Oats are infused with a strong chai tea, coconut milk, additional spices, sweet raisins, a splash of stevia and then topped with more coconut milk, crystallized ginger and raisins. This breakfast is a true treat that will sweeten your day naturally.
I made us a chai latte last night and decided to make a double batch of the tea and place it in the fridge. I even added chaga powder, so this is truly chaga chai spiced oatmeal, and I encourage you to do the same!! Though, it is totally fine without it. Late this morning I found myself hungry and decided to add it to the oatmeal! What a treat! This was a complete hungry morning creation and I hope it satisfies you the way it did my husband and I. Plus, if you use gluten-free oats it is gluten-free, vegan / dairy-free, oil-free of course and refined sugar-free! Healthy carbs give you a natural boost of energy and a meal hearty enough to keep you going 'til your next meal. Watch the video and/or get the recipe below.
Chai Spiced Oatmeal | 2 Servings
1 Cup Oats (Gluten-Free Variety for GF)
1 tsp Cinnamon
1/2 tsp Ginger Powder
1/2 Cup Raisins
1 Cup Chai Tea (Strong!)
1 Cup Coconut Milk (or dairy-free milk of choice)
Dash: Nutmeg, All Spice, Cardamom
Sweeten to taste as desired (I used Stevia)
Drizzle of Coconut Milk
Crystallized Ginger Pieces
Combine ingredients in a saucepan. Cook until desired consistency, I cooked ours about 15 minutes with the last 5 minutes covered. Stir frequently to prevent sticking. Once it is at your preferred consistency, transfer to two bowls, top as desired; I chose coconut milk, crystallized ginger and raisins. Mmm mmm! Enjoy!
A drizzle of maple syrup would be divine! You can also place it in your rice cooker, press cook and let it do the work.
