Sweet Potato Avocado Toast & Sandwiches

What is better than a roasted sweet potato? One layered with extra veggies and made into avocado toast or a sandwich. Take your sweet potatoes to a whole new level by using them as "bread"! This is the savory version but of course it can be made sweet. The options are endless. Today we had a big veggie sandwich and avocado toast. I've also used them as sliders, they're great starters, appetizers or a meal in itself. These are naturally gluten-free, grain-free, vegan and alkalizing! To your vibrant health!

Sweet Potato Avocado Toast & Sandwiches

Take your sweet potatoes to a whole new level by using them as "bread"! These are naturally gluten-free, grain-free, vegan and alkalizing! To your vibrant health!

ingredients:

  • 1 Large Sweet Potato (+ more as desired)
  • 1 Avocado
  • 1/2 Lime
  • Salt & Pepper
  • Favorite Toppings

How to cook Sweet Potato Avocado Toast & Sandwiches

Peaceful Preparation
  1. Preheat the oven to 400°F. Mine was at 350°F, so it took a bit longer, feel free to use the higher heat.
  2. Slice the ends off the sweet potato, remove the skin. 
  3. Slice into your desired "bread" slices, about 1/4" thick.
  4. Lay down on a lightly greased pan or one lined with parchment paper or a silicone mat. 
  5. Cover with a little oil (I used avocado) or lime juice for oil free. Sprinkle with your favorite seasonings, I used salt, pepper, chili powder and cumin powder.
  6. Roast for 30-45 minutes until golden and done like a sweet potato fry, a little soft on the inside with a nice exterior. Flip halfway.
  7. Remove and top with your favorite toppings, serve open-faced for toast or make into a sandwich.  Enjoy savory and / or sweet. 
  8. Mash the avocado with the lime, salt and pepper and spread on top for avocado toast, adding extras as desired. 

NOTES:

Toppings I used were one avocado, one half mashed with lime, salt and pepper the other half sliced. Refried beans, hummus would be great here. Cucumber slices, cherry tomatoes sliced in half, sliced yellow bell pepper, spinach, sliced red onion, sauerkraut, banana pepper and herbs.
