My parents turned me onto this simple and delicious recipe. Fresh parsley, minced garlic and olive oil create a simple sauce and tastes wonderful when preparing grilled vegetables or other food. You can add vinegar, chilis, a touch of oregano and salt and pepper to spice it up or leave it as is. It tastes amazing to use when cooking, yet also tastes fabulous served on top of food or to dip your bread into.

1/2 Cup Olive Oil
1/2 Cup Finely Chopped Parsley
3 to 4 Cloves of Garlic - Finely Minced
2 Tbsp Red Wine Vinegar
3/4 tsp Dried Oregano or 2 Tbsp Freshly Chopped
1 tbsp Finely Chopped Red Chili (or Pinch of Red Chili Flakes)
S&P to taste
Combine the ingredients in a bowl or small dish. Mix well. Allow to sit for 10 minutes or preferably 2 hours or longer to develop flavor.
You can prepare this the day before if desired and refrigerate.
Use on top of your desired food while grilling, when cooking and / or when serving drizzle a little on top. Also good to dip fresh bread into.
