1 Big Bunch of Organic Kale - De-stemmed and Chopped Fine
1 Carrot - Diced Fine
1/3 Red Onion - Diced Fine
1 Cucumber - Chopped
1/2 Cup Pumpkin Seeds
1/2 Cup Cranberries
Opt: Pinch of Candied Ginger
Opt: Handful of Sliced Brazil Nuts
3 Ingredient Salad Dressing:
2 Tbsp Tamari or Soy Sauce
2 Tbsp Tahini
2 Tbsp Lemon Juice
- With a fork vigorously mix equal parts tamari, tahini and lemon juice in a small dish until completely mixed. Use 1 tbsp each for a small salad and increase for a larger salad.
- Place the chopped kale in a large bowl. Pour the dressing on top. Massage the dressing into the kale until the leaves are very soft and fully coated. Rinse hands.
- Place the balance of the vegetables in the salad and mix well, you may use your favorite mix and/or what you have on hand. This is a basic example. Top with the pumpkin seeds, cranberries and other toppings if you are using them. You can also add beans, other seeds, nuts, dried fruit, fresh fruit or anything you desire. Serve with love and enjoy!
