Masa Cakes with Cabbage Slaw | Pupusas con Cortido | Tortas de Masa con Ensalada de Col

My sister, Janelle Sundby, recently came to visit and made my husband and I the most delicious dinner! Doesn't that look amazing?

Her go-to summer salad, pupusas and all the fixings to go with it. It was sensational and a meal to remember. Thank you Janelle! Big hugs! I loved it so much it inspired me to make it this week for you so you can make it at home. Plus I had the pleasure of sharing it with our local fam here in Mexico and they all loved it too and were asking how to make it. So lets not delay. Cortido / Cabbage Slaw:
5 Cups Cabbage – Thinly Shredded
1 Red Onion – Thinly Sliced
3 Cups Carrots – Thinly Sliced
2 Tbsp Chili Powder
1 Tbsp + 1 tsp Sea Salt
1 tsp Dried Oregano
1 Cup Water

Mix the ingredients in a big bowl, massage for 5-10 minutes. Let it sit for a few hours or make the night before and refrigerate. Serve 

Ingredients:
  • 2 Cup Mesaca Corn Masa Flour
  • 1 ½ Cups Water
  • 2 ½ Tbsp Vegetable Oil of Choice
  • ¼ tsp Salt
  • 1 Cup Refried Beans
  • Water & oil for hands as needed and sauteing.

Filling:
  • ½ Cup Refried Beans
  • 1/2 Onion – Chopped
  • 2 Cloves Garlic – Minced
  • 1 Poblano Pepper - Chopped

Peaceful Preparation: 
  1. Mix the corn flour and salt together. Add the water and oil and beans. Mix until it creates a smooth dough, cover and set aside. Make the filling.
  2. In a pan, add oil or vegetable broth, once hot add the onion and pepper. Cook for 5-10 minutes until nice and fragrant, add the garlic, cook another minute or two. Remove from heat and set aside.
  3. Divide into 10 equal balls, press thumb into center, fill with a little of the sauteed vegetables and beans, about 1-2 tbsp total. Fold the dough around the filling. Repeat until done.
  4. Heat oil on a cast iron pan or favorite griddle. If you put a sprinkle of water on the pan and it dances it is perfect, if it evaporates lower the heat. Grill for 5-10 minutes, flip and go another 5-10 minutes until browned.
  5. Serve hot with salsa or cortido. Opt to add vegan cheese!

Tortas de Masa con Ensalada de Col 

Ingredientes:
  • 2 Tazas Harina de Maiz - Mesaca
  • 1 ½ Tazas de Agua
  • 2 ½ Cucharadas de aceite  vegetal
  • ¼ Cucharadita de  Sal
  • 1 Taza de Frijoles Refritos
  • Agua y aceite para las manos según sea necesario y salteado.
 Empaste:
  • ½ Taza de Frijoles Refritos
  • 1/2 cebolla picada
  • 2 Dientes  de Ajo Picado
  • 1 chile poblano  - picado

Preparacion:
  1. Mezcle la harina de maíz y la sal. Agregue el agua, el aceite y los frijoles.
  2. Mezclar hasta que cree una masa lisa, cubrir y dejar a un lado. Haz el empaste.
  3. En una sartén, agregue el aceite o el caldo de verduras, una vez caliente agregue la cebolla y la pimienta.
  4. Cocine durante 5-10 minutos hasta que esté lista , agregue el ajo, cocine un minuto o dos. Retirar del fuego y reservar.
  5. Divida en 10 bolas iguales, presione el pulgar en el centro, llene con un poco de las verduras y frijoles, aproximadamente 1-2 cucharadas en total. Dobla la masa alrededor del relleno. Repita hasta que haya terminado.
  6. Caliente el aceite en un  sartén de hierro fundido o en una plancha favorita. Si pones una pizca de agua en la sartén y baila es perfecta, si se evapora bajar el calor. Asar en lanparrilla durante 5-10 minutos, voltear y pasar otros 5-10 minutos hasta que se dore.
  7. Sirva caliente con salsa o cortido. Opcional - agreguequeso vegano.

Ensalada de Col:
  • 5 Tazas  de Repollo  – Finamente triturado
  • 1 Cebolla Roja – Picada
  • 3 Tazas Zanahoria – Rodajas Finas  
  • ¾ Tazas Vinagre de Manzana
  • 2 Cucharadas de Chile en Polvo
  • 1 Cucharada + 1 Cucharadita  Sal de Mar
  • 1 Cucharada de  Orégano, Seco
  • 1  Taza de Agua
Mezclar los ingredientes en un tazón grande, masajear durante 5-10 minutos. Déjalo reeposar  durante unas horas o hazlo la noche  anterior y refrigera. ¡Servir!
