- 1 Block Tofu (NonGMO Silken Firm) or 1 Cup Avocado
- 1 Tbsp + 1/2 tsp White Vinegar
- 1 1/2 Tbsp Lime or Lemon Juice
- 1 tsp Salt (or to taste)
- 2 tsp Dijon Mustard
- 2 Tbsp Filtered Water
- Place everything in a food processor or use a handheld blender and process until it is completely smooth.
- Refrigerate covered for 30 minutes. Enjoy as you please. Store in the fridge. Shelf life 7-10+ days for the tofu variety, 3-4+ days for the avocado.
