- 8 Cups Water (or Veg Broth)
- 1 Onion - Chopped
- 1 Cup Zucchini - Sliced Thin or Carrots in Coins
- 1 Bell Pepper of Choice or 2 Stalks Celery - Chopped
- 1 Cup Green Beans
- 2 Tbsp Minced Garlic
- 1 1/2 Cup Sliced Oyster Mushrooms
- 1/4 Cup Low Sodium Soy, Shoyu, Tamari Sauce or Coconut Aminos
- 1/4 Cup Freshly Minced Herbs (Parsley + Basil)
- 1 Tbsp Dry Dill
- 1 Tbsp Dry Oregano
- S&P to taste
- To taste: Lemon Pepper (opt), Turmeric
- 1 Cup Uncooked Noodles (thin, gluten-free if preferred)
Peaceful Preparation:
- Add water, onion, zucchini, bell pepper, beans, garlic and cook in medium-large pot. Cover and cook over a medium to low heat for 20 minutes.
- Add the balance of the ingredients. Cook until the noodles are done. May also cook noodles on the side if not eating all at once since the leftovers will absorb the liquid from the soup, fyi.
