2 Tbsp Vegetable Broth
1 Cup Diced Onion
1/3 Cup Jalapeno or Green Chili Peppers
3 Cloves Garlic, Minced
1 1/2 tsp Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Garlic Salt or Sea Salt
2 Cups Tomatoes, freshly diced
4 Cups Vegetable Broth (low sodium)
3 Cups Black Beans (cooked)
2 Cups Corn (cooked)
3 Tbsp Harina de Maiz or Corn flour
Tortilla Strips for serivng
2 Avocados for serving
- Heat 2 Tbsp of vegetable broth in a large pot over medium high heat. Add the onions, peppers, minced garlic and spices. Saute for 5 mintues.
- Add the tomatoes and vegetable broth, bring to a boil. Reduce heart to low. Add the black beans, corn and cornmeal. Stir and simmer for 10 to 15 minutes. Taste, adjust as desired. (Ideas: salt, pepper, paprika, cumin etc)
- Place a handful of tortilla strips in each bowl, top with soup, place 1/2 avocado sliced in the center with more tortilla strips surrounding. Could add a sprinkle of red pepper flakes and or minced cilantro as well.
Cut tortillas into strips and bake at a high temperature until crispy.
