Must Have Kale Salad with 3 Ingredient Dressing

This kale salad has taken our lunches to the next level.  I am actually excited to get more kale and have another one of these salads. What makes me come back?  
The 3 ingredient dressing. It's so simple yet has the most amazing flavor. The kale salad is so good you could just have kale with this dressing, you can add onions, carrots, cucumbers and stop there or continue with cranberries and pumpkin seeds. I've even added candied ginger and sliced brazil nuts. In my recent What I Ate in a Day video we had this salad with black eyed peas, raisins, pumpkin seeds, chia seeds and puffed amaranth. No matter how plain or fancy you make it, it's good!! I often serve ours with hummus or guacamole as a side with some veggie chips. It's a simple meal that won't weigh you down mid-day. It is perfect for a lunch to pack and take with you, the kale is better when it is soft so it makes a good salad for on the go. Don't bail on kale if it's not your thing, this salad may change your mind! Enjoy!

Kale Salad:
1 Big Bunch of Organic Kale - De-stemmed and Chopped Fine
1 Carrot - Diced Fine
1/3 Red Onion - Diced Fine
1 Cucumber - Chopped
1/2 Cup Pumpkin Seeds
1/2 Cup Cranberries
Opt: Pinch of Candied Ginger
Opt: Handful of Sliced Brazil Nuts 

3 Ingredient Salad Dressing:
2 Tbsp Tamari or Soy Sauce
2 Tbsp Tahini
2 Tbsp Lemon Juice
  1. With a fork vigorously mix equal parts tamari, tahini and lemon juice in a small dish until completely mixed. Use 1 tbsp each for a small salad and increase for a larger salad. 
  2. Place the chopped kale in a large bowl. Pour the dressing on top. Massage the dressing into the kale until the leaves are very soft and fully coated. Rinse hands.
  3. Place the balance of the vegetables in the salad and mix well, you may use your favorite mix and/or what you have on hand. This is a basic example. Top with the pumpkin seeds, cranberries and other toppings if you are using them. You can also add beans, other seeds, nuts, dried fruit, fresh fruit or anything you desire. Serve with love and enjoy!
