Instant Caramel [Raw + Vegan]

4 Simple Ingredients and you have instant caramel. You can add more ingredients and even get it down to 1 ingredient.

Standard caramel recipes can include ingredients like refined sugar, corn syrup, butter, whole milk and so forth. I analyzed, compared some of my past caramels and came up with a new absolutely irresistible version. This new variety creates the most amazing caramel that you must try for yourself. It tastes heavenly. It even pulls apart the way caramel chews would, when frozen, so you can eat a little square of caramel, and it doesn't get too hard in the freezer so it is still soft enough to not hurt your teeth. You could also use it in a number of recipes or even a dip. You're going to LOVE this recipe! I foresee it being used in future recipes. :0) From my kitchen to yours with love! Christa ​

Instant Caramel
  • ​1/2 Cup Packed Soft Medjool Dates - Pitted
  • 1/6 Cup Coconut Cream 
  • 1/6 Cup Maple Syrup (or your favorite)
  • 1 Tbsp Coconut Oil or Coconut Butter

Peaceful Preparation:
Combine everything in a food processor. Pulse until combined, push down the sides, repeat and process for 3-5 minutes until there are virtually no date pieces left and it is a thick and creamy caramel. Use as your heart desires! Store in the fridge or freezer.

Variations:
  • Add a pinch of salt for salted caramel. 
  • Add a splash of vanilla or your favorite flavorings.
  • Use 1 ingredient (dates only), dates and water, or dates and coconut milk. 
  • Use up to 1/6 cup of the coconut oil or coconut butter for firmer results. 

Tip: Use full fat refrigerated coconut milk, scoop the cream off the top for an easy coconut cream.
