Ingredients:
- 3 Cups White Potatoes – Sliced into 1” Pieces
- 6 Cups Vegetable Broth
- 1 Tbsp Freshly Minced Garlic
- ½ White Onion – Finely Chopped
- 1 Head Broccoli – Roughly Chopped
- 1 1/2 tsp Salt; Divided
- 1/2 tsp Black Pepper
- 1/2 tsp White Pepper
- ½ tsp Turmeric
- ¼ Cup Nutritional Yeast
- 1/2 Cup Cashews, Soaked until soft, Drained
- Opt: Green Onion to top
- ½ Cup Cashews, Soaked until soft, Drained
- ½ Cup Coconut Milk in a Can, mine had 12 g of Fat
- Salt to taste
- 1 Tbsp Nutritional Yeast
- 2 Tbsp Apple Cider Vinegar or Lemon/Lime Juice
Peaceful Preparation:
- Soak the cashews ahead of time. You can also soak them in hot water while preparing the soup, I did both with success.
- Place the vegetable broth, potatoes, garlic, onion, broccoli and ½ tsp salt in a medium size pot over medium heat with a lid on. Bring to a simmer, reduce heat, simmer 15-20 minutes or until the potatoes are easy to pierce with a fork. If using broccoli as a garnish, remove a few cooked pieces for toppings.
- While the soup is simmering, make the coconut cashew cream by blending everything in a blender until smooth and setting aside. Relax and once the vegetables are tender and the soup is ready, proceed.
- Add the nutritional yeast, balance of the salt to taste, white and black pepper and turmeric.
- Blend with an immersion blender until smooth or a heat-approved high speed blender with the lid cracked or some form of ventilation. If using a blender, blend in batches, blending a portion with the cashews until smooth.
- Pour the silky mixture back into the pot with the soup. Reheat and serve hot!
- Drizzle with the cream if using, add sliced avocado, opt to add green onions and broccoli.
