How many times do you see a recipe that calls for heavy cream?
I've seen countless. As a vegan there is no reason you can't enjoy those recipes, just swap it. I love to use cashew cream or almond cream as an alternative. Full fat coconut milk or coconut cream are also great and easy alternatives. This is wonderful recipe because it's healthy with natural fats from the nuts. Still fatty but in a good way. A simple easy recipe that I hope you come back to again and again.
1/2 Cup Cashews - Soaked Overnight
1 Cup Filtered Water
Blend until smooth and no chunks remain. Strain if needed, I find with cashews you can often skip that step. Use in replacement of heavy cream. Use less water for a thicker cream.
Soak the cashews in hot water for 10+ minutes to soften.
Use almonds vs. cashews, remove the skin of the almonds for extra creamy results.
