One-Pot Quinoa Stew (Guisado de Quinoa -Una Olla)

I love a one-pot stew. It comes together with ease and makes your home smell absolutely delightful. In this one-pot quinoa stew, tomatoes, black beans, quinoa, bell peppers, cumin and more dance together for 20 minutes creating an amazing aroma and a complete meal all in one spot. The best part is this soup tastes even better than it smells, I couldn't stop saying yummy! It's so good.

Enjoy it as is, blend half or blend it all. Serve with a little guacamole and cilantro on top for an even better experience. Great for meal prep, groups, families, individuals, everyone! Enjoy my friends!

Ingredients:
1 Tbsp Water
1 Medium Onion – Chopped
1 Yellow Bell Pepper – Chopped
1 Orange Bell Pepper – Chopped
3 Cloves Garlic – Minced
1 Jalapeno – Chopped
3 ½ Cups Vegetable Broth
2 Cups Salsa
2 Cups Diced Tomatoes
1 ½ Cups Cooked Black Beans
½ Cup Dry Quinoa
2 tsp Cumin
1 tsp Oregano
Salt & Pepper to taste
¼ Cup Chopped Cilantro
 
Peaceful Preparation: 
  1. In a medium soup pot over medium flame add water. Once warm add the onions, bell peppers, jalapenos and saute until tender, about 8 minutes. Add the garlic after 4 minutes.
  2. Add the balance of the ingredients less the cilantro and bring to a boil.
  3. Once boiling, reduce the flame to low and simmer for 20 minutes with a lid on.
  4. Season to taste. Serve as is or blend and have it smooth. Garnish as desired, I used guacamole and cilantro. This will last in the fridge for 4 to 5 days and in the freezer for up to 3 months.

Guisado de quinoa -Una olla
1 Cucharada de Agua
1 Cebolla Mediana – Picada
1 Pimiento Amarillo – Picado
1 Pimiento Naranja – Picado
3 Dientes de Ajo – Picado
1 Jalapeño – Picado
3 ½ Tazas de Caldo Vegetal
2 Tazas de Salsa
2 Tazas de Jitomate Picado
1 ½ Tazas de Frijol Negro Cocido
½ Taza de Quinoa Seco
2 Cucharadas de Cumin
1 Cucharada de Orégano
Sal y Pimienta Negra para dar sabor
¼ Taza de Cilantro 

Preparación:
  1. Picado Poner olla mediana sobre fuego medio y añadir agua. Una vez caliente agregar la cebolla, pimientos, jalapeños y menearlo hasta que estén tiernos, aproximadamente 8 minutos. Agregue el ajo después de 4 minutos.
  2. Agregar el resto de los ingredientes menos el cilantro y deje hervir.
  3. Una vez que hierva, reduzca el fuego a bajo y cocine a fuego lento por 20 minutos con una tapa.
  4. Sazonar al gusto. Servir tal cual o mezclar y tenerlo suave. Decorar como se desee, utilicé guacamole y cilantro. Puede conservarlo en el refrigerador de 4 a 5 días y en el congelador hasta por 3 meses.
