Homemade Mixed Berry Pie Recipe (Vegan, GF)

My husband LOVES Mixed Berry Pie and this year for his birthday I made him a big old pie. Oozing and bubbling as it comes out of the oven with berry goodness, nested in its pie crust, waiting for you to adorn it with vegan ice cream. I mean c'mon. Let's do this! Get the recipe below.

Making your own homemade pie doesn't have to be intimidating. Wow your loved ones and yourself with the gift of making something with your hands. Mixed Berries are surrounded in a homemade pie crust, baked and enjoyed with nice cream. Learn how to make your own homemade pie in no time. Whiz together the crust, roll it out, press it, dump and bake. The hardest part is cooling. Then dig in! Mixed Berry Pie

Yield: 1 Pie

Mixed Berries are surrounded in a homemade pie crust, baked and enjoyed with nice cream.

ingredients:

  • 2 Pie Crust Recipes - 9" (one for top, one for bottom)
  • 4 Cups Mixed Berries
  • 1/2 Cup Sweetener of choice (Agave, Maple, Coconut, Date, Monk...)
  • 3 Tbsp Starch of choice (Potato, Corn, Tapioca, Arrowroot...)
  • 2 Tbsp Coconut Oil or Earth Balance (optional)
  • "Egg Wash"
  • 2 Tbsp Dairy Free Milk
  • 1 Tbsp Sweetener of choice

instructions:

How to cook Mixed Berry Pie

Peaceful Preparation
  1. Mix together the mixed berries (Fresh or frozen) with the sweetener and coconut oil in a saucepan. Opt to reserve one cup of berries.
  2. Heat over medium-low heat for a few minutes.
  3. In a separate bowl, mix the starch with some of the liquid released from the berries. Once mixed well, stir into the berry mixture until no chunks remain.
  4. Remove from the heat, stir in the last cup of berries.
  5. Cool to room temperature. While cooling make the crust.
  6. Preheat the oven to 375 degrees F.
  7. Once cool, pour the berry mixture into a prepared pie crust, top with another pie crust if preferred. Pinch the sides, ensure a slit is on top for breathing.
  8. Mix together the "egg wash" of dairy free milk and sweetener, brush on top.
  9. Bake for 45-60 minutes, until golden and bubbling.
  10. Cool to room temperature for an hour or longer.
  11. Serve with vanilla vegan ice cream or banana nice cream. Enjoy!!
