3 Heaping Cups Leafy Greens
1 Heaping Cup Purple Cabbage - Diced
1 Cup Cucumber - Peeled & Diced
1 Cup Carrot - Peeled & Diced
1 Cup Tomato - Diced
1-2 jalapeño or serrano peppers - Diced
1/2 Heaping Cup White Onion - Diced
1/2 Cup Yellow Bell Pepper - Diced
1/4 Cup Beet - Diced
1 1/2 Cups Artichoke Hearts
Combine all of the ingredients except for the artichoke hearts in a large bowl. Gently toss together. Surround with the artichoke hearts. Serve with your favorite dressing. I found it paired wonderfully with stuffed green olives and Creamy Balsamic Vinaigrette.
