Vegan Chicken
ingredients:
- 140 Grams / 1 1/4 Cup Vital Wheat Gluten (GF See below)
- 275 Grams Silken Firm Tofu
- 225 Grams Oyster Mushrooms - Sliced
- 3/4 tsp Garlic Powder
- 2 tsp Vegetable Broth Powder
- 1 Tbsp Onion Powder
- 1/2 tsp Salt
- 1/4 tsp Lemon Pepper
- 1 Tbsp Dijon Mustard
- 1 tsp Low Sodium Soy Sauce (omit or coconut aminos for soy-free)
- 2 Tbsp Olive Oil (water for oil-free)
- 1/4 Cup Water

How to cook Vegan Chicken
- Combine everything but the mushrooms in a food processor or a bowl. Pulse together (or mix) until it forms a ball or comes together.
- Remove from the food processor and fold the mushrooms into the dough.
- Shape your vegan chicken into desired shapes, wings, breasts, etc.
- Place the vegan chicken wings in a lightly greased steaming basket, steam over a light simmer for 25 minutes, flipping halfway to cook evenly.
- Place on a cooling rack, cool completely.
- Transfer to an airtight container, opt to marinade at this step for more flavor, refrigerate for a minimum of one hour, the longer you go the firmer it will be, 4 hours to overnight is great.
- Since the vegan chicken is already cooked from steaming, you can pan-fry quickly, grill, fry, air-fry, bake or prepare as you desire and it will come together quickly. Enjoy anyway you desire.
