + Giveaway

The China Study Cookbook Revised & Expanded Edition by LeAnn Campbell, PHD is a wonderful cookbook for your kitchen. I received my copy last week and absolutely fell in love with it. Each page is beautifully designed, the pictures are stunning the recipes are full of flavor and nutritious ingredients. I love her garden, her story, her path and am so grateful she's shared so many gems with us here in this book. The recipes are top notch! I cook in a similar way, so it resonated with me very deeply. Plant-based wholesome ingredients, flavor to boot, no lack of comfort and just good healthy food. 

I had the hardest time picking one recipe to feature. I had nearly 10 dialed in....

I was dreaming of Southwestern Calzones, Potato Rolls, Savory Southwestern Burritos, Pecan Ball Subs, Favorite Chili with Pasta, Thai Vegetable Curry, her Pies and more.... she’s got it going on!

Then I made two that weren't even on that list. First was the Coconut Corn Chowder. Now let me tell you.... this is good! Really good! Potatoes, corn and more. It's a huge bowl of comfort. If that weren't enough I had hankering for cookies. Gerald loves Oatmeal Cookies so that was my in. I made a batch and mmm mmm are they good.

I couldn't decide which to feature so I asked on my IG Story if they'd like the Coconut Corn Chowder or Coconut Oatmeal Cookies and they chose 100% cookies. Ask and receive!! 

I love the cookie dough, I love how the cookies puff and spread all at once. I love how healthy the cookies are! 2 or 3, why not? ;)

Picture & Recipe from "The China Study Cookbook"

​COCONUT OATMEAL COOKIES © 2018 by LeAnne Campbell 
MAKES 16 COOKIES
 
1 cup whole wheat flour
1 cup rolled oats
⅓ cup raw cane sugar
½ teaspoon baking soda
½ teaspoon baking powder
½ cup unsweetened shredded coconut
⅓ cup chopped nuts
1 cup raisins or other dried fruit
¾ cup unsweetened nondairy milk (rice, soy, almond, etc.)
⅓ cup applesauce
1 teaspoon vanilla extract

  1. Preheat oven to 350˚F.
  2. In a large bowl, whisk together flour, oats, sugar, baking soda, and baking powder. Add coconut, nuts, and dried fruit.
  3. In a separate bowl, whisk together milk, applesauce, and vanilla. Fold into dry ingredients.
  4. Drop by the tablespoon onto a nonstick baking sheet.
  5. Bake for 15 minutes, until brown. Let cool for 30 minutes, then store in a covered container.

My first experience eating plant based came from The China Study......I have a few of their first cookbooks too! I feel you’ve made a fine choice with these cookies... I’m looking forward to making them. That’ll be after I make another one of your recipes- your banana bread!!! Much love to you Christa!

Thoroughly enjoy Christa's style of cooking - her enthusiasm for the beauty of food and her approach to cooking - making it all seem possible. Now connecting all that to the great work of all the Campbells - another great cookbook spun from the great China Study .....that's hard to beat!

Excited - have had my sister in law, brother in law and their 3 kids move in with us due to unfortunate circumstances. They have very bad eating habits and trying to cook for everyone has been a challenge, ,this would make it easier all around. Thanks for the opportunity

I’ve heard a lot about the China Study but was wary as I didn’t know if there were mentions of animal cruelty, which I’m overly sensitive to. I’ve seen Forks Over Knives and have their cookbook and had no idea The China Study had their own too. I’ve been vegan for years for the animals and recently trying to be more WFPB no oil for my health - a win win for all :)

I know what you mean, the animal cruelty can be very hard to watch or see. :( The China Study is a great cookbook, highly recommend it, just don't read her goat story and you'll be ok. Congratulations on your success with being vegan for years and for the transition to WFPB diet! My best.

We love our WFPB eating. It's been fun (and sometimes challenging) to turn the same produce into several different tasting meals. But it's a great adventure into spices and tecnqiues! Always looking for cookbooks to help us on this journey....

That's wonderful you are enjoying the WFPB lifestyle! It can be quite an adventure for the taste buds will lots of new things to try, it can be challenging too for replacements. Especially if you toss out gluten and yeast lol, that makes bread making quite hard I find. :) This cookbook is a wonderful resource. Thanks for participating. <3

I just healed a major gallbladder issue without surgery. My new plant based diet is healing my entire body. I would love some more ideas that may also assist my family. A new cookbook would be wonderful!

These would be perfect for a quick morning when in a hurry. I've been wfpb for the past year and a half and am trying to transition my kids but it's a struggle to find things they want to eat....I know they'd eat these.
