Standard caramel recipes can include ingredients like refined sugar, corn syrup, butter, whole milk and so forth. I analyzed, compared some of my past caramels and came up with a new absolutely irresistible version. This new variety creates the most amazing caramel that you must try for yourself. It tastes heavenly. It even pulls apart the way caramel chews would, when frozen, so you can eat a little square of caramel, and it doesn't get too hard in the freezer so it is still soft enough to not hurt your teeth. Combine everything in a food processor. Pulse until combined, push down the sides, repeat and process for 3-5 minutes until there are virtually no date pieces left and it is a thick and creamy caramel. Use as your heart desires! Store in the fridge or freezer.
Tip: Use full fat refrigerated coconut milk, scoop the cream off the top for an easy coconut cream.
