No Bake Chocolate Chip Cookie Dough Bites

Did you ever have a friend who bought raw cookie dough? Or were you that friend?! Or did you ever sneak a spoonful of raw cookie dough as a kid? Introducing SAFE raw cookie dough that won't get your hand swatted for grabbing it! No baking is required, combine your ingredients in a food processor, leave it as is and grab a spoonful if you are wanting the least amount of effort, take it up a notch and roll them into balls, get fancy and dip them into chocolate as balls, bars OR bake them. For this recipe very few healthy ingredients are all you need to have a healthy snack in no time.

Ingredients:
  • 1 Cup Almonds; Ground into flour 
  • 3/4 Cup Dates
  • 2 Tbsp Nut or Seed Butter
  • 1/2 tsp Pure Vanilla​ Extract
  • 2 Tbsp Water
  • 1/4 tsp Salt (opt) 
  • 1/3 Cup +/- Chocolate Chips 

Peaceful Preparation:
  1. Place your almonds in a food processor or blender and grind into a fine flour.
  2. In a food processor add the dates, nut butter, vanilla, water and salt if using, I used it. Mix together until it moves as one unit as is a sticky consistency. Add the flour a little at a time until it is incorporated fully. Stir in the chocolate chips. 
  3. Roll into balls, a log and slice a piece off, or shape into bars. Store in an airtight container in the fridge or freezer.

Q? May I just press these into a cookie shape and bake at 350 degrees F for 10-12 minutes without adding anything else? YES. Flatten, bake and devour.
