- 2 Tbsp. Oil (Omit for Oil-Free)
- 3/4 Cup Rice
- 1/4 Cup Quinoa = Extra Health Benefits! Traditional = 1 cup Rice; no quinoa
- 1 Sliced Jalapeño (or favorite veg)
- Spices (Salt & Pepper to taste, 1-2 tsp Paprika, 1/2-1 tsp Cumin)
- Opt pinch of: Red Pepper Flakes + Oregano
- 3 Roma Tomatoes (or equal amount)
- 1/2 Small Onion
- 2-3 Cloves Garlic
- Vegetable Broth (1 Cup + Extra to Blend)
- Small Bundle Cilantro - Roughly Chopped
- 1 Green Onion - Diced
- 1 Lime - Squeezed
Peaceful Preparation:
- Heat pot or pan over medium-high heat, add 2 Tbsp. Vegetable Oil, omit for oil-free or use the recipe below.
- Add rice & quinoa if using both, or just rice, toast for 8-10 minutes or until golden brown, moving it around constantly to avoid burning.
- 10 min later, add any veggies, it was time to go to the market so I used a jalapeño, feel free to use carrots, peas, bell peppers, onions etc. Allow vegetables to cook as desired and then add the spices, coating each and every piece of rice.
- Blend tomato, onion and garlic + splash of water or vegetable broth and add tomato puree + vegetable broth. Give it a gentle stir, test and adjust if needed.
- Bring to a roaring boil, reduce heat to low, cover and cook for 15-20 minutes, I go for 20 minutes.
- Fluff, cover, set aside 10 minutes.
- Serve as is or opt to add the juice of one lime, chopped green onion and cilantro, enjoy!!!
- 2 Cups Water
- 1 Tbsp Vegetable Broth Seasoning
- 1 Cup Rice
- Desired Seasoning (I did: Red Pepper Flakes, Black Pepper, Cayenne, Cumin, Paprika, opt Oregano)
- 1 Cup Tomatoes (Grape, Cherry or Chopped)
- 1/2 Small Onion - Chopped
- 2 Cloves Garlic - Minced
Optional:
- Small Bundle Cilantro - Roughly Chopped
- 1 Green Onion - Diced
- 1 Lime - Squeezed
Peaceful Preparation:
- Place the water and vegetable broth seasoning in a rice cooker, stir well until combined.
- Add the balance of ingredients, give it a gentle stir.
- Press Cook.
- Once done, fluff, cover for 10 minutes.
- Opt to add the juice of one lime, freshly diced green onion and cilantro and serve hot!
