Tahini Dressing infused with Lemon & Roasted Garlic

Creamy Tahini, a generous portion of freshly squeezed lemon juice and roasted garlic come together to create a thick spread. Add water and create an unbeatable dressing. You can add a little salt, perhaps a dash of cumin, fresh coriander/cilantro and or parsley for a unique spread, sauce or dressing that is sure to please! Personally, I can't get enough of this, my taste buds go wild for it. I hope you love this easy recipe.

How to Make Creamy Natural Peanut Butter

Sometimes you just want some creamy peanut butter! Maybe a big spoonful, on a PB&J, in smoothies, celery sticks, on a banana, in cookies or granola bars, surrounded with chocolate...there are so many fun options with how to use this magical butter. Made with natural peanuts and optional add-ins you really only need one to two ingredients for a creamy spread. I am amazed at how quick it is to make, in about 5 minutes it can be yours.

Ingredients:
  • 3 Cups Peanuts
  • 2 tsp Olive Oil + more if desired

Peaceful Preparation:
  1. Blend the ingredients together in a high speed blender on speed 1 for one full cycle or until unit stops.
  2. Scrape down sides, increase speed to level 5 for one full cycle or until unit stops.
  3. Repeat until desired consistency. Store in a sealed container in the fridge.

Ideas:
  • Use coconut butter for oil-free or pass altogether.
  • Add agave, extracts like vanilla, sea salt, cacao or your favorite flavor additions.
  • Roast the nuts first for roasted peanut butter.
  • Recipe works well with other nuts like almonds or pecans.

Jalapeño Garlic Hummus

This happened today: Jalapeño Garlic Hummus. We worked out hard and I knew just the trick to refuel our bodies. White beans, freshly squeezed lemon juice, garlic, spicy jalapeño slices were just the ticket. Imagine this dip with pita bread, vegetable sticks, veggie chips, paired with a Greek salad...how will or would you eat it? I used to buy a tub of hummus from the health food store and would be shocked at how we'd eat it all in one sitting, this batch was no different, it's all gone! This could easily serve 4 as a snack, we just couldn't stop! Enjoy. Love, Christa

1 Batch of Hummus
2 Large Servings
562 Calories
36.1 G Protein

Ingredients:
  • 1 1/2 Cups Cooked White Beans (Garbanzo or Cannellini)
  • 1/4 Cup Freshly Squeezed Lemon Juice
  • 3 Cloves Garlic
  • 1 Large Jalapeño (Divided)
  • 1 to 1 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • Opt: 2 tsp Olive Oil
  • Garnish with: Extra White Beans, Paprika &/or Red Pepper Flakes

Peaceful Preparation:
  1. Blend White Beans, Lemon Juice, Garlic, 1/2 Large Jalapeño (more or less as desired), 1 to 1 1/2 tsp Sea Salt & Black Pepper.
  2. Blend, scrape, blend - repeating until smooth. Opt to add the olive oil for extra creaminess, however it is not required.
  3. Place in a bowl. I surrounded ours with extra beans, the balance of the jalapeño with a touch of paprika and red pepper flakes. Delicious!

Raspberry Jam

Raspberry Jam
  • 1 Cup Raspberries
  • 1 Tbsp. Chia Seeds
  • Opt: 1/2 Tbsp Agave
  • Opt: Dash of Apple Cider Vinegar

Combine the ingredients together in a food processor, taste, adjust as needed. Place in fridge overnight so the chia seeds thicken the jam.

Mixed Berry Jam

So fast, so fresh, so easy, pulse, refrigerate overnight and you have jam. Only 2 ingredients and you can be enjoying some on toast or in a Sunrise Chia Bowl!

Mixed Berry Jam:
  • 2 Cups Fresh or Frozen Mixed Berries
  • 2 Tbsp Raw Chia Seeds

Make the mixed berry jam by combining the mixed berries and chia seeds together in a food processor, pulsing until combined. Transfer to a jar, cover and place in the fridge overnight. Use as desired. Add lemon or citrus/vinegar to help it last longer. Freezes great for month(s). Use your favorite berry.

Homemade Coconut Butter

Recently I found a new friend in the kitchen, coconut butter! It's made from primarily coconut meat or flakes so it is packed with fibers. The fiber can help slow the absorption of sugar. A plus in treat making.

Who knew you could make it at home and save big bucks? I didn't! I learned from The Ancestral Chef Louise Hendon; "How to Make Coconut Butter At Home"! If you want to make it, check out her link! I loved the results SO much I wanted to share with all of you. I really liked her detailed outline and how she provided different methods for each kitchen tool. Here is how mine turned out.

There is something magical about doing things yourself. I find so much joy in making things from scratch. Each time you use the coconut butter there will be sweet satisfaction knowing you did it!!!

Ingredients:
  • 4-6 Cups Unsweetened Coconut Flakes 
  • Opt: 1-2 Tbsp Coconut Oil or Butter

Peaceful Preparation:
Combine in a food processor or blender. Blend / Scrape until smooth. Takes about 10 minutes. ​

Almond Butter Banana Smoothie Bowl

Almonds are chopped, pulsed and spun into a creamy delicious almond butter. Coconut, olive or other vegetable oils can be added to enhance to creaminess and speed the process along. You can also opt for an oil-free batch as the almonds will naturally release their oil as the almond butter ages. It does take a little patience to make homemade almond butter but I believe it pays off. It is much more cost efficient ($5-8/lb for almonds = many batches of almond butter vs. $8-12 for a jar of almond butter), I can mix up the ingredients and make a sweeter, saltier or oil free version and there is something very special about making a product such as almond butter out of just raw almonds

I saw a recipe on instagram from @papaya_sunshine for an Almond Butter Banana Smoothie Bowl! It looked and sounded amazing and she raved about how much her husband loved it. When I hear those words "husband loved it" or loves it I perk up and look at the ingredients to see if perhaps my husband would love it too! :) I was certain he'd love this smoothie and boy did he!!

Place in a blender and blend until smooth. I added a tsp of reishi powder for our immune system. Opt to use whatever dairy free milk, nut butter and sweetener you have on hand and enjoy!

We topped ours with extra goodies! Banana coins, cashews, raisins, almonds, a prune, cranberries and a light dusting of coconut flakes over the bananas. I licked the bowl clean before Gerald, it's safe to say it is very good.

Garlic Hummus

It was a fun way to enjoy a delicious dip! We both LOVE hummus and it's been way too many moons since we last enjoyed some. We recently soaked and boiled chickpeas so it was the perfect occasion for a fresh batch of hummus. We couldn't help but enjoy every last bite.

The recipe hails from our Blendtec Cookbook with modifications for a garlic, herb and seed blend with red pepper flakes for a pinch of spice. I hope you enjoy it as much as we did!!

Vegan Cream Cheese Filled Tomatoes with Spices and Green Onions!

Happy Friday and 1st day of August! Are you enjoying your summer? The other day Jerry and I were taking a walk with our hand weights by the ocean, we decided to go for a mid-day walk as opposed to our usual sunset. I desperately wanted to jump in, so we did just that! We set our weights on the sand and went in, clothes and all! We swam, laughed and floated. I especially loved the sensation of floating on my back with the gentle waves lapping beneath my body, I felt one with the waves. :0) It's moments like that, where we truly let our inhibitions go and have fun that I cherish the most. We recently enjoyed a refreshing NEW moment in our home. I got to see my husband on TV for the first time and he got to BE on TV for the first time! Needless to say, we are having a VERY exciting day! My soul mate and husband Gerald Clark was featured on on a TV segment with TOPIC: UFO! He did sensational, I'm so proud of him!!! Watch this video and show your support for my husband! 
Once you're mind has explored new regions, your belly may want to as well! I've been trying to be more innovative in the kitchen and came up with a delicious treat. Tomatoes, Vegan Cream Cheese, Spices and Green Onions come together to create a tantalizing appetizer. Thick, rich, homemade cream cheese made from cashews, stuffed inside a ripe, juicy tomato with a fresh sprinkle of salt, pepper, and an herb and seed blend with green onions on top.

Cashew Cream Cheese
  • 2 cups cashews - Soaked for 4 + hours
  • 1 cup filtered water
  • Salt to taste (opt)
Directions:
  1. Blend Cashews with filtered water until very smooth, place in a open mouthed 1/2 gallon glass jar. Cover tightly with plastic wrap and secure with a rubber band. Cover with a towel and allow to sit in a warm place overnight.
  2. The next day dehydrate the "cheese" at 105 degrees for 6-8 hours until it begins to firm. Since it was so hot outside, we just placed the jar in the sunshine and it worked very nicely. You will have a nice thick, cream cheese like spread.

Tip: Feel free to add a little lime/lemon, apple cider vinegar to add more flavor plus any other seasoning you can dream up.

Now to create the masterpiece!

Vegan Cream Cheese Filled Tomatoes with Spices and Green Onions!
  • Small Ripe Tomatoes (Grape, Cherry, off the vine etc)
  • Cashew Cream Cheese
  • Green onions - diced
  • Salt and pepper to taste
  • Opt: Seed and herb mixture: I used my favorite nut and spice blend "DUKKAH" from Trader Joes. It contains a mixture of Almonds, Sesame Seeds, Fennel Seeds, Coriander, Anise Seeds and Kosher Salt and tastes sooooooo good!
Directions:
  1. Take small juicy ripe tomatoes, core the inside and prepare a shallow bed for the cream cheese.
  2. Take a spatula or spoon and fill the center of the tomato with the homemade cashew cream cheese.
  3. Top with salt, pepper and an optional nut and spice blend.
  4. Place Green onions on the side and/or on top.
  5. Wallah! Appetizers that are sure to please not only the eye, but the palette as well.

Goddess Dip

Bring out your inner god or goddess with some healthy goddess dip made with whole-food ingredients that are completely vegan and gluten-free. It's so good for you your aura may even shine brighter after indulging. Cut up some fresh veggies, add some sweet potato chips and get to dipping! We love dip and can't seem to keep enough around. This is a great new recipe we both love! What a healthy snack or even a light meal! It's great to put out before dinner, for guests, for kids, for husbands...enjoy! :)​

Goddess Dip
  • 1 can chick peas
  • Fresh Basil
  • 1 lemon freshly squeezed & the grind
  • S&P to taste
  • Red Pepper Flakes to taste
  • 1/4 cup olive oil
  • 1 tbsp Goddess Dressing
  • 2 Cloves garlic
  • 1/4 cup sweet onion

Directions:
  1. Place all of the ingredients in a food processor except for the olive oil, pulse until combined
  2. Slowly add in the olive oil
  3. Pulse until creamy
  4. Place in bowl with a basil leaf on top, surround with fresh veggies and chips or pita bread!
