Nacho Cheese Sauce

A delightful nacho cheese sauce is yours in no time. Boil some potatoes and cashews, blend with the rest of the ingredients, grab a chip and dip. It's simple, tasty and delicious. Great for nachos, crunchwrap supremes, on pizza, as a dip and much more. Enjoy!

Ingredients:
  • 2 Small Potatoes - Peeled and Chopped
  • 1/2 Cup Cashews
  • 3 Tbsp Soy/Coconut Aminos or Sauce
  • 2 Tbsp Apple Cider Vinegar
  • 2 tsp Dried Minced Onion
  • 1 Heaping Tbsp Dijon Mustard
  • 1/2-1 tsp Chili Powder, to taste
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Vegetable Broth Powder
  • 2/3 Cup Filtered Water

Peaceful Preparation:
  1. Boil the potatoes and cashews until the potatoes are soft. Drain, set aside to cool.
  2. While the potatoes are boiling, add everything to the blender, once the potatoes are done add them along with the cashews.
  3. Blend, scrape down the sides, blend again until silky smooth. 
  4. Transfer to a bowl and enjoy!

what if ur allergic to both cashewnuts and potatoes?? or rather ur on a allergy diet??

You could sub sweet potatoes if they're approved on your diet and skip the nuts. Is it all nuts? I have an almond based one I could share. Else I could try to come up with something new. :)
