How to Make Almond Yogurt - Dairy-Free

Almond Yogurt Recipe – ©artisticvegan.com
  • 1 Cup Almonds, Soaked Overnight
  • 3 Cups Filtered Water
  • 2 Tbsp Starch (Arrowroot/Preferred)
  • 1 to 3 Tbsp Syrup (to taste or without for plain)
  • 1 tsp guar gum
  • 1 Lime Squeezed or Lemon (up to two for increased tartness)
  • 1 tsp agar agar powder
  • 1/2 Cup Filtered Water
  • 2 Probiotic Capsules (Ensure Vegan, 40 Billion+ Cultures)
  • OPT: 1 ¼ tsp Pure Vanilla Extract for Vanilla 

Peaceful Preparation:
  1. Soak nuts overnight. Remove the skins by pressing on the wide end of the almond, the nut should pop right out. Proceed to remove the skin from all the almonds and place them in a blender.
  2. Blend the blanched almonds with 3 cups of filtered water.
  3. Strain with a sieve into a ceramic pot/favorite pot that has a tight fitting lid.
  4. Place the pot on a stove. Heat the homemade almond milk to 180°F. Stir occasionally. Use a lid to help. 
  5. While it's heating, mix 1/2 cup water with 1 tsp agar agar powder in a small saucepan over low heat, stir until dissolved and thickens slightly. About 3-5 minutes.
  6. Once the mixture reaches 180°F or right before boiling point, turn off the heat. Stir in the dissolved agar agar mixture.
  7. Mix the starch with a spoonful of the hot dairy free milk in a small dish. Mix it into the hot mixture, adding the guar gum as well. Mix or whisk very well to avoid clumps. You can also add sweetener here if you are using it. 
  8. Allow to cool to 110°F. Add the probiotic capsules and lime or lemon juice. Taste, adjust sourness if needed or sweetness. Opt to add vanilla or other flavors here.
  9. Place in a warm draft-free place such as the oven (turned off). Ferment overnight or 8 hours, going up to 24 hours for desired sourness.
  10. Transfer to a jar or jars and seal. Store in the fridge. Serve cold as desired. I love adding a little vanilla to ours, having it with hot berry compote and granola, yummy! 

NOTES:
  • Add your favorite flavorings and extracts for various flavors after it cools to 110”F. Add your favorite berries or seasonal fruit for various flavors.
  • For future batches, reserve 1/2 cup of the mixture and avoid the capsules, as now you have your "yogurt starter."

My names Angela Taylor. I'm a vegan artist as well and was wondering where we could go to see some of your art. I'd also love to look at your mothers art as well. :)
I did see some art in a video but do not know whose art that was?
I have a few questions about that as I have not run into many vegan artists. I do not know if this is the proper place for questions regarding art though. Is it ok to ask about art here?
I was wondering if you have made vegan tomato soup? I would love to find out how to make that. :)

Happy to meet you, thanks for writing and introducing yourself. That's wonderful you are a vegan artist! I haven't publicly shared my artwork, I'm very much a novice. Perhaps I could create a space for it. I've actually not painted in years, tear, I do feel the call to make time for it. My mothers artwork is sensational! She's very talented. She does want to create a space online, I'll let her know it's requested!! I have one or two of her paintings in my home I could take a picture of. I'm wondering if you would be able to skip the soaking almonds steps if you have unsweetened almond milk (store bought) at home already? I generally find it hard to use up all my milk within the 7-10 days you're supposed to be using it all in, but if I could make yogurt with it too that help me save money on buying yogurts.

Hi Erica,

I did try it with the unsweetened store bought almond milk to test it out and unfortunately it created more of a liquid thick cream than yogurt. It was great in smoothies and on top of oatmeal as a drizzle but wasn't thick like yogurt. Perhaps soaking them retains added nutrients, I'm not sure why it is different. You could probably skip taking the skin off, or use a towel to do it all at once, I found that helps a lot.

Hi Christa,
Thanks a million for this Yogurt Almond recipe. I just discovered it and so I am still to go and make it.
I have recently been told to stay away from all dairy products, so now I am searching for new recipes that replaces dairy ingredients.
Again, thank you and I look forward for any recipes that I can try without the dairy.
