The first time I had a roasted beet was at a high-end restaurant in Monterrey, MX. It was so soft and easy to slice into, the flavor was better than any beet I'd tasted. Next level. Since then my parents and I have started grilling on the weekends and roasted beets are a favorite of ours. If you've not tried it, I highly recommend it. So lush, soft, flavorful, beautiful and not to mention healthy. With very little effort, a grill and some time, you can enjoy these wonderful gems.
Grilled Beets - Whole Roasted Beets

Roasted to perfection, the skin crisp, flavorful and delicious, the inside, soft, luscious and silky smooth as you cut into it. The result? A true gift from the Gods. Roasted beets.
2 Whole Beets (as many or few as desired)
Take the whole beet. Wash the outside well. Pat dry or shake off.
Cover in olive oil or preferred oil.
Season further if desired.
Double wrap in aluminum foil. Wrap it once, then wrap it again.
Put the beet directly into the hot coals. Or roast above, though this will take longer.
Cook for 30-45 minutes or more as needed depending on the size of the beet until cooked throughout.
Leave the skin on or peel, I personally love the skin.
