It has been too long!! I hope you are all amazing. I miss sharing recipes. I've actually been cooking up a storm these days for my beloved boyfriend and his daughter and it's been a blast. I find I cook more when I have someone to enjoy it with. Are you that way too? Though whenever I did cook something nice for myself while alone, it was such a gift to myself. So whether you have someone to cook for or not, I encourage making food at home. I recently made amazing Sweet Potato Muffins that are totally vegan, sugar cookies, delicious oatmeal, buddha style bowls with tons of colorful veggies, many salads, delicious soup with lots of fresh veggies on top, peanut ginger broccoli, curried sweet carrots, I always love sweet potatoes in all their forms, Asian soy-ginger noodle bowls with lots of veggies, fried rice and much more.
