Moist blueberry muffins are complimented with the sweetness of ripe bananas, fall spices, vanilla and our gem ingredient - lemon zest. The lemon brings the muffins to life! I grabbed it on a last minute whim and boy am I so glad I did. It's amazing. Next level!! We'll be using coconut sugar to keep the glycemic index low and much less than a standard muffin. You can choose to use oil or go oil-free. The batter features oats and oat flour to keep things simple. Enjoy these anytime of day. We sure did. Happy baking my friends! With love, Christa

Vegan Blueberry Oat Muffins with Streusel

ingredients:

  • 1 Cup Oats [ie: Bob's Red Mill Gluten-Free]
  • 1/3 Cup Coconut Sugar
  • 1 Cup Oat Flour (Oats ground into flour)*
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • ¼ tsp Ground Ginger
  • ¼ tsp Pumpkin Spice
  • 1/8 tsp All Spice
  • ¼ tsp Sea Salt
  • 1 Cup Mashed Bananas (ripe)
  • 1/2 Cup Dairy Free Milk of choice
  • 6 Tbsp Water
  • 2 Tbsp Chia Seeds or Flax Meal
  • 4 Tbsp Coconut Oil (Sub: Coconut Butter, Nut/Seed Butter)
  • 1 tsp Pure Vanilla Extract
  • Zest of ½ Lemon
  • 1 Cup Raisins
  • 1 Cup Bluberries + ½ cup set aside
  • ¼ Cup Oat Flour off set aside
Streusel
  • 1/2 Cup Gluten Free Oat flour
  • 3 Tbsp. Coconut sugar
  • 3 Tbsp Coconut Butter or Coconut Oil
  • 1/2 tsp Cinnamon + Pinch of Salt

How to cook Vegan Blueberry Oat Muffins with Streusel

Peaceful Preparation:
  1. Preheat the oven to 375 degrees. Place 12 muffin liners in muffin tin and/or grease tins well.
  2. Mix water with chia seeds or flax meal and set aside.
  3. Mix together the dry ingredients in a large bowl: oats, coconut sugar, oat flour, baking powder, baking soda, spices and salt. Add the mashed bananas, dairy free milk, congealed chia/flax mixture, pure vanilla extract, zest of ½ lemon and coconut oil. Mix.
  4. Take the extra ¼ cup of flour that was set off to the side, sprinkle it over the raisins and blueberries until coated. Gently fold into the batter.
  5. Mix the streusel ingredients in a small bowl.
  6. Evenly distribute the batter between the 12 muffin liners, an ice cream scoop works great. Top each muffin with additional blueberries that were set aside. Generously top each muffin with streusel.
  7. Bake 30 to 45 + minutes until golden brown and a knife or toothpick comes out clean.
  8. Cool in the pan for 7 minutes.
  9. Carefully transfer to cooling rack. If using a silicone liner, remove it and transfer to a cooling rack. Wait 10-15 minutes and DEVOUR! They’re more fragile hot and sturdy cool. Cool completely before storing if you have any left. :)

NOTES:

If you don't have the spices on hand you can use cinnamon or your favorite. Use what you have.

Los muffins de arándanos se complementan con la dulzura de los plátanos maduros, las especias, la vainilla y la ralladura de limón. ¡El limón da vida a los panecillos! Disfrútalos en cualquier momento del día.

ingredients:

Ingredientes
  • 1 taza de avena
  • 1/3 Taza de azúcar de coco envasado
  • 1 taza de harina de avena (avena molida en harina)
  • 2 cucharaditas de polvo de hornear
  • ½ cucharadita de bicarbonato de sodio
  • ¼ cucharadita de jengibre molido
  • ¼ cucharadita de especias de calabaza
  • 1/8 cucharadita Toda la Especia
  • ¼ cucharadita sal de mar
  • 1 Taza Puré de plátanos (maduros)
  • 1/2 taza de leche sin lácteos de elección
  • 2 cucharada de semillas de chía
  • 6 cucharadas de agua
  • 4 Cucharadas aceite de coco (o mantequilla de coco, crema de semilla/nuez)
  • 1 cucharadita Extracto de vainilla puro
  • Ralladura de 1/2 limón
  • 1 Taza Pasas
  • 1 Taza arándanos + ½ taza arándanos apartar
  • ¼ taza harina de avena apartar
Struesel
  • ½ Taza Harina de Avena
  • ½ Taza Avena
  • 3 Cucharadas azúcar de coco
  • 3 Cucharadas aceite de coco (o mantequilla de coco, crema de semilla/nuez)

How to cook Muffins de Arándano Vegano

Preparación Pacífica:
  1. Precaliente el horno a 375 ° F / 190 ° C. Lugar 12 muffin revestimientos en muffin molde y/o grasa bien.
  2. Mezcle las semillas de chía y el agua juntas, mezcle bien, deje reposar durante 5 minutos para que se cuajen.
  3. Mezclar el streusel ingredientes en un recipiente pequeño.

  7. Distribuir uniformemente el bateador entre el 12 muffin revestimientos. Añada arándanos encima. Añada el streusel encima.
