Fluffy Wheat Dinner Rolls (Vegan with Gluten-Free & Oil-Free Options)
- 3 Cups Whole Wheat Flour (500 grams)
- 2 Tbsp Potato Starch
- 1 tsp Sea Salt
- 2 ¼ tsp Instant Yeast or 1 Packet
- 1/3 Cup Coconut Butter or Coconut Oil
- 1 Cup Dairy Free Milk
- 4 Tbsp Agave/Maple Syrup (Divided)
- 1 tsp Psyllium Husk or 1 Tbsp Flax Meal
- 3 Tbsp Water
- 2 Tbsp Olive Oil
- Mix together the 3 tbsp of water with 1 tsp of Psyllium Husk (or flax meal) and set aside to congeal for 5 minutes.
- Heat the dairy free milk to 105-110°F / 40°C.
- Mix the warm dairy free milk, yeast and 1 tbsp of the agave/maple syrup together. Set aside for 5 minutes to foam.
- Mix the flour, starch and salt and set aside.
- In a large bowl or standing mixer, beat the coconut butter (or coconut oil) and the balance of the agave/maple syrup together for 1-2 minutes.
- Add the congealed psylium (or flax) mixture. Mix well. Add the yeast mixture that is foamy and begin adding ½ cup of the flour mixture at a time. Stirring to incorporate, adding more. Gradually add the balance of the flour until a soft and smooth ball of dough is formed that is elastic and slighly tacky. Knead for 3 more minutes at this point.
- Lightly grease a bowl, add the dough, turning the dough to coat in oil. Clover with a clean kitchen towel. Set aside in a warm place for 45-60 minutes or until it doubles in size.
- Gently deflate the dough by punching lightly. Lightly flour a clean surface. Shape / Roll the dough into a 15” snake. Cut into 15, 1” Pieces. Shape the dough into a disk and roll into a ball.
- Lighly oil a 9 x 13 baking pan/dish. Place the balls of dough in the pan with a little space inbetween. Repeat until done. Brush with olive oil or the oil-free mixture below. Cover with a clean dish towel. Set in a warm place to rise for 30-45 mintutes.
- Preheat the oven to 375°F. Bake for 15-25 minutes until golden.
- Brush with additional olive oil or the oil-free mixture below. You can also add toppings like sea salt, herbs, nutritional yeast, or go for sweet with cinnamon and sugar. Serve warm and enjoy!
- Oil-Free: Replace olive oil at the end with dairy free milk and sweetener mixed together vs. oil for browning.
- Gluten-Free: Replace Whole Wheat Flour with a Gluten-Free All Purpose Baking Flour Blend such as this recipe.
- Use other sweeteners like coconut nectar, brown rice syrup, coconut sugar, pure cane sugar etc.
- Placing them in a basket with a towel will keep them warm for guests.
