Learn my take on Mexican Rice with two different methods of making it. This recipe is so versatile you can make it a number of different ways, each señorita makes her own version.
The fist method demonstrated shows a more traditional method where you toast the rice first bringing a new dimension of flavor, coat each piece in seasoning, add a fresh pureed tomatoes, onion and garlic and more for a flavorful bite of rice.
The second method is done ever so easily in a rice cooker. This method is great for pressing a button and carrying on with life then returning to a hot flavorful dish. Both recipes are so good you can serve them as a side dish, in your burritos, we like to make a big batch and then use it throughout the week.
