Sometimes you want a no-fuss meal and you want it quick. This soup is a GO-TO of mine. I love the flavor, I love the protein, I love that you can add pasta or bread to make it heartier. I just love it all around! I hope you do too!
Fagioli Soup is full of flavor, full of life, hearty, warming and is very easy to come back for more. The flavor is reminiscent of a minestrone. I like to make mine easily in one pot, toss it in there, cook it and eat it. Simple as that. Add bread and or pasta to make it stick to your ribs more.
On a side note, this week was pretty magical! I got to spend time talking with Colleen Patrick-Goudreau of The Joyful Vegan which was a big step forward for me. I don't usually do interviews, it was fun to connect with a like-minded vegan in the space while overcoming fear and stepping out of my comfort zone. I also saw a client from Gravity Body Academy who received a session. It went really well and was fun! Just a reminder to try something different, stretch out of your comfort zone and who knows you may enjoy yourself. Now..onto that soup. You gotta try it. Recipe below. Enjoy my friends!
