By page 7 of The Mindful Vegan I was captivated. Not a cookbook, but a book on mindfulness. Teaching you to embrace a mindful meditation practice and taking that mindfulness into your daily activities from walking to brushing your teeth. Living in the moment, the now, just being and embodying conscious awareness in all aspects of life. The book provides insight to mindfulness, being a mindful vegan, cultivating a peaceful mindset that is loving and compassionate, open and free. It invites you to join on a 30 day journey with daily meditation practices, techniques, tips, discussions pre and post meditation for reflection with beautiful soulful quotes along the journey.
I am so excited to share with you my most requested, most remembered pumpkin bread. Nearly 7 years ago I made a loaf of pumpkin bread for my friends in the office. Barbara and Patty to date state it is best pumpkin bread they've had!!
A bed of apples and strawberries are enhanced with cinnamon, plump raisins and sweet mandarin orange juice. It is baked until oozing with juicy berries ready to burst in your mouth beneath a crisp and crunchy topping. I give you my Apple and Strawberry Crumble!
Don’t you love those meals that you can throw everything onto a pan, fill the house with unreasonably good smells and then serve a beautiful meal? I know I do! Today I’m going to share a Dinner for Four. If you have guests come over it looks enticing next to salad, warm bread and a warming beverage. It also is a complete meal in one spot so you can serve it up in any dish and dig in. That’s how we do it around here and add dipping sauces.
The scent of this tea fills your home with a heavenly spiced aroma with cinnamon, ginger, nutmeg and more wafting in the air. Take a big deep breath over the hot steam and soak it all in. This tea is made from all natural herbs and spices, Gerald often jokes that it looks like a witches brew so it is fitting for this season. No? No toil, just toss some herbs and spices in a pot once the water is boiling and allow it to simmer for 30 minutes creating an intoxicating smell and most of all, flavor. We love to have ours with some dairy free milk and when we splurge a little drizzle of syrup for a sweet cup of tea. This is our favorite chai tea that we've been drinking nearly every single night for months now. Come and get your cup, I promise you won't regret it.
Homemade Apple Pie for the ultimate American dessert. Sweet warm apple pie against cool vegan vanilla ice cream, does it get any better? I don't know. It is truly indulgent and a big naughty, but still a touch healthier than standard and vegan & gluten-free.
Power up your body with these 3 new smoothies. The glorious berries give the pink color and antioxidants. Add some protein powder and chia seeds and you have the omega's and protein your body needs. I love having a smoothie in the morning, especially after yoga or movement. Rehydrating and replenishing.
Porridge, while not the most exciting name in the world, it is misleading for within the bowl is a warm hearty breakfast and a palette for a variety of flavor sensations.
I had the honor of cozying up to The One Peaceful World Cookbook by Alex Jack and Sachi Kato (BenBella Books, 2017) and absolutely fell in love. It felt like one of those pivotal moments where a light clicks and you remember the bigger picture. Beyond a cookbook, this book is a guidebook for life. Reminding us to go back to our roots and most importantly to add our heart and soul back into what we do.
