Make your own vegan chicken in the comfort of your home with this easy recipe. Mix, steam, refrigerate and bake, fry, grill or use anywhere that calls for chicken.

Make this recipe with gluten for best results or gluten-free for chicken tenders. I had a really good idea to try adding oyster mushrooms to the mixture to give it that texture you often find in chicken, something that pulls apart, giving you the look and feel. The texture is amazing, the taste fantastic, the method easy, the results shocking. I even got asked what brand I bought when sharing on my story on social. It's not a brand! Vegan Chicken

Yield: 6 Wings, 2 Breasts

Make your own vegan chicken in the comfort of your home with this easy recipe. You can bake, fry, grill, saute or use anywhere that calls for chicken.

ingredients:

  • 140 Grams / 1 1/4 Cup Vital Wheat Gluten (GF See below)
  • 275 Grams Silken Firm Tofu
  • 225 Grams Oyster Mushrooms - Sliced
  • 3/4 tsp Garlic Powder
  • 2 tsp Vegetable Broth Powder
  • 1 Tbsp Onion Powder
  • 1/2 tsp Salt
  • 1/4 tsp Lemon Pepper
  • 1 Tbsp Dijon Mustard
  • 1 tsp Low Sodium Soy Sauce (omit or coconut aminos for soy-free)
  • 2 Tbsp Olive Oil (water for oil-free)
  • 1/4 Cup Water

instructions:

How to cook Vegan Chicken

  1. Combine everything but the mushrooms in a food processor or a bowl. Pulse together (or mix) until it forms a ball or comes together.
  2. Remove from the food processor and fold the mushrooms into the dough.
  3. Shape your vegan chicken into desired shapes, wings, breasts, etc.
  4. Place the vegan chicken wings in a lightly greased steaming basket, steam over a light simmer for 25 minutes, flipping halfway to cook evenly.
  5. Place on a cooling rack, cool completely.
  6. Transfer to an airtight container, opt to marinade at this step for more flavor, refrigerate for a minimum of one hour, the longer you go the firmer it will be, 4 hours to overnight is great. 
  7. Since the vegan chicken is already cooked from steaming, you can pan-fry quickly, grill, fry, air-fry, bake or prepare as you desire and it will come together quickly. Enjoy anyway you desire. 

NOTES:

You can lightly grease the vegan chicken if they are touching to prevent sticking, or if they stick, pull apart. Gluten-Free: Omit the vital wheat gluten, replace with 2 cups of gluten-free oat flour (oats ground into flour) and 1/2 cup amaranth flour if and as needed. Everything else is exactly the same process. These do require more baking / cooking time to fully cook the inside, fyi.

Would it be possible to make this without mushrooms? Can they be replaced with something?

Yes, you could replace it with jackfruit if you have that available. Otherwise you may omit it entirely it will still be delicious.

I am allergic to wheat so can't use wheat gluten. Is there a substitute that would work in place of it?

I would steam them for about 35 to 40 minutes, refrigerate and then bake before serving or pan-fry if you are happy with the consistency. Hope that helps!

I haven't made them without the tofu, but yes, I believe it would work, you may have to adjust the moisture.

Hi Sue, fantastic! I hope you love them! It depends what flavor you want, you really could go anyway you want. Orange flavored, soy, spicy, teriyaki, herbs and oil, as you wish! I did one with agave (or maple syrup), apple cider vinegar, red wine vinegar, soy sauce, olive oil, minced garlic and cayenne. Another was just hot sauce and olive oil or earth balance, adjust as desired. The other was soy sauce, agave, apple cider vinegar *or lemon/lime*, optional tiny bit of hot sauce. Hope that helps! Any marinade of your hearts desire will work here.

Thank you for writing and your kind feedback! No problem, you can replace it. I have only it made it with amaranth flour but I imagine another gluten-free flour would be fine here, maybe a soy or garbanzo flour? Maybe an all-purpose gluten free flour. I hope it works out well. Thank you! :)
