Tomato Zucchini Pizza on a Almond Meal Crust | AV Show 48

Summertime is here! Beach, swimsuits, picnics, lakes, gardening, corn on the cob, boating, good food, sunshine, laughter, berries and so much more. One thing that comes into an abundance is tomatoes and zucchini. I love the combination of them baked together, the flavors compliment each other so well and the colors are so beautiful. You will love them on top of this one of a kinda pizza crust.

From mixing to baking in under and hour you can be eating. The crust is made with 8 healthy ingredients in one bowl. Almonds, onions, herbs, garlic, psyllium husk, red pepper flakes, salt and water. Yet no glutenous flours, no oil, no yeast, or dairy AND you can place it in your dehydrator at 105-106 for 8 - 12 hours (easily done overnight) until done, use it then, store for later or freeze for future use. BOOM now it is a raw vegan pizza!! So no matter how you enjoy this, I'm sure you... and if you share, others will LOVE it too. I did make another batch with vegan mozzarella on top and it's next level, just saying. Most of all, enjoy each and every bite with a hidden smile knowing how great it is for your body!

The almonds alone host enough benefits to consider making this pizza. Almonds are known to eliminate cholesterol from the body, are high in potassium, are shown to decrease blood spikes in sugar which is great for those with diabetes and in general, have antioxidants that help your skin glow, are a fantastic brain food, can aid in weight loss and future weight gain + more! That doesn't even touch on the benefits of every other ingredient and this happens all why sitting back eating a slice of pizza. Sign me up!!!

8 Ingredient Almond Meal Crust 
  • 2 1/2 Cups of Almond Meal 
  • 2 Tbsp Psyllium Husk
  • 2 tsp Dried Oregano or 2 Tbsp Fresh Herb
  • 1 tsp Red Pepper Flakes (to taste)
  • 1/2 tsp Sea Salt
  • 1 tsp Garlic Powder or 1-2 Minced Cloves
  • 1/4 Cup Finely Diced Onion
  • 1/4 to 1/2 cup water 

Top it with:
Pizza Sauce
Tomatoes
Zucchini
Onion
Vegan Parm (see below)

Instructions:
  1. Preheat you oven to the highest temperature while preparing the pizza.
  2. In a medium-large bowl add your dry ingredients (almond meal, psyllium husk, oregano or italian seasoning if using dried herbs, red pepper flakes, salt, garlic powder if using dry) and whisk together.
  3. Add your wet ingredients, water, onion and fresh herbs and garlic if using vs. dry and mix until well combined. Note: For the water start with 1/4 cup and add more almond meal or water as needed. 
  4. Knead the dough until it forms together into a ball(ish) shape and is easy to work with.
  5. Take a pan lined with parchment paper and press the dough into desired shape. 
  6. Top with a spoonful of sauce, lightly covering the base.
  7. Proceed with a tomato, followed by a zucchini repeating circling and spiraling out if making a circle. Top with chopped onions and vegan Parmesan if desired, or your favorite vegan cheese.
  8. Bake for 20-25 minutes or until golden edges and easy to remove from the pan. Carefully remove, slice and serve hot. Also delicious cold. Crust may also be baked and frozen. Crust may also be made RAW by dehydrating for 8-12 hours at 105-106 degrees F. 


Vegan Parmesan Cheese Recipe
½ cup cashews, ¼ cup nutritional yeast, 2 tbsp garlic salt or use garlic powder and less salt – blitzed into powder. Save balance for future meals.

Yummmmmm.... looks gorgeous and I can taste summer just looking at this pizza!!! Have you seen cauliflower being used for pizza crust yet? I'd love to see a recipe for uses for cauliflower like that... grocery stores are even stocking it in a 'rice' type form .. (believe it's driven by eating paleo but it's great for vegans too!).

Have you tried this with flax meal or chia instead of Psyllium Husks?

Hi Michelle, I haven't tried this recipe with flax meal or chia instead of Psyllium though I think it would be just fine here. I like to interchange between the ingredients in other recipes so I don't see why it wouldn't work here. :)
