Fagioli Soup | Vegan & GF | Sopa de Fagioli

Sometimes you want a no-fuss meal and you want it quick. This soup is a GO-TO of mine. I love the flavor, I love the protein, I love that you can add pasta or bread to make it heartier. I just love it all around! I hope you do too!

Fagioli Soup is full of flavor, full of life, hearty, warming and is very easy to come back for more. The flavor is reminiscent of a minestrone. I like to make mine easily in one pot, toss it in there, cook it and eat it. Simple as that. Add bread and or pasta to make it stick to your ribs more.

On a side note, this week was pretty magical! I got to spend time talking with Colleen Patrick-Goudreau of The Joyful Vegan which was a big step forward for me. I don't usually do interviews, it was fun to connect with a like-minded vegan in the space while overcoming fear and stepping out of my comfort zone. I also saw a client from Gravity Body Academy who received a session. It went really well and was fun! Just a reminder to try something different, stretch out of your comfort zone and who knows you may enjoy yourself. Now..onto that soup. You gotta try it. Recipe below. Enjoy my friends!

Fagioli Soup

Fagioli Soup is an Italian Soup that typically has Pasta and bold flavor offering a delicious comforting bowl to warm you up!

ingredients:

  • 1 Cup TVP Chunks
  • 1 White Onion, finely chopped
  • 2 Celery Stalks, Chopped
  • 2 Large Carrots, Cubed
  • 4 Cups Vegetable Broth
  • 2 Cups Water
  • 1/2 Cup Soaked Black Eyed Peas (or 1 Cup Cooked Kidney Beans)
  • 1 Can 14.5 oz Organic Diced Tomatoes (or fresh)
  • 3 Tbsp Tomato Paste
  • 2 Garlic Cloves, Minced
  • 1/2 Cup Fresh Herbs (Mix of Rosemary, Thyme, Oregano, Parsley)
  • 1 Cup Fresh Spinach, Chopped
  • 2-3 tsp Sea Salt ( to taste )
  • 1/4 tsp Ground Black Pepper
  • Opt: 1 Cup uncooked Pasta of choice 

instructions:

How to cook Fagioli Soup

Peaceful Preparation:
  1. Stovetop: Add everything to a large pot less the spinach. Use the pre-cooked kidney beans (or bean of choice) for faster results. Bring to a boil, reduce to simmer, cook with a lid for 25 minutes or until tender and flavorful. 
  2. Instant Pot: Add all of the ingredients to the pot less the spinach, put the lid on it. Put it on soup setting, if using precooked beans set it for 6 minutes. If using uncooked black eyed-peas then set it for 10-12 minutes. Let the device work its magic, release the steam once done. Remove the lid. Add the spinach.
  3. Pasta: Cook the pasta on the side as per the package and add to the soup at the same time you add the spinach or add to each bowl. 

NOTES:

Use your favorite vegetables, beans and pasta, use what you have on hand. Enjoy! You can freeze this soup (without the pasta in it). Store the soup and the pasta separately if saving for leftovers so the pasta doesn't absorb the liquid. Adapted from Valentina's Corner: https://valentinascorner.com/pasta-fagioli-recipe/

Fagioli Soup es una sopa italiana que típicamente tiene pasta y sabor audaz que ofrece un delicioso tazón reconfortante para calentarte!

ingredients:

  • 1 taza de soja texsurizada
  • 1 cebolla blanca, tallos de apio finamente picados
  • 2 Tallos de apio, picados
  • 2 Zanahorias grandes, en cubos
  • 4 tazas de caldo de verduras
  • 2 tazas de agua
  • 1/2 taza de guisantes de ojos negros empapados (o 1 taza de frijoles cocidos)
  • 1 lata 14.5 oz de tomates orgánicos cortados en cubos (o frescos)
  • 3 cucharadas de pasta de tomate
  • 2 dientes de ajo, picado
  • 1/2 taza de hierbas frescas (mezcla de romero, tomillo, orégano, perejil)
  • 1 taza de espinaca fresca, picada
  • 2-3 cucharadas de sal de mar (al gusto)
  • 1/4 cucharaditas de pimienta negra molida
  • Opt: 1 taza de pasta sin cocinar de elección

How to cook Sopa Fagioli

Preparación pacífica:
  1. Estufa: Añadir todo a una olla grande menos la espinaca. Utilice los frijoles precocinados (o el frijol de su elección) para obtener resultados más rápidos. Poner a hervir, reducir a fuego lento, cocinar con una tapa durante 25 minutos o hasta que esté tierno y sabroso.
  2. Instant Pot: Añadir todos los ingredientes a la olla menos la espinaca, poner la tapa en ella. Pónlaen en el ajuste de la sopa, si usa frijoles precocinados, pónganlo durante 6 minutos. Si usa guisantes de ojos negros sin cocinar, póntelo durante 10-12 minutos. Deje que el dispositivo trabaje su magia, libere el vapor una vez hecho. Retire la tapa. Añade la espinaca.
  3. Pasta: Cocine la pasta en el lado según el paquete y agregue a la sopa al mismo tiempo que agrega la espinaca o agregue a cada tazón.

NOTES:

Usa tus verduras, frijoles y pastas favoritos, usa lo que tengas a mano. ¡Disfrutar! Puede congelar esta sopa (sin la pasta en ella).
