Creamy Chicken & Dill Soup | Sopa Cremosa de Pollo Vegana

This soup is bursting with flavor. Vegan chicken is combined with herbs and spices, combined with carrots, onions and zucchini for one amazing soup. Toss it in a pot, heat it up, let the flavors infuse and enjoy! This soup is wonderful chunky or extra smooth and creamy. I love the dill! Delicious both ways!

Creamy Chicken & Dill Soup

Yield: 6-8

ingredients:

  • 1 Tbsp Olive Oil or Vegetable Broth
  • 2 Vegan Chicken Breasts of Choice (recipe alert)
  • 3 Potatoes - Diced
  • 4 Cloves Garlic - Minced
  • 2 Small Zucchini - Chopped
  • 2 Med-Lg Carrots - Sliced
  • 1 Bay Leaf
  • 1/2 tsp Rosemary
  • 1 Tbsp Dry Parsley
  • 1 Tbsp Dry Dill
  • 1 Red Onion - Diced
  • 8 cups Vegetable Broth (Low sodium)
  • 2 Tbsp Flour of Choice (I used Chickpea Flour)
  • 1 tsp Salt or to taste
  • 1/2 tsp Pepper or to taste
  • 1 Cup Green Peas

instructions:

How to cook Creamy Chicken & Dill Soup

Peaceful Preparation:
  1. Heat the olive oil in a big pot over medium heat, once hot add the vegan chicken, cook until golden.
  2. Add the onions, cook for a few minutes.
  3. Add the salt, black pepper, parsley, dill, bay leaf and rosemary and flour. Cook for a few minutes.
  4. Add the balance: the carrots, zucchini, garlic, vegetable broth and peas. 
  5. Bring to a boil.
  6. Reduce the heat, simmer for 20 minutes.
  7. Serve hot. Opt to top with black pepper, cayenne pepper or paprika and a little cilantro or your favorite herb like dill! Would be great with bread and a salad.

Sopa Cremosa de Pollo Vegana

ingredients:

  • 1 cucharada de aceite de oliva o caldo de verduras
  • 2 Pechugas de Pollo Veganas (alerta de receta)
  • 3 Papas - Cortados en dados
  • 4 dientes de ajo picados
  • 2 Pequeño Calabacín - Picado
  • 2 Zanahorias medianas a grandes - rebanadas
  • 1 hoja de laurel
  • 1/2 cucharadita de romero
  • 1 cucharada de perejil seco
  • 1 cucharada de eneldo (Dill) seco
  • 1 cebolla roja - con dados
  • 8 tazas de caldo de verduras (bajo en sodio)
  • 2 cucharadas de harina de elección (usé harina de garbanzo)
  • 1 cucharadita de sal o al gusto
  • 1/2 cucharadita de pimienta o al gusto
  • 1 taza de chícharos (guisantes verdes)

instructions:

How to cook Sopa Cremosa de Pollo Vegana

Preparación pacífica:
  1. Calentar el aceite de oliva en una cacerola grande a fuego medio, una vez caliente añada la vegan pollo, cocine hasta que estén doradas.
  2. Añada la cebolla y cocine por unos minutos.
  3. Añadir la sal, la pimienta negra, el perejil, el eneldo (dill), el laurel y el romero y la harina. Cocine por unos minutos.
  4. Añade las zanahorias, el calabacín, el ajo, el caldo de verduras y los chícharos / guisantes.
  5. Hervir.
  6. Reduzca el calor y cocine a fuego lento por 20 minutos.
  7. Servir caliente. Cubra su sopa con pimienta negra, pimienta de cayena y un poco de cilantro ! Sería genial con pan y una ensalada.
